WHITE BEAN TURKEY CHILI



White Bean Turkey Chili image

A lightened up version of your standard chili that's every bit as comforting and delicious.

1 tablespoon olive oil
2 pounds lean ground turkey
1 large yellow onion (chopped)
2 large cloves garlic (finely chopped)
1 large red bell pepper (diced small)
2 teaspoons dried oregano (ideally Mexican oregano)
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 teaspoon chipotle chili powder (or smoked paprika (recipe note #1))
1 teaspoon kosher salt (plus more to taste)
1/8 teaspoon cayenne pepper (optional, omit for less spicy chili, increase for spicier chili)
28 ounces diced tomatoes with juice
1 cup chicken broth (or chicken stock)
2 15-ounce cans cannelini beans (drained, or 3 cups cooked cannelini beans)
freshly ground black pepper (to taste)
shredded cheddar cheese (for serving, optional)
sour cream (for serving, optional)
diced avocado (for serving, optional)
chopped fresh tomato (for serving, optional)
chopped fresh cilantro (for serving, optional)
lime wedges (for serving, optional)

Steps:

  • Heat olive oil in a large pot or Dutch oven over medium-high heat. Add turkey; cook and stir until lightly browned, breaking up into bite size pieces.
  • Add onion, garlic, bell pepper, oregano, chili powder, cumin, chipotle chili powder, kosher salt, and cayenne (if using); cook and stir until onion is translucent, about 5 minutes.
  • Add tomatoes with juice and chicken broth; bring to boil. Reduce heat and cover; simmer 10 minutes.
  • Stir in beans; cover and simmer 5-10 minutes more. Season to taste with salt and pepper. Serve with desired toppings.

3 tbsp avocado oil
2 cups diced yellow onion
3 cloves garlic (minced)
2 pounds Honeysuckle White Lean Ground Turkey
2 tsp kosher salt
1 tsp black pepper
2 teaspoons ground cumin
1 teaspoon ground coriander
1 ½ teaspoons chili powder
1 ½ teaspoons dried oregano
¼ teaspoon cayenne pepper
2 [4-ounce] cans mild diced green chiles (undrained)
2 [15-ounce] cans cannellini or great northern beans (undrained)
2 cups low-sodium chicken broth
2 bay leaves
Shredded monterey jack cheese
Pico de gallo
Pickled jalapenos
Fresh cilantro leaves
Sour cream
Lime wedges

Steps:

  • Heat the oil in a large pot or dutch oven over medium heat. When hot, add the onion and garlic and cook, stirring, until the onion is translucent, about 5 minutes.
  • Add the ground turkey, salt, and pepper and cook, breaking up the meat with the edge of a spoon into smaller pieces and the turkey is cooked through, or no longer pink, about 5 minutes.
  • Add the cumin, coriander, chili powder, oregano, cayenne tossing until the spices are well combined with the meat. Cook, toasting the spices, for about 2 more minutes.
  • Add the green chiles, beans, broth and bay leaves and bring the pot to a boil. Reduce the heat to a simmer and cook, lightly simmering, uncovered, and stirring occasionally to allow the flavors to meld and the chili to thicken, about 25 minutes.
  • Ladle the chili into bowls and top with desired toppings! Enjoy!

1/2 pound dried navy beans, picked over
Sour cream, for serving
2 tablespoons olive oil
Grated Cheddar or Monterey Jack cheese, for serving
2 cups chopped yellow onion
Chopped green onions, for serving
2 tablespoons minced jalapeno
2 tablespoons minced garlic
2 1/2 pounds ground turkey
2 tablespoons Emeril's Southwest Essence, recipe follows
1 2/3 tablespoons chili powder
2 teaspoons kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano, crumbled
1 bay leaf
3 tablespoons cornmeal
3 cups low-sodium chicken broth
2 (10-ounce) cans Ro'tel Diced Tomatoes and Green Chiles (original), undrained
2 (4-ounce) cans diced green chiles, undrained
1 tablespoon finely chopped fresh cilantro stems
1/4 cup heavy cream
2 tablespoons finely chopped fresh cilantro leaves
1 tablespoon ground coriander
2 tablespoons chili powder
1 teaspoon cayenne pepper
2 teaspoons ground cumin
2 tablespoons paprika
1 tablespoon garlic powder
1 teaspoon crushed red pepper
1 tablespoon salt
1 tablespoon dried oregano
1 teaspoon black pepper

Steps:

  • In a large kettle, soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with enough water to cover by 2 inches. Cook beans at a bare simmer until just tender, about 1 hour, and drain in a colander.
  • In a skillet, heat the oil and saute the onion and jalapeno until soft and beginning to caramelize, 4 minutes. Add the garlic and cook, stirring, for 2 minutes. Add the ground turkey, Southwest Essence, chili powder, salt, cumin, oregano, and bay leaf and cook, stirring occasionally, until turkey is browned and cooked through, 6 minutes. Add the cornmeal and cook, stirring, for 2 minutes. Add the chicken broth, canned tomatoes, canned chiles, and cilantro stems and stir to combine. Bring to a boil, reduce heat to a simmer, and cook, uncovered, for 45 minutes, stirring occasionally. After it has cooked for 30 minutes, add the cooked beans. Add the heavy cream and cilantro leaves and cook, stirring occasionally, for 15 minutes longer.
  • Serve the chili in deep bowls, garnished with dollops of sour cream, grated Cheddar cheese, and green onions to taste.
  • Combine all ingredients thoroughly.

