Provided by Meghna Chakraborty

Categories     Appetizer     Main Course

Time 25m

Number Of Ingredients 16

1.5 Pounds colossal tiger shrimps (De-shelled, de-veined)
1 cup roughly chopped parsley
1/4 cup Mayonnaise
1.5 tbsp Dijon Mustard Paste
1/2 tbsp Paprika
1 tsp Onion Powder
1 tbsp Minced Garlic
2 medium eggs
1/2 cup Parmesan (or more)
1/2 cup oats flour (or more)
1/4 cup Extra Virgin Olive Oil (For pan frying the patties)
Salt (to taste)
1/2 cup mayonnaise
1/2 tsp Paprika
1 tbsp Dijon mustard paste
1/2 tsp Minced Garlic

Steps:

  • Begin by cleaning & rinsing the shrimps. If using frozen shrimps defrost them & bring them to room temperature.
  • Chop the shrimps to small pieces.
  • Add chopped parsley, mayo, dijon mustard paste, salt, paprika powder, eggs, chopped garlic, onion powder & Oats flour and give everything a good mix.
  • Finally, add the parmesan cheese and mix everything well. If you feel the batter is too slimy add a bit more oats flour to bind it well.
  • Heat your favorite skillet over medium low flame, brush oil or drizzle oil.
  • In the meantime form patty shapes with a scoop of shrimp batter with the help of your palm (you may grease your palms for ease) or scoop out each patty with the help of a cookie scoop. Gently drop them on the hot pan & press them gently to flatten or give a patty shape.
  • Flip sides, cook until golden over medium low or medium heat.
  • When the patty is fully cooked give that char look and add more crispiness by searing them over medium high heat for a couple of mins (both sides).
  • Serve hot!
  • In a clean bowl take mayo and add mustard paste, paprika, salt & chopped garlic. Mix well. Aioli is ready. Serve with the shrimp patties.

SHRIMP SANDWICHES (AKA EASY ENTERTAINING)

Shrimp Sandwiches (aka Easy Entertaining) image

I love that there is no cooking required with this recipe, especially if you buy pre-cooked shrimp which is so tempting when the temperatures outside are climbing into the 100's! Use a colorful variety of tomatoes to prettify your platter. Lining everything up and allowing guests to build their own sandwiches is really an easy way to entertain and it keeps things interesting. If you're really pressed for time, you can even use a selection of good cold cuts, salami, etc and cut your prep time in half!

Provided by Natasha of NatashasKitchen.com

Categories     Easy

Time 30m

Number Of Ingredients 13

6 soft fresh bread rolls
1 small head of green lettuce
2 medium tomatoes (thickly sliced)
2 avocados (pitted, peeled and sliced (optional))
8-10 fresh basil leaves for garnish (optional)
1 lb large shrimp (cooked, shelled and coarsely chopped)
1/4 cup real mayo
2 Tbsp sour cream
2 tsp Dijon mustard (Grey Poupon)
1 tsp lemon juice
1 Tbsp fresh dill (finely chopped)
2 Tbsp fresh green onion (finely chopped)
1 small cucumber (diced)

Steps:

  • Chop and pat dry your cooked shrimp.
  • In a medium bowl, combine shrimp, 1/4 cup mayo, 2 Tbsp sour cream, 2 tsp Dijon, 1 tsp lemon juice, 1 Tbsp chopped dill, 2 Tbsp chopped green onion. Mix well to combine then gently stir in chopped cucumbers. Cover and refrigerate until ready to serve.
  • Line your prepared vegetables up on a large serving platter. Garnish the tomatoe slices with basil if you're feeling fancy.
  • Brush your bread lightly with butter and toast on a hot skillet until golden brown on one side. Toasting makes all the difference with these sandwiches. These rolls are from Fred Meyer; buy the softest and freshest ones you can get your hands on. Add the toasted bread to your serving platter and you're ready to feed a crowd.

SHRIMP SANDWICH

This was unexpectedly flavorful and quite simple to make for lunch. Feel free to substitute lobster with a nice crusty baguette. I found this recipe at www.seasaltwithfood.com. Recipe is adapted courtesy of The Harry's Bar Cook Book by Arrigo Cipriani.

Provided by AmyZoe

Categories     Lunch/Snacks

Time 20m

Yield 6 sandwiches, 6 serving(s)

Number Of Ingredients 6

3/4 cup mayonnaise (preferably homemade, I used Best Foods)
12 slices white bread (home-style)

sea salt
Worcestershire sauce

Steps:

  • Cool the cooked shrimp and shell and devein.
  • If the shrimp are large, cut them in half lengthwise.
  • Assemble the sandwiches: Spread mayonnaise generously over one inch of each slice of bread. Mound half the lettuce on half the bread slices, leaving a 1 inch margin of bread. Mound the shrimp on top of the lettuce and season them with some salt and a few drops of Worcestershire sauce. Cover with the remaining lettuce and another slice of bread.
  • Press firmly on the edges to seal the sandwiches. Trim the crust if you wish.

SHRIMP BURGERS

Time 33m

Number Of Ingredients 18

1 pound Shrimp
1/2 cup Almond Flour
1 egg
2 tbsp finely diced red onion
1/4 cup chopped parsley
1/4 tsp salt
1/4 tsp pepper
1 tbsp lemon juice
1/2 tsp lemon zest
1 tbsp oil
1/3 cup mayonnaise
2 tsp lemon juice
1 clove garlic
1 tbsp chopped parsley
1 medium tomato (thinly sliced)
2 pickles (thinly sliced)
1/2 red onion (thinly sliced)
1 head iceberg lettuce (cut into quarters)

Steps:

  • Place half of the shrimp in a food processor and pulse until finely ground. Roughly chop the other half of the shrimp into small pieces no bigger than the size of a pea. Place all of the shrimp in a bowl along with the almond flour, egg, finely diced onion, chopped parsley, lemon juice/zest, salt and pepper and stir until well combined.
  • Form the batter into balls the size of a small fist and flatten slightly. Place the patties on a parchment paper lined baking sheet and transfer the the fridge for 1 hour or freezer for 15 minutes to help the patties firm up.
  • While the patties are resting, in a bowl whisk together the parsley, garlic, lemon juice and mayonnaise. Set aside.
  • Heat the oil in a frying pan on medium-high heat. Cook the patties for 4 minutes per side until golden in colour. To keep the patties from falling apart when cooking, make sure the pan is hot before adding them in, and leave them to cook for 4 minutes without touching so that a golden crust forms before flipping over.
  • To assemble the burgers spread the sauce on the inside of the lettuce. Top with 2 slices of tomato, sliced pickles and red onion. Add the shrimp patty on top, place the other half of the lettuce leaf on top like a sandwich and wrap the burger in parchment paper to make it easier to eat.
