SHRIMP ENCHILADAS



Shrimp Enchiladas image

Enchiladas that are filled with tender, flavorful shrimp then topped with a delicious homemade creamy sauce.

Number Of Ingredients 20

2-3 tablespoon butter
½ cup red and green bell pepper (finely chopped)
½ cup onion finely diced
2 cloves garlic (minced)
1- pound shrimp (peeled and deveined, chopped into pieces)
¼ cup cilantro (chopped)
½ tsp salt
½ tsp cumin
1 tsp chili powder
8 9 inch flour or corn tortillas
2 tablespoon butter
2 tablespoon flour
1 1/2 cup chicken broth
¾ - 1 cup sour cream
½ tsp garlic powder
½ cup diced canned chilies
salt and pepper to taste
¼ cup green enchilada sauce or salsa Verde sauce
2 cups Monterey Jack cheese
garnish: sour cream (cilantro, jalapenos, and limes)

Steps:

  • Preheat oven to 350° F. Spray a 9x13 baking dish with non-stick cooking spray; set aside.
  • Shrimp mixture: Using a large skillet melt butter. Sauté the bell peppers and onions until lightly softened, about 3-5 minutes. Add the garlic and cook additional 30 seconds.
  • Add shrimp and cook 2-3 minutes, or until shrimp starts to turn pink. (You don't want to overcook the shrimp. Remember it will cook more in the oven). Remove from heat and add in cilantro, salt, cumin and chili powder. Stir and set aside.
  • Cream Sauce: In a large skillet melt butter over medium high heat. Add flour and cook 1-2 minutes. Slowly whisk in the chicken broth (1/2 cup at a time). Continue to cook, stirring constantly, about 3-5 minutes until thickened.
  • Lower heat, stir in the sour cream, garlic powder, chilies, and enchilada sauce. Add salt and pepper to taste. Add 1 cup of sauce to shrimp mixture, stir to combine.
  • Assemble enchiladas: Add 1/3 cup shrimp mixture to a flour tortilla, roll tightly and place seam side down in the baking dish. Repeat with remaining tortillas.
  • Pour the remaining sauce over the rolled tortillas. Sprinkle the cheese over enchiladas.
  • Bake 20 -30 minutes.
  • Serve immediately, garnish and enjoy!!

8 whole wheat tortilla or corn tortilla
1/4 cup chopped fresh cilantro leaves
1.5 Tbsp butter
1.5 Tbsp flour
1 cup chicken or vegetable broth
1/2 cup heavy whipping cream or crème fraiche
1-2 jalapeno, completely or partially seeded, and minced
1 tsp cumin
1 tsp paprika
1/2 tsp garlic powder
salt, pepper, to taste
1 pound medium shrimp, peeled and deveined
1 Tbsp olive oil
salt, pepper
2 cloves garlic, minced
1 onion, diced
2 medium zucchini, grated
1 carrot, peeled and grated
3 cup spinach
1 - 2 Tbsp chipotle pepper, in adobo sauce
1/2 tsp oregano
1 cup or more Mexican cheese or Monterey Jack Cheese

Steps:

  • In a medium saucepan, melt the butter. Mix in flour, cooking until lightly golden, 1-2 minutes. Add the broth and whisk continuously until very smooth. Bring to a boil to thicken the sauce. Reduce to low heat and let simmer 5 min (stirring occasionally). Add the cream, cumin, paprika, garlic, salt, and pepper, to taste. Remove from the heat.
  • In a large skillet, heat 1 tablespoon olive oil over medium heat. Add onion, garlic and cook until onion is tender 2-3 minutes. Then, add zucchini, carrot, spinach, chipotle pepper, and oregano. Cook the vegetables until slightly soft.
  • Season shrimps with salt, and pepper. Heat a pan with 1 Tbsp olive oil, add the shrimp and cook them until pink and just cooked through. Set aside.
  • Preheat oven at 375 F. Lightly oil a 9x13 baking dish. In each tortilla, put 1/3 cup of vegetables, add 3 shrimps on top, sprinkle some cheese, and roll it. Place them seam side down in the baking dish and top with the jalapeno cream sauce. Add a little cheese on top. Cover the dish with foil.
  • Place into the oven and bake in the oven about 20 minutes. Sprinkle some fresh cilantro.

