Steps:
- Begin by cleaning & rinsing the shrimps. If using frozen shrimps defrost them & bring them to room temperature.
- Chop the shrimps to small pieces.
- Add chopped parsley, mayo, dijon mustard paste, salt, paprika powder, eggs, chopped garlic, onion powder & Oats flour and give everything a good mix.
- Finally, add the parmesan cheese and mix everything well. If you feel the batter is too slimy add a bit more oats flour to bind it well.
- Heat your favorite skillet over medium low flame, brush oil or drizzle oil.
- In the meantime form patty shapes with a scoop of shrimp batter with the help of your palm (you may grease your palms for ease) or scoop out each patty with the help of a cookie scoop. Gently drop them on the hot pan & press them gently to flatten or give a patty shape.
- Flip sides, cook until golden over medium low or medium heat.
- When the patty is fully cooked give that char look and add more crispiness by searing them over medium high heat for a couple of mins (both sides).
- Serve hot!
- In a clean bowl take mayo and add mustard paste, paprika, salt & chopped garlic. Mix well. Aioli is ready. Serve with the shrimp patties.

SHRIMP SANDWICHES (AKA EASY ENTERTAINING)
I love that there is no cooking required with this recipe, especially if you buy pre-cooked shrimp which is so tempting when the temperatures outside are climbing into the 100's! Use a colorful variety of tomatoes to prettify your platter. Lining everything up and allowing guests to build their own sandwiches is really an easy way to entertain and it keeps things interesting. If you're really pressed for time, you can even use a selection of good cold cuts, salami, etc and cut your prep time in half!

Steps:
- Chop and pat dry your cooked shrimp.
- In a medium bowl, combine shrimp, 1/4 cup mayo, 2 Tbsp sour cream, 2 tsp Dijon, 1 tsp lemon juice, 1 Tbsp chopped dill, 2 Tbsp chopped green onion. Mix well to combine then gently stir in chopped cucumbers. Cover and refrigerate until ready to serve.
- Line your prepared vegetables up on a large serving platter. Garnish the tomatoe slices with basil if you're feeling fancy.
- Brush your bread lightly with butter and toast on a hot skillet until golden brown on one side. Toasting makes all the difference with these sandwiches. These rolls are from Fred Meyer; buy the softest and freshest ones you can get your hands on. Add the toasted bread to your serving platter and you're ready to feed a crowd.

SHRIMP PATTY SANDWICHES
Quite often when we eat at a restaurant, my husband will try something and tell me that I could make it better at home. That was the case with this shrimp patty. It had very few shrimp and needed more flavor. I made some improvements and now it's one my husband's favorites. - Tina Jacobs, Hurlock, Maryland

SHRIMP SANDWICH
This was unexpectedly flavorful and quite simple to make for lunch. Feel free to substitute lobster with a nice crusty baguette. I found this recipe at www.seasaltwithfood.com. Recipe is adapted courtesy of The Harry's Bar Cook Book by Arrigo Cipriani.

Steps:
- Place half of the shrimp in a food processor and pulse until finely ground. Roughly chop the other half of the shrimp into small pieces no bigger than the size of a pea. Place all of the shrimp in a bowl along with the almond flour, egg, finely diced onion, chopped parsley, lemon juice/zest, salt and pepper and stir until well combined.
- Form the batter into balls the size of a small fist and flatten slightly. Place the patties on a parchment paper lined baking sheet and transfer the the fridge for 1 hour or freezer for 15 minutes to help the patties firm up.
- While the patties are resting, in a bowl whisk together the parsley, garlic, lemon juice and mayonnaise. Set aside.
- Heat the oil in a frying pan on medium-high heat. Cook the patties for 4 minutes per side until golden in colour. To keep the patties from falling apart when cooking, make sure the pan is hot before adding them in, and leave them to cook for 4 minutes without touching so that a golden crust forms before flipping over.
- To assemble the burgers spread the sauce on the inside of the lettuce. Top with 2 slices of tomato, sliced pickles and red onion. Add the shrimp patty on top, place the other half of the lettuce leaf on top like a sandwich and wrap the burger in parchment paper to make it easier to eat.

- Adjust an oven rack to the middle position and preheat the oven to 375ºF (190ºC). For a convection oven, reduce cooking temperature by 25ºF (15ºC). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
- Combine 2 cups panko and 2 Tbsp olive oil in a frying pan and toast over medium heat until golden brown.
- Transfer panko to a shallow dish and allow to cool. I make extra as you don't want to find out later that you don't have enough toasted panko. Once cooled, save half of the toasted panko in an airtight container to keep it fresh. You may need to use this extra portion when you're breading.

- Add the shrimp and knead the mixture with your hands to evenly distribute the shrimp within the other ingredients. Form 4 large patties.
- To a large skillet, add the olive oil, shrimp cakes, and cook over medium heat for about 3 to 4 minutes per side. I recommend keeping the heat at medium so the shrimp cakes don't brown too quickly or get too dark. While they cook, make the spicy mayo.

- Pulse scallions, parsley, and 2 ½ tablespoons of the basil in a food processor until finely chopped, about 5 pulses. Scrape down sides of processor bowl. Add shrimp, flour, salt, 2 tablespoons of the mayonnaise, and 1 tablespoon of the Sriracha. Pulse in 1-second bursts just until mixture starts to clump together and you can still see pieces of shrimp, 10 to 12 pulses. Transfer to a medium bowl; let stand 15 minutes.
- Meanwhile, stir together remaining 6 tablespoons mayonnaise, 2 ½ tablespoons basil, and 1 tablespoon Sriracha in a small bowl. Set aside.
- Heat oil in a large skillet over medium-high. Using a ⅔-cup-capacity scoop or measuring cup, scoop 4 mounds of shrimp mixture into hot oil. Flatten with a spatula to form 3 ½-inch-diameter patties that are about ¾ inch thick. (If mixture sticks to spatula, dip spatula in hot oil.) Cook shrimp cakes until golden brown and opaque throughout, 3 to 4 minutes per side. Transfer to a plate lined with paper towels. Drain oil from skillet. Reduce heat to medium. Add buns in batches, cut sides down, and cook until toasted, 1 to 2 minutes.
- Evenly spread mayonnaise mixture on cut sides of buns. Top each bottom bun with 1 shrimp cake, 1 tomato slice, red onion slices, and 2 lettuce leaves. Cover with top buns, and serve immediately.
