- Add the chicken, lemongrass, ginger, carrot, celery, shallot, bay leaf, black peppercorns, Thai chile and 1 teaspoon salt to a large Dutch oven or soup pot. Add 6 cups cold water and place over medium heat. Bring the soup to a simmer, skimming off any residue that may come to the top. Reduce the heat to low; cover and cook for 45 minutes or until the chicken is cooked through. Turn off the heat and allow the soup to cool for about 30 minutes.
- Remove the chicken from the soup and shred the meat, discarding the bones and skin. Strain the stock, discarding the solids, and return the liquid to the pot. Add the shredded chicken back into the stock, along with the spinach, and bring the soup to a simmer over medium-high heat. Serve immediately.

- Remove the skin from the chicken thighs and discard; place the thighs in a large pan. Bruise the lemon grass with a rolling pin and crumple the lime leaves in the palm of your hand. Place in the pan with the garlic, chilli, including the seeds, and ginger and 1.5 litres of water. Bring to the boil and simmer for 30 minutes until the chicken is cooked right through.
- Strain the stock into a clean pan then, using 2 forks, shred the meat off the bones. Return the chicken to the pan with the fresh lime juice, soy sauce and sliced salad onions. Heat through gently and when steaming hot, ladle into bowls. Loosely scatter over the coriander leaves and serve.
- For pretty presentation and a little extra flavour, try drizzling a splash of chilli or sesame oil over the surface of each serving.

- Bruise the lemongrass by laying it on the cutting board and whacking on the surface with the dull side of a chefs knife. Place the stock in a medium saucepan, and bring to a simmer over medium heat. Season with the pinch of palm sugar along with a pinch of salt.
- Add the galangal, smashed lemongrass (kept whole), shallots, and torn lime leaves, and simmer for a few minutes. Add the chicken, and simmer until cooked, about 5minutes.
- Remove the pot from the heat, and transfer the chicken to a plate. Cover the stock. Let the chicken cool slightly, then coarsely tear or shred using your hands.
- Strain the stock into another pot using a fine-mesh sieve, discarding the aromatics. Bring the stock to a simmer over medium heat.

- Butcher Chicken Leg Quarters into two pieces: legs and thighs. Place the chicken pieces into the stock pot. Or, leave them in whole. (I find it cooks faster when butchered into two).
- Prep Lemongrass: place 1 stalk on a cutting board. Pound with a mallet or rolling pin until cracked and splitting apart. Alternately, grip a knife handle with your fist and pound down with the butt of the handle. The bruised lemongrass should be fragrant. Place in stock pot, on top of chicken. Add onion, salt, and water.
- Bring to a boil. Lower heat to medium low and simmer until chicken is tender and the broth looks oily and golden yellow in color, about 30 minutes.
- Meanwhile, place dried rice noodles in a large bowl. Add boiling water (I use my tea kettle) until noodles are covered with liquid. Let stand for 10 minutes. Drain and set aside. It's okay if there are a few pieces of noodle that are still hard.

- Peel skin off the chicken, set aside. Pick meat off the bones and shred, set aside reserving bones.
- Heat oil in a medium stock pot over medium heat. Add lemongrass, ginger, garlic and spring onions and cook for a minute, until fragrant.
- Add stock and reserved bones and skin off the chicken. Bring the stock to a boil, lower heat to a simmer and cook for another 5 minutes, for the skin and bones to impart extra flavour.