4 poblano peppers
2 tablespoons butter
1/2 white onion, chopped
5 to 6 cloves garlic, pressed through garlic press
Salt and pepper
1 tablespoon all-purpose flour
1 cup chicken stock
1 to 2 cups heavy cream
1/2 lemon
2 tablespoons butter
Salt and pepper
Red pepper flakes
12 jumbo shrimp
8 ounces crab meat
2 tablespoons lemon juice
20 corn tortillas
Vegetable oil, for frying
Queso fresco or cojita cheese, for topping
Pickled Red Onions, recipe follows, for topping
Crema, for drizzling
Fresh cilantro leaves, for garnish
1 red onion, sliced
1 cup red wine vinegar
1/2 cup sugar
2 tablespoons salt

Steps:

  • For the poblano sauce: Roast the poblanos over a flame until black on all sides (this can also be done under a broiler). Place in a bowl, cover with a lid or plate and set aside for 15 minutes to steam.
  • Begin the base for the sauce by combining the butter, white onions and garlic in a saucepan. Salt well. Cook over medium heat until the onions are softened, 3 to 4 minutes. Sprinkle with the flour and whisk to combine. Stir in chicken stock, bring to a simmer, stirring, and cook for 1 to 2 minutes, until thickened. Remove from heat and add to a blender.
  • Peel the blackened skin off the poblanos--this is easier to do under cold running water. Then remove the stems and seeds. Add the flesh to the sauce base in the blender. Blend until smooth, 1 to 2 minutes. Return the poblano sauce to the saucepan and bring to a simmer. Add the cream, starting with 1 cup--add more if necessary. Simmer for 3 to 5 minutes. Season with salt and lemon juice
  • For the shrimp and crab: In a saucepan, melt the butter over medium heat. Add a pinch of salt and red pepper flakes. Add the shrimp and cook, tossing, until opaque.
  • Add the crab meat and cook for an additional 2 minutes, stirring well. Check that the shrimp are cooked through and then finish with squeeze of lemon. Set aside.
  • For the enchiladas: Fry the tortillas for 20 seconds in hot oil to make them pliable. Drain on paper towels. Lay out tortillas and fill with 1 to 2 tablespoons of the seafood filling. Plate 2 enchiladas per serving. Top with poblano sauce and then with queso fresco, Pickled Red Onions and crema. Garnish with cilantro.
  • Combine the red onions, vinegar, sugar and salt in a saucepan and boil for 30 minutes. Drain the onions. Refrigerate in an airtight container for up to 2 weeks.

This recipe was given to me a few years ago. It is absolutely mouth watering. The fontina cheese is a must, though a little more expensive. I wouldn't recommend trying to make these without it. Light cream cheese and sour cream can be used in place of regular. Enjoy.

8 soft taco-size flour tortillas
4 tablespoons soft cream cheese
1/4 cup sour cream
1/2 lb cooked baby shrimp
1/2 cup grated Fontina cheese
1/4 cup grated sharp cheddar cheese
3 tablespoons finely chopped white onions
3 tablespoons finely chopped red peppers
fresh ground pepper, to taste
1/4 teaspoon chili powder
1/4 teaspoon dill weed
1/3 lemon, juice of
1/3 cup half-and-half
3 tablespoons cream cheese
4 medium roma tomatoes, chopped coarsley
1/4 cup white onion, chopped coarsley
1 tablespoon chopped fresh parsley
1/4 teaspoon salt
1/2 teaspoon fresh ground pepper
1/3 cup grated Fontina cheese

Steps:

  • Filling:
  • Combine sour cream and cream cheese. Beat by hand until smooth. Add remaining ingredients and combine well. Set aside.
  • Sauce:.
  • Heat half and half with cream cheese until melted and smooth (I use the microwave).
  • In a separate small bowl combine tomatoes, onion, parsley, salt, and pepper.
  • To assemble:.
  • Lightly oil a shallow casserole large enough to hold 8 enchiladas in one layer. Pour enough of the cream cheese sauce to just lightly coat the bottom of the pan. On the center of each tortilla, place about 3 Tbls. filling mixture. Roll up and place seam-side down in casserole. Pour remaining cream cheese sauce over the enchiladas. Cover with tomato mixture and sprinkle with fontina cheese. Bake at 475 degrees for 10-12 min., until filling is hot and bubbling.

