- In a large saute pan over medium heat, add the olive oil, scallions, garlic, a nice pinch of salt and a few grinds of black pepper. Cook until the greens of the scallions are wilted and darkened with the oil and the garlic is tender and slightly golden, about 4 minutes. Add the tomatoes, season with salt and cook while stirring until the tomatoes are softened, about 2 minutes. Add the clam juice and lemon juice, bring to a light simmer and stir. Taste, and if the tomatoes and lemon juice are too tart, add sugar and stir.
- Sprinkle the shrimp with salt and pepper and add to the pan. Cook on 1 side until the shrimp begins to turn opaque and curl slightly, 2 to 3 minutes. - Combine tomatoes and 1/2 the parsley in a blender; puree until smooth.

- Bring a large pot of generously salted water to boiling. Add bucatini and cook until al dente, about 9 minutes. Drain, reserving 1/3 cup of the pasta cooking liquid to use for the sauce.
- Meanwhile, in a large skillet heat oil over medium-high heat. Add the garlic and tomatoes. Cook, stirring occasionally, until tomatoes soften and the juices begin to bubble, about 3 minutes. If the cherry tomatoes give out very little juice, add 1 tablespoon of water and a splash (about ½ teaspoon) of red wine vinegar for acidity. Add the shrimp and a large pinch of crushed red pepper then toss just until the shrimp are cooked through, about 2 minutes.
- Add the pasta along with reserved pasta cooking liquid. Toss together over low heat. Remove from the heat. Stir in the feta and basil; toss with tongs, adding up to 1 Tbsp. more oil and additional feta to taste. Divide between four bowls. Serve warm. Makes 4 servings.

- In a food processor, combine the ginger with the garlic, cilantro, basil, mint, cayenne, paprika, lime juice, honey, salt and the 2 tablespoons of olive oil and puree. Scrape the marinade into a large bowl, add the shrimp and toss to coat. Cover and refrigerate for at least 30 minutes or for up to 4 hours.
- Light a grill and oil the grates. Grill the skewers over high heat, turning once, until the shrimp are lightly charred and cooked through and the tomatoes are just beginning to burst, about 6 minutes. Serve right away.

- Season 2 fillets of monkfish with sea salt and freshly cracked black pepper on both sides and let it sit for 5 minutes, also season 12 raw jumbo shrimp that have been peeled and deveined with sea salt and freshly cracked black pepper
- Heat a nonstick fry pan with a medium-high heat and add 2 tbsp of extra virgin olive oil, after 2 minutes add the monkfish fillets into the pan, cook for 3 minutes per side (the thickness of my fillets where 1/2 inch), after a total cooking time of 6 minutes remove from the pan and set aside covered with foil paper
- Using the same pan with the same heat add the shrimp and cook for 1 minute per side, then remove from the pan and cover with foil paper
- Again, using the same pan with the same heat add the diced onions and minced garlic, mix with the oil and make sure to scrape up anything that was left over from the monkfish and shrimp, after 2 minutes add 1/2 tsp of sweet smoked paprika and 1/2 tsp of hot smoked paprika, mix it all together, then add about 3/4 cup of canned tomato sauce, season with sea salt and freshly cracked black pepper and mix it all together until well combined, after simmering for 3 minutes lower the fire to a low heat, add the shrimp and monkfish back into the pan and heat for 2 minutes, serve directly from the pan garnished with lemon slices and freshly chopped parsley, enjoy!
