1 pound high-quality medium raw shrimp, peeled, deveined, tail removed, cut into thin pieces
1 cup freshly squeezed lime juice
1 cup peeled, seeded and finely chopped cucumber
1 cup seeded and finely chopped tomato
1/2 cup chopped fresh cilantro
1/2 cup finely chopped red onion
1 serrano chile pepper, deveined, seeded and minced
Kosher salt, for seasoning
Saltine crackers
Bottled hot sauce
Lime wedges, optional

Steps:

  • Place the shrimp in a large mixing bowl. Add 1/2 cup lime juice and let stand for 15 minutes so the shrimp can "cook" in the lime juice (any less and it won't cook, any more and it toughens).
  • Meanwhile, in a separate large mixing bowl, mix the remaining 1/2 cup lime juice, cucumbers, tomatoes, cilantro, red onions and serrano chile to incorporate evenly. Transfer the mixed vegetables into the shrimp bowl and mix well to incorporate. Season the ceviche with some salt. Serve with saltine crackers, bottled hot sauce and lime wedges if desired.

1 cup chopped red bell pepper
1 cup chopped fresh pineapple
1 avocado, peeled, pitted and chopped
½ red onion, finely chopped
½ bunch cilantro, chopped
1 clove garlic, minced
1 serrano pepper, minced, or to taste
2 limes, juiced
salt and pepper to taste

Steps:

  • Stir the shrimp, bell pepper, pineapple, avocado, onion, cilantro, garlic, serrano pepper, lime juice, salt, and pepper together in a glass or ceramic mixing bowl until evenly combined. Cover, and refrigerate 1 hour before serving.

4 cups fish stock or clam juice
1 pound peeled rock shrimp or 1 1/4 pounds small shrimp, shell on
1 - 2 serrano chiles, stemmed, seeded if desired and finely chopped
1 small red onion, finely diced
2 large bunches cilantro, stems trimmed and roughly chopped
1/4 cup freshly squeezed lime juice
1 teaspoon salt

Steps:

  • In large saucepan bring stock or clam juice to a boil. Add shrimp and cook, 30 seconds for rock shrimp, 1 minute for shelled shrimp. Strain, reserving the liquid, and spread shrimp on a baking sheet to cool. When cool enough to handle, peel shrimp if necessary. In large bowl place shrimp. Add all other ingredients along with 1 cup reserved cooking liquid. Mix well. Cover with plastic and chill thoroughly before serving.

4 scallops, cut into small pieces
1/2 teaspoon tamarind chutney sauce
1/4 cup lemon juice
1/4 cup lime juice
2 tablespoons pineapple juice
1/2 cup pineapple, finely chopped
1/4 cup white onion, finely chopped
1/4 cup red pepper, finely chopped
1/8 teaspoon sea salt
1/8 teaspoon black pepper, ground
1/2 tablespoon grapeseed oil
1 tablespoon parsley, chopped

Steps:

  • Place scallops in a medium bowl and add tamarind. Pour in lemon juice, lime juice and pineapple juice, just enough to cover. Gently stir and press down lightly on the scallop mixture, making sure the seafood is submerged. Transfer to the refrigerator for 2 ½ to 3 hours or until the scallops turn opaque.
  • About 5 minutes before serving, in another bowl combine diced pineapple, white onion, red pepper, salt and black pepper; stir. Remove scallops from the fridge and using a slotted spoon, transfer scallops to the onion mixture. Pour in about 2 tablespoons of the liquid from the bowl. Add oil, stir, taste and adjust if needed. Then add parsley just before serving with tortilla chips.