2 tablespoons butter
½ cup finely diced red bell pepper
½ cup finely diced white onion
2 cloves garlic, minced
1 pound medium shrimp - peeled, deveined, and cut into 1-inch pieces
¼ cup chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon chili powder
½ teaspoon salt
4 tablespoons butter
4 tablespoons all-purpose flour
1 ½ cups chicken broth
1 ¾ cups shredded Monterey Jack cheese, divided
1 cup sour cream
½ cup fresh green salsa (salsa verde)
8 (6 inch) flour tortillas
1 jalapeno pepper, seeded and diced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch pan with cooking spray.
  • Melt 2 tablespoons butter in a large skillet over medium-high heat. Saute bell pepper and onion until slightly soft, about 5 minutes. Add garlic and cook for 1 minute more. Transfer mixture to a bowl.
  • Add shrimp to the skillet and cook until starting to turn pink, 2 to 3 minutes. Add to vegetable mixture and stir in cilantro, lime juice, chili powder, and salt.
  • Melt butter in the same skillet over medium heat. Stir in flour and cook, 1 to 2 minutes. Slowly add chicken broth and cook over medium-high heat, stirring constantly, until sauce thickens, about 5 minutes. Reduce heat to low and stir in 1 1/2 cups Monterey Jack cheese until melted, 1 to 2 minutes. Remove from heat and stir in sour cream and salsa.
  • Stir 1 cup of cheese sauce into the shrimp mixture.
  • Fill 1 tortilla with 1/3 cup of the shrimp mixture. Roll tightly and place seam-side down into the prepared baking dish. Repeat with remaining tortillas; pour remaining sauce over the top.
  • Bake in the preheated oven, uncovered, until the tops are golden brown, about 35 minutes. Sprinkle jalapeno over the top, followed by remaining Monterey Jack cheese. Return to the oven and continue baking until melted, about 5 minutes more.
  • Remove from the oven and let sit for 10 minutes before serving.

1/2 teaspoon cumin seeds
1 pound parsnips, peeled, cut into 1/2-inch cubes
12 ounces red-skinned sweet potatoes (yams; about 2 small), peeled, cut into 1/2-inch cubes
1/2 red onion, sliced (about 1 1/2 cups)
5 tablespoons vegetable oil, divided
1 teaspoon chili powder
1/2 teaspoon dried oregano (preferably Mexican)
1 teaspoon coarse kosher salt
1 large garlic clove, peeled
1 small jalapeño chile, halved, seeded
2 cups coarsely chopped fresh cilantro
1 cup chopped green onions (about 6)
1 4-ounce can diced green chiles (preferably fire-roasted), drained
2 cups purchased salsa verde or mild tomatillo salsa
1/2 cup crema mexicana, crème fraîche, or sour cream, divided
8 ounces cooked peeled deveined shrimp, coarsely chopped
12 5 1/2- to 6-inch-diameter corn tortillas
8 ounces crumbled queso fresco or feta cheese (about 2 cups)

Steps:

  • Preheat oven to 400°F. Line rimmed baking sheet with parchment paper. Toast cumin seeds in small skillet over medium heat until beginning to brown, about 2 minutes. Cool. Transfer to spice mill; process until finely ground. Combine parsnips, sweet potatoes, and red onion in large bowl. Add ground cumin, 2 tablespoons vegetable oil, chili powder, oregano, and 1 teaspoon coarse salt; toss to coat. Transfer to prepared baking sheet. Roast vegetables until soft and browned in spots, turning occasionally, 35 to 40 minutes. Cool. DO AHEAD: Can be prepared 4 hours ahead. Let stand at room temperature.
  • Preheat oven to 375°F. With machine running, add garlic and jalapeño through feed tube of processor and process until finely chopped. Add cilantro, green onions, and drained green chiles. Using on/off turns, process until coarse puree forms. Add salsa; process to blend. Transfer salsa mixture to large deep skillet. Add 1/4 cup crema and stir over medium-low heat just until warm (do not allow to boil). Remove from heat. Season salsa mixture to taste with salt and pepper. Cover and keep warm.
  • Measure 1 cup roasted vegetables; set aside. Transfer remaining vegetables to processor. Using on/off turns, process until coarsely chopped. Transfer to large bowl. Add shrimp and toss to incorporate evenly. Season filling to taste with salt and pepper.
  • Heat remaining 3 tablespoons oil in medium skillet over medium-high heat. Working with 1 tortilla at a time, cook until just softened, about 15 seconds per side (do not allow to brown). Transfer tortillas to paper towels to drain.
  • Spread 1/2 cup salsa mixture over bottom of 15 x 10 x 2-inch glass baking dish. Place 1 tortilla on work surface; sprinkle generous 2 teaspoons crumbled cheese down center. Top with generous 1/4 cup roasted vegetable filling, arranging down center atop cheese. Roll up tortilla and place, seam side down, in prepared dish. Repeat with remaining tortillas, cheese, and filling. Scatter reserved 1 cup roasted vegetables over enchiladas. Spoon remaining salsa mixture over. Sprinkle with any remaining cheese; drizzle with remaining 1/4 cup crema (whisking if necessary to loosen enough to drizzle). Bake enchiladas until heated through, about 20 minutes.

Shrimp and vegetable medley wrapped in corn tortillias with creamy cheese sauce. I came up with this idea as I wanted to prepare an untraditional Easter dinner. It was hit with my family! It presented beautifully on the table. It was rich enough so that I really didnt need alot of extra dishes to accompany the main entree. I served them with a caesar salad, some spanish rice and black beans. This recipe makes approximately one dozen enchiladas.

