Provided by Lucy Netherton

Categories     Dinner, Main course

Time 1h

Number Of Ingredients 9

2 duck legs
1 tsp five-spice powder
5 tbsp rice vinegar
5 tbsp soy sauce
2 big oranges , segmented, juice reserved
2 x 100g bag watercress
200g bag radish , thinly sliced
140g pack chicory , leaves separated
small bunch spring onion , sliced diagonally

Steps:

  • Heat oven to 200C/180C fan/gas 6. Pat the duck legs dry with kitchen paper and rub in the five-spice and some seasoning. Pour the vinegar, soy and orange juice into a small roasting tin and put the duck on top. Cover with foil and cook for 30 mins, then remove the foil and increase oven to 240C/220C fan/ gas 9, or put under the grill and cook until the skin is crisp. Remove and strain the liquid through a sieve. Let the duck cool until you can shred the meat from the bones. Skim fat from the liquid.
  • Meanwhile, gently toss together the oranges, watercress, radishes, chicory and spring onions. Pour over reserved cooking liquid, then add the duck and arrange on a platter.

CRISPY SHREDDED DUCK AND NOODLE SALAD

Crispy Shredded Duck and Noodle Salad image

It's important to use large lettuce leaves (about 6 inches) for this salad, so you may need to buy 2 heads of lettuce in order to get 6 good leaves. Active time: 45 min Start to finish: 45 min

Yield Makes 6 first-course servings

Number Of Ingredients 15

2 ounces dried rice-stick noodles (rice vermicelli)
1 1/2 tablespoons rice vinegar (not seasoned)
1 1/2 teaspoons sugar
1/4 teaspoon salt
1/4 cup plus 1 tablespoon vegetable oil
2 (6- to 7-ounce) confit duck legs, meat (with skin attached) removed from bone in large pieces
1 large shallot, thinly sliced crosswise and separated into rings (1/3 cup)
1 (6-inch) piece seedless cucumber (usually plastic-wrapped), peeled
1 firm-ripe medium peach or nectarine, halved lengthwise and pitted
6 large Boston lettuce leaves
24 fresh mint leaves
24 fresh cilantro leaves
18 Thai basil leaves or small Italian basil leaves
Accompaniment: sweet chile dipping sauce and/or nuoc cham
a Japanese Benriner or other adjustable-blade slicer

Steps:

  • Cook noodles in a 4-quart pot of boiling salted water until just tender, 2 to 3 minutes. Drain in a colander, then rinse under cold water and drain well. Stir together vinegar, sugar, and salt in a bowl until sugar is dissolved, then add noodles and toss well.
  • Heat 1 tablespoon oil in a 10- to 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté duck pieces, starting with skin sides down and turning occasionally, until skin and meat are crisp, 3 to 5 minutes. Transfer with tongs to a cutting board. (Do not clean skillet.)
  • When duck is cool enough to handle, remove crisp skin from meat and thinly slice skin. Remove and discard any excess fat from meat, then shred meat into 1/4-inch-wide pieces.
  • Heat remaining 1/4 cup oil in skillet over moderately high heat until hot but not smoking, then fry shallot, stirring occasionally, until golden brown, about 2 minutes (watch closely, as shallot can burn easily). Quickly transfer with a slotted spoon to paper towels to drain.
  • Working around core of cucumber, cut thin lengthwise slices (about 1/8 inch thick) with slicer, then stack slices. Halve stack crosswise, then cut slices lengthwise into 1/4-inch-wide matchsticks.
  • Cut each peach half lengthwise into 1/8-inch-thick wedges with slicer or a sharp knife.
  • Put 1 lettuce leaf on each of 6 plates, then divide noodles among leaves and top with duck (meat and skin), cucumber, peach, shallot, and herbs. To eat, roll lettuce leaf into a cylinder to enclose filling.

SHREDDED ROAST DUCK

Shredded Roast Duck image

Some say roasting a duck is difficult work. It is not. It can be messy, though, so make sure you have a roasting pan that can accommodate the enormous amount that renders out of the bird during its roughly four and a half hours in the oven. (Save it for roasting potatoes!) When the meat has cooked, use a couple of forks to shred it, then moisten it with your favorite barbecue sauce, hoisin sauce, gochujang sauce or gravy, and serve with rice or noodles, on potato rolls or Chinese wheat-flour pancakes, or as the final topping of this maniacal recipe for scallops with hollandaise sauce and shredded duck.

Provided by Sam Sifton

Categories     roasts, main course

Time 5h

Yield 4 to 6 servings

Number Of Ingredients 3

1 4- to 6-pound duck
Kosher salt and freshly ground black pepper, to taste
Barbecue sauce or hoisin sauce, to taste

Steps:

  • Heat oven to 325. Remove giblets and neck from duck cavity, and discard or reserve for another use. Cut off excess fat from duck cavity. Place duck on a rack in a deep roasting pan, breast-side up, and season with salt and pepper. Then slide the pan into the oven and cook, undisturbed, for 2 hours.
  • Remove duck from oven, and use the point of a sharp knife to prick the skin of the bird, all over the breasts and thighs. Return bird to oven, and cook for 1 to 2 more hours, or until an instant-read thermometer inserted into the thigh measures around 155 degrees.
  • Increase oven temperature to 450, and cook until the duck is golden and crisp, 15 to 30 minutes.
  • Carefully remove the roasting pan from the oven, and transfer the duck to a cutting board. (Let the fat in the pan cool, then store it, covered, in the refrigerator. It is an excellent medium for roasting potatoes.) Allow the duck to rest for a few minutes, then shred it, using two forks to pull the meat apart. Add your favorite barbecue sauce, to taste, or your favorite hoisin sauce, to taste. Keep warm.

WARM DUCK SALAD WITH WALNUT & ORANGE DRESSING

Warm duck salad with walnut & orange dressing image

The perfect dinner party main for those with a small kitchen and a great meal-in-one

Provided by Sara Buenfeld

Categories     Dinner, Lunch, Main course, Side dish, Starter

Time 35m

Number Of Ingredients 11

4 duck breasts
4 medium potatoes , peeled and diced
16 walnuts halves
250g vaccum-packed beetroot (with vinegar)
100g bag watercress , large stems removed
4 spring onions , thinly sliced
1 head chicory , separated into leaves, the core sliced
3 small oranges , peeled and sliced
4 tbsp walnut oil
4 tsp red wine vinegar
1 tbsp chunky marmalade

Steps:

  • Mix the dressing ingredients with salt and pepper, then set aside. Heat a large non-stick frying pan, add the duck, skin side down, then fry for 10 mins. (During this time a large amount of fat will come from the skin and it will turn golden, but the flesh shouldn't cook too much.) Turn the duck breasts over for a second to seal, then take from the pan.
  • Toss the potatoes in the duck fat and fry, turning frequently, until they are golden. Add the walnuts, stir, then lift everything out of the fat with a slotted spoon and put in a roasting tin. Put the duck on a roasting rack on top. Brush the beetroot with a little of the duck fat and put on a separate dish. This can all be done on the morning if you want to get ahead, but chill the duck and bring back to room temperature before cooking.
  • To serve: Heat oven to 220C/fan 200C/gas 7. Roas the duck, potatoes and beetroot for 15 mins, then cut the beetroot into wedges. Put the watercress, spring onions and chicory in a bowl and toss with three-quarters of the dressing. Pile onto plates with the sliced oranges and beetroot, then scatter with the potatoes and walnuts. Slice the duck (you can remove the fat first if you like), arrange on top of the salad and drizzle with the remaining dressing. Serve while still warm.
