8 toasted mini brioche buns
2 tablespoons unsalted butter, at room temperature, for the buns
Bibb lettuce, for serving

Steps:

  • Combine the mayonnaise, mustard, lemon juice, capers, cornichons and tarragon in a large bowl. Fold in the shrimp and celery root. Serve on buttered toasted mini brioche buns with Bibb lettuce.

2 tablespoons extra-virgin olive oil
2 teaspoons Cajun spice
Kosher salt
1 pound large shrimp (10 to15 per pound), peeled and deveined
1 tablespoon chopped fresh flat-leaf parsley, for serving
Lemon wedges, for serving
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons Cajun spice
1 tablespoon ketchup
1 tablespoon whole grain mustard
1 tablespoon chopped fresh flat-leaf parsley
1 teaspoon lemon zest
Kosher salt

Steps:

  • For the shrimp: Add the lemon juice, olive oil, Cajun spice and 1/2 teaspoon of salt to a medium bowl and whisk to combine. Add the shrimp and toss to coat them in the spice mixture. Allow the shrimp to marinate while you make the remoulade. Do not marinate shrimp longer than 20 minutes.
  • For the remoulade: Add the mayonnaise, sour cream, Cajun spice, ketchup, mustard, parsley, lemon zest and 1/4 teaspoon salt to a bowl and whisk to combine. Refrigerate until ready to serve.
  • Preheat a grill pan over medium-high heat. When the pan is hot, add the shrimp in an even layer. Allow the shrimp to cook for 2 minutes, then flip them and cook until they are just opaque and the tails are pink, about another minute. Remove the shrimp to a serving platter, garnish with parsley and lemon wedges and serve with remoulade.

A rémoulade is a mayonnaise based sauce with endless variations that is used here to add a creamy texture to contrast the crispy shrimp cakes.

• 1 pound northern shrimp, peeled and cooked
• 1 medium potato, diced
• ½ leek, finely chopped
• few sprigs of fresh tarragon or chervil, chopped
• 3 tablespoons flour
• 1 bay leaf
• pinch sea salt
• small pinch cayenne pepper
• ¼ cup peanut or sunflower oil
• 1 cup mayonnaise
• 1 tablespoon Dijon mustard
• 1 tablespoon grated horseradish
• 1 tablespoon fresh basil, tarragon, and/or chervil, chopped
• 1 teaspoon apple cider vinegar
• 2 cloves garlic, chopped
• few celeriac or celery leaves, finely chopped
• pinch cayenne pepper
• pinch sea salt

Steps:

  • Put the potatoes and bay leaf in a pan and cover with water.
  • Bring to a boil, then simmer for about 15 minutes, until the potatoes are cooked.
  • Strain and leave to cool for a few minutes.
  • Put ⅔ of the shrimp and the potatoes in a food processor. Pulse a few times until roughly smooth.
  • Transfer to a bowl and mix in the rest of the shrimps, the leek, tarragon, flour, salt and pepper.
  • Form 6 large or 12 small patty.
  • Heat up the oil in a frying pan. Once the pan is hot and the oil runny, add half the cakes and give the pan a small shake.
  • Make sure not to overcrowd the pan. Cook for 3-4 minutes, until golden brown, flip, and cook for another 3 minutes.
  • Transfer to a plate, repeat with the rest of the cakes.
  • Serve right away and season with some sea salt.
  • Mix all ingredients.
  • Let to sit for at least 30 minutes.

