CHUCK'S SHRIMP BROCHETTES

12 jumbo shrimp, peeled and deveined, tails on
2 tablespoons queso fresco
1 large jalapeno, half of the seeds removed (to control heat), minced
6 slices thin-cut bacon, cut in half crosswise
8 tablespoons salted butter
1 heaping tablespoon adobo sauce
1 pinch garlic powder
1 lime, juiced
Olive oil, for brushing the grill

Steps:

  • Make a deep slit along the back of each shrimp and spread to butterfly. Stuff each shrimp with 1/2 teaspoon queso fresco and some jalapeno. Close the shrimp around the cheese and jalapeno. Wrap the stuffed shrimp with a half-piece of bacon and secure with a toothpick or small skewer.
  • Melt the butter in a small saucepan over medium heat. Stir in the adobo sauce, garlic powder and lime juice. Pour half of the butter mixture into a bowl for serving and divide the remaining half between 2 bowls for brushing and basting.
  • Heat a grill or grill pan over medium heat; brush with olive oil. Brush one side of the shrimp with the butter mixture and put the shrimp on the grill buttered-side down. Using the same brush and same butter, brush the second side. Grill for a few minutes, checking to make sure the bacon is not sticking to the grill.
  • Flip the shrimp and cook, flipping as needed and frequently basting with the second small bowl of butter and a clean brush, until the bacon is completely cooked and the shrimp are opaque, about 8 minutes total. Serve the shrimp on a platter with the remaining chipotle butter.

18 medium size shrimp, peeled, deveined, and sliced in half legthwise
1 medium size Spanish onion, chopped
2 garlic cloves, mashed
1/4 cup extra virgin olive oil
salt and pepper

Steps:

  • Heat oil in 8 inch skillet. Fry garlic until golden and discard. Add onion and saute until transparent. Add shrimp and saute until they turn pink.
  • Beat eggs with salt and pepper in a large bowl until frothy. Add shrimp mixture and stir well. Return to pan, adding more oil if necessary. Cook over medium heat until eggs are set.
  • Invert plate over the pan, flip omelette onto plate, return to the pan to brown on other side. Repeat process one more time. Serve hot.
  • Garnish with diced tomatoes and shredded cheese.

1 1/2 lb large shrimp (30), peeled and deveined
8-oz can water chestnuts (1 cup), rinsed and finely chopped
1 large egg white, lightly beaten
3 tablespoons finely chopped chilled fresh pork fat or lard
1 1/2 tablespoons rice wine or Scotch
1 tablespoon grated peeled fresh ginger
2 tablespoons finely chopped scallion greens
2 1/4 teaspoons coarse salt
2 tablespoons cornstarch
3 cups panko (Japanese bread crumbs)
About 8 cups vegetable oil
Accompaniment: apricot dipping sauce

Steps:

  • Pulse shrimp in a food processor until finely chopped. Transfer to a large bowl, then stir in water chestnuts, egg white, pork fat, rice wine, ginger, scallion, salt, and cornstarch. Beat shrimp mixture vigorously with a wooden spoon and throw it against side of bowl until combined well and compacted. Wet your hands with cold water and form teaspoons of shrimp mixture into balls, arranging in 1 layer on a wax-paper-lined tray. Coat balls, 1 at a time, in panko, then arrange in 1 layer on another wax-paper-lined tray.
  • Preheat oven to 425°F.
  • Heat oil in a 5-quart pot until a deep-fat thermometer registers 375°F and fry balls in 4 batches, turning, 1 to 1 1/2 minutes, or until golden and just cooked through. (Return oil to 375°F between batches.) Transfer with a slotted spoon to paper towels to drain. When all shrimp balls are fried, reheat on a rack set in a shallow baking pan in middle of oven until just hot, about 2 minutes.

Number Of Ingredients 10

2 pounds shrimp (cleaned, de-veined if you desire)
1 medium onion
2 cloves garlic
1 parboiled potato
green onion tops (optional)
Cajun Seasoning or you can use . . . (optional)
tsp -1 . cayenne pepper
tsp -2 . salt
tsp -1/2 . black pepper
2 tsp . baking powder

Steps:

  • Process the onion and garlic, fine, and put in a big mixing bowl.
  • Peel the parboiled potato, cut into wedges, process, and put in the same bowl.
  • Finely chop the green onion and add to mixture in bowl. (If your kids don't like to see green in their food, these can be omitted without harming the recipe!)
  • Stir together.
  • In a large food processor, slowly add the shrimp while processor is running. Add the seasonings and 2 tsp. of baking powder while it's running too.
  • Add the seasoned ground shrimp to the veggies in the mixing bowl.
  • Mix with spoon or hands.
  • Heat oil in shallow skillet on medium-high.
  • Using a medium sized spoon, scoop up ball shapes of shrimp batter, and drop into skillet.
  • Brown on both sides.
  • Drain oil from skillet.
  • Pour about a half cup of water in the skillet and bring to a boil, stirring the bottom of the skillet making a nice brown sauce.
  • Turn the heat to low, replace boulette in the gravy and cover to steam, stirring occasionally.
  • Boulette will steam through and become a nice brown color when they are done.

1 lb lean ground beef
1/2 teaspoon ground cloves
salt & pepper
1 medium onion, grated
2 teaspoons poultry seasoning
1/4 cup flour, approximately

Steps:

  • Mix meat and seasonings. Shape into 1 inch meatballs.
  • Put enough water in saucepan that the meatballs will be covered. Bring to a boil.
  • Add 1 meatball at a time so water does not stop boiling.
  • Cook until liquid is reduced to about 1c - about 30 minutes.
  • Whisk in flour to thicken and reseason to taste. Should you overthicken, just add more water to desired consistency.
  • Serve over rice or noodles or by itself.