1 onion, chopped
3 cloves garlic, minced
1 ½ pounds ground turkey
2 (4 ounce) cans canned green chile peppers, chopped
1 tablespoon ground cumin
1 tablespoon dried oregano
1 teaspoon ground cinnamon
ground cayenne pepper to taste
ground white pepper to taste
3 (15 ounce) cans cannellini beans
5 cups chicken broth
2 cups shredded Monterey Jack cheese

Steps:

  • In a large pot over medium heat, combine the onion, garlic and ground turkey and saute for 10 minutes, or until turkey is well browned. Add the chile peppers, cumin, oregano, cinnamon, cayenne pepper to taste and white pepper to taste and saute for 5 more minutes.
  • Add two cans of the beans and the chicken broth to the pot. Take the third can of beans and puree them in a blender or food processor. Add this to the pot along with the cheese. Stir well and simmer for 10 minutes, allowing the cheese to melt.

1 onion, chopped
2 cloves garlic, minced
3 Tbsp. chili powder
1 tsp. ground cumin
1 lb. frozen ground turkey, thawed
1 can (28 oz.) diced tomatoes, undrained
1 can (15 oz.) white beans, rinsed
1 can (15 oz.) chickpeas (garbanzo beans), rinsed
1 cup frozen corn
1/2 cup KRAFT Original Barbecue Sauce
1 cup KRAFT Mexican Style Finely Shredded Four Cheese

Steps:

  • Heat oil in large saucepan on medium-high heat. Add onions; cook and stir 4 to 5 min. or until crisp-tender, adding garlic for the last minute. Stir in chili powder and cumin.
  • Add turkey; cook 5 min. or until done, stirring frequently.
  • Stir in tomatoes, beans, chickpeas, corn and barbecue sauce; bring to boil. Cover partially; simmer on medium-low heat 20 min., stirring occasionally. Serve topped with cheese.

My husband came home from a sales trip to the East Coast raving about white bean chili. This is our version.

1/2 pound turkey breast tenderloin
1/2 cup chopped onion
1 garlic clove, minced
1 to 1-1/2 teaspoons butter
1 cup chicken broth
3/4 cup canned great northern beans, rinsed and drained
1 cup canned diced tomatoes, undrained
2 tablespoons salsa
1 teaspoon dried parsley flakes
1/8 to 1/4 teaspoon cayenne pepper
Shredded cheddar cheese or sour cream, optional

Steps:

  • Cut turkey tenderloin lengthwise into quarters. In a skillet, cook the turkey, onion and garlic in butter until turkey is no longer pink and vegetables are crisp-tender. Remove turkey and let stand until cool enough to handle. Cut into cubes. Transfer vegetables to a saucepan. Add the turkey, broth, beans, tomatoes, salsa, parsley and cayenne. Bring to a boil. Reduce heat; simmer, uncovered, for 12-16 minutes or until slightly thickened. Top each serving with cheese or sour cream if desired.

2 medium onions, chopped
1 1/2 teaspoons dried oregano
1 1/2 teaspoons ground cumin
1 1/2 lbs lean ground turkey
1/4 cup chili powder
2 bay leaves
1 tablespoon unsweetened cocoa powder
1 1/2 teaspoons salt
1/4 teaspoon ground cinnamon
1 (28 ounce) can whole tomatoes
3 cups beef stock or 3 cups canned beef broth
1 (8 ounce) can tomato sauce
3 (15 ounce) cans small white beans, rinsed and drained
chopped red onion
chopped fresh cilantro
plain low-fat yogurt or light sour cream

Steps:

  • Heat oil in heavy large pot over medium heat. Add onions; sauté until light brown and tender, about 10 minutes.
  • Add oregano and cumin; stir 1 minute.
  • Increase heat to medium-high.
  • Add turkey; stir until no longer pink, breaking up with back of spoon.
  • Stir in chili powder, bay leaves, cocoa powder, salt and cinnamon. Add tomatoes with their juices, breaking up with back of spoon. Mix in stock and tomato sauce. Bring to boil.
  • Reduce heat; simmer 45 minutes, stirring occasionally.
  • Add beans to chili and simmer until flavors blend, about 10 minutes longer.
  • Discard bay leaves. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium-low heat before continuing.).
  • Ladle chili into bowls. Pass red onion, cilantro and yogurt separately.
  • Notes: I usually decrease the chili powder slightly because my DH prefers things mild.
  • We've always skipped the red onion and cilantro, but, it sounds interesting.
  • I'm estimating the active and passive work times.

Add cubed and ground turkey; cook until no longer pink, breaking ground turkey into crumbles. Add broth, beans, jalapeno, marjoram and savory. Bring to a boil. Reduce heat; simmer, covered, for 45 minutes, stirring occasionally. , Uncover; cook 15 minutes more. Dissolve cornstarch in water; stir into chili. Bring to a boil. Cook and stir 2 minutes. If desired, serve with cheese and sliced red onion.