SHRIMP CAKES WITH SCALLION DIP

1/2 cup mayonnaise
1/2 cup chopped fresh parsley
1 scallion, roughly chopped
1 small clove garlic, grated
2 tablespoons fresh lemon juice
Kosher salt and freshly ground pepper
1 pound medium shrimp, peeled and deveined
1 cup panko breadcrumbs
1 large egg, lightly beaten
1/2 teaspoon grated lemon zest
3 tablespoons vegetable oil, plus more for forming
1 5-ounce package mixed greens (about 6 cups)
4 radishes, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F. Puree the mayonnaise, parsley, scallion, garlic, 2 tablespoons water, 1 tablespoon lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper in a food processor; transfer to a bowl.
  • Add half of the shrimp to the food processor and pulse until a thick paste forms. Add the remaining shrimp, 1/2 cup panko, 2 tablespoons of the prepared dressing, the egg and lemon zest. Pulse until combined but still chunky. With oiled hands, shape the mixture into eight 1/2-inch-thick patties. Transfer to a baking sheet; freeze 5 minutes.
  • Put the remaining 1/2 cup panko on a plate. Heat the vegetable oil in a large nonstick ovenproof skillet over medium heat. Coat the patties on both sides with the panko; cook until golden, 2 minutes per side. Transfer the skillet to the oven and bake until the patties are cooked through, 5 to 7 minutes.
  • Meanwhile, toss the greens, radishes, 2 tablespoons of the dressing and the remaining 1 tablespoon lemon juice; season with salt and pepper. Serve the shrimp cakes with the salad and remaining dressing.

I had crab cakes at a local restaurant here (Shucks Oyster Bar) and tried desperately to get their recipe. After several email, phone, and in person attempts, I decided to try and recreate these fabulous cakes. With luck, I was able to perfect the cakes as well as the Remoulade. The pictures posted are before and after sautéing the cakes in olive oil. The after pictures were smaller cakes as I decided to make these as an appetizer for this Thanksgiving. I made them, cooled in the fridge, froze in freezer, then food savered them to have throughout the holidays.

1 lb crabmeat (fresh or canned)
1/3 cup breadcrumbs (I use Italian seasoned)
3 green onions (finely chopped both green and white parts)
1/2 cup red bell pepper (finely chopped)
1/4 cup mayonnaise
1 egg
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1 tablespoon lemon juice
1 dash cayenne pepper
flour, for dusting
1/2 cup olive oil
1 cup mayonnaise
1 tablespoon chili powder
1 tablespoon stone ground mustard
1 tablespoon lemon juice

Steps:

  • For Crab Cakes:.
  • Mix all ingredients, except flour and oil in a large bowl.
  • Shape into patties and dust with flour.
  • NOTE: Can be frozen at this point.
  • Heat oil in a large skillet over medium heat.
  • When oil is hot, carefully place crab cakes, in batches, and fry until browned.
  • About 4- 5 minutes.
  • Carefully flip crab cakes and fry on other side until golden brown, about 4 minutes.
  • Serve with Whole Grain Mustard Remoulade or favorite sauce.

Steps:

1 stalk celery, minced
1 clove garlic, minced
1 lb fresh lump crabmeat, cleaned and picked over to remove any bits of shell
2 large eggs, lightly beaten
2 teaspoons fresh lemon juice
2 tablespoons whole grain mustard
2 tablespoons minced fresh flat-leaf parsley
1 teaspoon kosher salt
3/4 teaspoon fresh ground black pepper
1 pinch freshly grated nutmeg
1/3 cup cracker meal, plus
more cracker meal, for dredging
2/3 cup vegetable oil, for frying
2/3 cup mayonnaise
2 scallions, white and green parts, chopped
2 tablespoons finely minced fresh flat-leaf parsley
2 tablespoons minced fresh dill
1 teaspoon fresh lemon juice

Steps:

  • In a medium skillet, heat the butter; add the scallions, celery, and garlic, and cook over medium heat until the vegetables are translucent, about 3 to 4 minutes.
  • In a medium bowl, combine the cooked vegetables with the crab, eggs, lemon juice, mustard, and parsley.
  • Season with the salt, pepper, and nutmeg.
  • Add the cracker meal and stir well to combine thoroughly.
  • Form heaping tablespoons of the crab mixture into 1-1/2 inch-round cakes.
  • Roll the cakes in additional cracker meal and place them on a baking pan.
  • Refrigerate for at least 30 minutes before cooking.
  • When ready to serve, heat a large skillet and pour the oil to a depth of 1/2-inch; heat the oil over medium heat, keeping the oil at a low simmer.
  • Cook and brown the crabcakes for 1 to 2 minutes on the first side and about 1 minute on the second side, or until they are cooked through and golden brown.
  • Transfer the cakes to paper towels to drain. Serve the cakes warm, with the Remoulade sauce.
