1 1/2 lbs uncooked medium shrimp, peeled and deveined
3/4 cup crumbled feta cheese
1/2 cup shredded swiss cheese
1 (16 ounce) jar chunky salsa
1/2 cup shredded monterey jack cheese
3/4 cup minced fresh parsley
1 teaspoon dried basil
1 teaspoon dried oregano
2 eggs
1 cup half-and-half cream
1 cup plain yogurt

Steps:

  • In a greased 13-in. x 9-in. x 2-in. baking dish, layer half of the pasta, shrimp, feta cheese, Swiss cheese and salsa.
  • Repeat layers.
  • Sprinkle with Monterey Jack cheese, parsley, basil and oregano.
  • In a small bowl, whisk eggs, cream and yogurt; pour over casserole.
  • Bake, uncovered, at 350 degrees F for 25-30 minutes or until shrimp turn pink and pasta is tender.
  • Let stand for 5 minutes before serving.

3 tablespoons extra-virgin olive oil
4 cloves garlic, chopped
1 pint cherry tomatoes, halved
Kosher salt
8 ounces angel-hair pasta
8 cups chopped escarole, kale and/or Swiss chard
1 pound medium shrimp, peeled and deveined
1/2 teaspoon red pepper flakes
Freshly ground pepper
1/2 cup fresh basil, chopped
Grated zest and juice of 1/2 lemon

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the greens to the water. Drain and rinse under cold water; transfer to a large bowl.
  • Combine the shrimp, red pepper flakes, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook until golden, about 1 minute. Add the shrimp and cook until pink, about 3 minutes per side. Add the tomatoes and cook, stirring often, until slightly softened, about 2 minutes.
  • Add the shrimp mixture to the bowl with the pasta along with the basil and lemon zest and juice; toss to combine.

1/2 pound uncooked shrimp (16-20 per pound), peeled and deveined
1/4 teaspoon salt
1/8 teaspoon crushed red pepper flakes
2 tablespoons olive oil, divided
8 fresh asparagus spears, trimmed and cut into 2-inch pieces
1/2 cup sliced fresh mushrooms
1/4 cup chopped seeded tomato, peeled
4 garlic cloves, minced
2 teaspoons chopped green onion
1/2 cup white wine or chicken broth
1-1/2 teaspoons minced fresh basil
1-1/2 teaspoons minced fresh oregano
1-1/2 teaspoons minced fresh parsley
1-1/2 teaspoons minced fresh thyme

1/2 lb angel hair pasta
2 tablespoons extra virgin olive oil
1 lb medium shrimp, peeled and deveined (can be cooked or uncooked, see steps for instructions for each)
2 teaspoons garlic, chopped
1 teaspoon salt
1 teaspoon pepper
1 cup chicken broth (can substitute half with white wine to increase flavor)
1/8 teaspoon crushed red pepper flakes
1 tablespoon lemon peel, grated fresh
1/4 cup lemon juice, squeezed fresh
1/2 cup Italian parsley, chopped
1/3 cup parmesan cheese, grated

Steps:

  • Cook pasta according to package instructions and drain.
  • While pasta cooks, heat one tablespoon of the olive oil in a large skillet over medium-high heat. Add the garlic, shrimp (if using uncooked shrimp), and 1/2 tsp each of salt and pepper. Saute two minutes or until shrimp are barely pink and/or garlic is soft.
  • Add broth and crushed red pepper. Increase heat to high.
  • Add cooked shrimp (if not using uncooked shrimp in step 2).
  • Cook on high heat for 2-3 minutes (just one minute if you used uncooked shrimp earlier), until shrimp are warmed through.
  • Stir in lemon peel and juice.
  • Put the pasta in a serving bowl, add the remaining tablespoon olive oil and 1/2 teaspoon each salt and pepper. Toss to coat.
  • Add the shrimp mixture, parsley, and cheese (gradually so as not to clump up the cheese). Toss to mix and serve immediately.

2 eggs
1 c half and half
1 c plain yogurt
1/2 c swiss cheese, shredded
1/3 c crumbled feta cheese
1/4 c fresh basil or 1 tsp. dried basil. fresh is better!
1 tsp dried oregano
1/3 c chopped parsley
1 pkg 9 oz. uncooked fresh angel hair pasta
1 jar(s) 16 oz. mild, thick and chunky salsa (la victorias)
1 lb medium shrimp, peeled and deveined
1/2 c monterey jack cheese, shredded

Steps:

  • 1. With 1 tbsp. butter, grease a 12 x 8 pan.
  • 2. Combine eggs, half and half, yogurt, Swiss cheese, feta cheese, basil, oregano, and parsley in medium bowl, mix well.
  • 3. Spread 1/2 of the pasta on the bottom of prepared pan. Cover with salsa. Add 1/2 of the shrimp. Cover with remaining pasta. Spread egg mixture over pasta and top with remaining shrimp. Sprinkle with Monterey Jack cheese.
  • 4. Bake at 350*, 30 minutes or until bubbly. Let stand 10 minutes. This is also very good the next day, so could always be baked a day ahead of time.

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, saute shrimp in oil for 5 minutes or until shrimp turn pink. Add garlic; cook 1 minute longer. Since I live off the coast of North Carolina I am always looking for seafood recipes. This is not only great it is VERY easy to prepare. The original recipe came from one of my favorite cookbooks, "Cook Healthy, Cook Quick". It called for lobster but I have substituted all types of seafood, (whatever I can find fresh!) and they all taste wonderful!! Serve with a salad and bread for a great light summer time meal!!

8 ounces fresh seafood (shrimp, scallops, lobster or crabmeat..even imitation crabmeat will work)
8 ounces angel hair pasta, uncooked
3/4 cup sliced fresh mushrooms
1/3 cup chopped green onion
1/3 cup dry white wine
1 clove garlic, minced
2 tablespoons reduced-calorie stick margarine
2 tablespoons flour
1 cup skim milk
1/3 cup nonfat sour cream
2 tablespoons grated parmesan cheese
1/2 teaspoon paprika

Steps:

  • Cook pasta according to package directions, omitting salt and fat.
  • Drain well.
  • Set aside and keep warm.
  • Combine mushrooms, green onions, white wine and garlic in a large nonstick skillet.

  • Add margarine, stirring to melt.