2 tablespoons oil (vegetable)
1 lb shrimp, fresh, cleaned and deveined (slice in half vertically)
12 corn tortillas (regular size)
1 red pepper (chopped)
2 green onions (thinly sliced)
1 large jalapeno, pepper seeded and diced
1 cup corn (fresh or frozen corn)
1 tablespoon chopped garlic
juice of one lime
10 ounces la victoria green enchilada sauce (or another store brand)
12 ounces trader joe's salsa verde (or another store brand tomatillio sauce)
1 cup grated colby-monterey jack cheese (combination cheddar & jack)
4 ounces black olives (sliced)
1/2 cup vegetable oil (for frying tortillias)
1/3 cup butter
1/3 cup all-purpose flour
2 cups half-and-half cream
1 cup grated colby-monterey jack cheese

Steps:

  • Heat 2 Tbs. oil in medium skillet and add vegetables and garlic, saute for about 3 minutes on medium high heat.
  • Add Shrimp and continue cooking just until shrimp turn pink.
  • Remove from heat and add lime juice. Set aside.
  • Heat 1/2 vegetable oil in 8" skillet and fry tortillias for approximately 30 seconds.
  • Drain on paper towels and stack.
  • Mix Jar of Salsa and can of Enchilada sauce in shallow bowl.
  • Prepare a 9X13 casserole dish by spreading 1/4 Celsius green sauce to coat bottom.
  • Coat tortillia in sauce, *(you will have green sauce left over to add to cream sauce).
  • Lay tortillia in casserole dish and spread 2 Tbs. shrimp filling, and 1 Tbs. of grated cheese in middle of tortillia and roll and place seam side down. Continue until all tortillias are rolled and arrange in single layer in dish.
  • Cover with foil and bake in preheated 325 degree oven approximately 15 minute.
  • Meanwhile prepare CREAM SAUCE:.
  • Melt butter in sauce pan over medium to medium high heat.
  • Wisk in flour and stir untill flour melts and mixture bubbles.
  • Slowly incorporate half and half. As soon as mixture comes to boil and thickens remove from heat and stir in cheese and *remaining green sauce.
  • Remove dish from oven, remove foil and pour sauce over enchiladas. You may top with additional grated cheese and sliced olives if desired.
  • Return to oven, uncovered and continue baking another 15 - 20 minutes or until hot and bubbling.

12 large grilled shrimp
20 crawfish, beignets (see attached recipe)
chopped cilantro
shredded queso fresco
tomatoes, creole sauce (see attached recipe)
heavy cream
20 small bay scallops
21 shrimp (peeled and deveined)
1/2 onion (chopped)
1 poblano pepper (roasted and chopped)
1 roma tomato (diced)
1/2 bunch cilantro (chopped)
1 lime (juice only)

Steps:

  • In a hot pan, sauté onions, chilies, scallops and shrimp.
  • Add tomato and lime juice. Season to taste.
  • Blanch corn tortillas in hot oil for a few seconds to soften.
  • Fill the tortillas with the seafood mixture and roll.
  • Place two enchiladas in the center of each plate.
  • . Heat Creole sauce with a little heavy cream and pour over the enchiladas.
  • Garnish with chopped cilantro and Queso Fresco.
  • Top with three grilled shrimp and 5 beignets per plate.
  • Crawfish Beignets:.
  • 1 Lb. Chopped crawfish tail meat.
  • 4 eggs.
  • ½ Cup red bell pepper (chopped).
  • ½ Cup red onion (chopped).
  • ½ Cup green onion (chopped).
  • 1 Tbsp garlic.
  • 1 ½ Cups flour.
  • 1 Cup corn meal
  • 2 Tsp baking powder.
  • ½ Cup milk.
  • Salt and pepper to taste.
  • Directions.
  • Combine all ingredients.
  • Scoop with a small melon baller and fry till golden brown.
  • Creole Sauce:.
  • 1 Yellow onion, chopped.
  • 1 Red bell pepper, chopped.
  • 1 Green bell pepper, chopped.
  • ½ Jalapeno, chopped.
  • 1 Small rib of celery, chopped.
  • ½ Carrot, chopped.
  • 1 Tbsp garlic (minced).
  • 2 Cups chicken stock.
  • 2 Cups diced canned tomatoes.
  • 3 Tsp Creole seasoning.
  • Roux (2 ox butter and 2 oz flour cooked until dark brown).
  • Directions.
  • Saute all vegetables in a little butter until soft.
  • Add tomatoes and chicken stock and simmer for 30 minutes.
  • Quickly whisk in roux.
  • Puree and season to taste.
