12 ounces cream cheese, at room temp.
4 ounces sharp white cheddar cheese, grated
1/3 cup sour cream
1/4 cup Hellman's mayo
3 tablespoons Dijon mustard
2 teaspoons Worcestershire sauce
3 6-ounce jars marinated artichoke hearts, drained and coarsely chopped
1/2 pound cooked shrimp, shelled and deveined, cut into 1/4 inch pieces
2 ounces shredded mozzarella
2 shallots, minced
3 tablespoons fresh thyme leaves (may substitute 1 tablespoon dried thyme)
Paprika for sprinkling
Tortilla chips for serving

Steps:

  • Preheat oven to 375º.
  • With a hand mixer, combine the cream cheese, cheddar, sour cream, mayo, mustard, and Worcestershire sauce until well blended. Add the artichoke hearts, shrimp, mozzarella, shallots, and thyme, and mix well.
  • Transfer to a baking dish, sprinkle lightly with paprika, and bake until golden brown, 20 to 30 minutes. Serve hot with chips.

1 cup grated Parmesan cheese
1 (14 ounce) can artichoke hearts, drained
½ cup chopped green onions
½ teaspoon garlic salt
½ cup mayonnaise
1 cup cooked and peeled shrimp
paprika, for garnish

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1/4 cup plus 2 tablespoons vegetable oil
1/4 cup all-purpose flour
2 cups milk
Salt
Cayenne pepper
1/2 cup grated Parmesan (about 2 ounces)
1/2 cup grated Monterey Jack (about 2 ounces)
1 cup chopped onions
1 (10-ounce) bag fresh spinach, stemmed, rinsed and chopped
2 tablespoons chopped garlic
2 (15-ounce) cans artichoke hearts, drained and julienned
10 to 15 small corn tortillas, cut into fourths
Vegetable oil, for frying

Steps:

  • Preheat the oven to 400 degrees F. Preheat the oil in a deep fryer.
  • Combine 1/4 cup of the vegetable oil and flour in a saucepan over medium heat. Stir the mixture constantly 5 to 6 minutes for a blond roux. Whisk in the milk and bring the liquid up to a boil. Season the liquid with salt and cayenne. Simmer the liquid for 5 to 6 minutes, or until the liquid is thick and coats the back of a spoon. Remove the sauce from the heat and stir in the cheeses. Set the sauce aside.
  • In a saute pan, heat the remaining 2 tablespoons vegetable oil. When the oil is hot, add the onions and saute for 2 minutes. Stir in handfuls of spinach at a time, until all the spinach is incorporated. Add the garlic and artichoke and saute for 2 minutes. Season the vegetables with salt and cayenne. Remove the vegetables from the heat and turn into a mixing bowl. Fold the cheese sauce into the vegetables. Turn the mixture into a baking pan. Bake the dip for 10 to 15 minutes, or until the top is golden brown.
  • Fry the tortilla chips, batches at a time, for about 2 to 3 minutes or until the chips are golden and crispy. Remove from the oil and drain on a paper-lined plate. Season with salt and pepper. Serve the chips with the dip.

This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, grated
One 10-ounce box frozen leaf spinach, thawed, drained, squeezed dry and coarsely chopped (see Cook's Note)
One 14-ounce can artichoke hearts, drained well and coarsely chopped
1/2 cup shredded whole-milk mozzarella
3/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper
Crackers, chips or toasted bread, for serving

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.

16 ounces cream cheese
1 1/2 cups shredded mozzarella cheese
1 cup parmesan cheese
1/3 cup mayonnaise

Steps:

  • Heat oven to 350.
  • Place cream cheese, mozzarella, Parmesan& mayonnaise in microwave safe 2 1/2 quart casserole.
  • Heat in microwave 2-3 minutes to melt cheeses;stir occasionally and blend ingredients.
  • Meanwhile, squeeze spinach dry.

3 tablespoons butter
1 shallot, finely chopped

8 large shrimp, peeled, cleaned, chopped
1/8 teaspoon cayenne pepper (more to taste)
1/8 teaspoon fresh ground black pepper
1/2 cup shredded mozzarella cheese (optional)

Steps:

  • In a large saucepan over medium heat, combine half-and-half, clam juice and white wine.
  • In a separate saucepan, melt butter.
  • Add shallots and sauté until translucent.
  • Add flour to butter mixture, stirring until flour is absorbed.
  • Cook, stirring constantly, 2-3 minutes.
  • Add heated half-and-half mixture all at once to the shallot mix, stirring constantly with a wire whip to remove any lumps.
  • Add spinach, artichokes, shrimp, cayenne and black pepper and bring to a boil.
  • Reduce heat and simmer 3 minutes, stirring occasionally, so the mixture does not scorch.
