KOREAN SHORT RIB TACOS

4 pounds (1.8 kg) boneless beef short rib, cut into 3-inch chunks
Kosher salt and cracked black pepper
1/2 cup (100 g) all-purpose flour, for dredging
1/4 cup (50 g) butter
2 tablespoons vegetable oil, such as canola or grapeseed
2 shallots, unpeeled, large dice
1 carrot, large dice
1 celery rib, large dice
One (750 milliliter) bottle dry red wine, such as cabernet sauvignon or merlot
4 cups (946 ml) beef broth
2 bay leaves
2 sprigs flat-leaf parsley
2 sprigs fresh thyme
3 tablespoons soy sauce
3 tablespoons sugar
2 tablespoons gochujang
2 teaspoons sesame oil
12 small corn tortillas
1 tablespoon vegetable oil
2 pounds Brussels sprouts, thinly sliced
1/2 yellow onion, chopped
Kosher salt and cracked black pepper
Shredded short rib, from above
2 limes, cut into wedges, for garnish

Steps:

  • For the Braised Short Ribs: Preheat the oven to 325 degrees F (165 degrees C).
  • Season the beef pieces with some salt and pepper. Dredge the beef lightly with the flour and shake off excess; set aside. Heat 1 tablespoon butter and 1 tablespoon vegetable oil in a roasting pan over medium-high heat. Brown the short rib pieces on all sides, about 10 minutes. Use more butter and oil as needed to give a golden brown and delicious surface to each piece of beef.
  • Melt another tablespoon of butter in the pan. Stir in the shallots, carrots, and celery. Cook and stir until the vegetables have softened, about 10 minutes. Add the red wine, scrape up the brown bits in the pan, and reduce the wine volume by half. Stir in the beef broth, bay leaves, parsley and thyme. Add beef broth up to half the height of the contents of the pot, do not submerge. Bring the pot to a boil, cover with a tight fitting lid or aluminum foil, then transfer to the preheated oven until the short rib is very tender, about 2 1/2 to 3 hours. Once the short rib is tender, remove from the oven and allow to cool slightly. Strip the meat with a fork, cover and keep warm for the assembly stage.
  • For the Korean Taco Sauce: Whisk the soy sauce, sugar, gochujang and sesame oil together until the sugar has dissolved and the mixture is smooth. You can make this a few days in advance and store tightly covered in the refrigerator.
  • To Assemble the Tacos: Heat some tortillas in a dry skillet. In the same pan, add the vegetable oil, then briefly saute the Brussels sprouts, chopped onions and some salt and pepper. Add some shredded short rib and Korean Taco Sauce. Do not overcook.
  • Spoon some of the taco filling into each tortilla. Serve with the Korean Taco Sauce and a lime wedge.

Cabeza is hard to find in Seattle, so I use short ribs to replicate the texture. 2 tablespoons canola oil
6 bone-in beef short ribs
1/4 teaspoon salt
1/4 teaspoon pepper
2 medium carrots, finely chopped
1 small yellow onion, finely chopped
2 tablespoons baking cocoa
1 can (15 ounces) tomato sauce
1 bottle (12 ounces) dark beer or beef broth
Water, optional
12 corn tortillas (6 inches), warmed
3/4 cup pico de gallo
3/4 cup queso fresco or crumbled feta cheese

Steps:

  • Preheat oven to 325°. In an ovenproof Dutch oven, heat oil over medium-high heat. Sprinkle beef with salt and pepper; brown in batches. Remove with tongs., Reduce heat to medium. Add carrots and onion to drippings; cook, stirring frequently, until starting to brown, 3-5 minutes. Add cocoa; toast, stirring frequently, until aromatic, 1-2 minutes. Add tomato sauce and beer, stirring to loosen browned bits from pan. Bring to a boil; simmer 2-3 minutes. , Return ribs to pan; add water, if necessary, to cover. Bake, covered, until meat is tender, 2-1/2 to 3 hours. Remove from oven; drain, reserving juices. When cool enough to handle, remove ribs from pan and remove meat from bones; discard bones. Shred meat with 2 forks. Skim fat from reserved juices. Return meat and juices to Dutch oven; heat through. Serve on tortillas with pico de gallo and queso fresco.

Everyone has his or her favorite Tacolicious taco, but this is mine, hands down. These short ribs cooked slowly with guajillos break down into the perfect braised meat: rich, a tad spicy, and appropriately messy-a true sign of greatness. You can ask your butcher to bone the ribs for you, or you can just cook them with the bone in and then bone them before shredding the meat. You'll need 5 pounds of bone-in short ribs to yield the required 3 pounds of meat. This dish can be on the spicy side, so if you're really sensitive to heat, cut back a little on the chiles.

Yield Makes 16 tacos; serves 4 to 6

8 guajillo chiles, stemmed and seeded
3 dried chipotle chiles, stemmed and seeded
2 to 4 tablespoons vegetable oil
3 pounds boneless beef short ribs
1 large yellow onion, coarsely chopped
2 cloves garlic, coarsely chopped
1 (12-ounce) bottle Negro Modelo or other dark Mexican beer
2 teaspoons ground cumin
1 teaspoon freshly ground black pepper
1 1/2 tablespoons dried Mexican oregano
1 1/2 tablespoons kosher salt
1/2 cup water
Corn tortillas, warmed, for serving
Chopped white onion, chopped fresh cilantro, salsa of choice, and lime wedges, for serving

Steps:

  • Preheat the oven to 325°F.
  • Working in two batches if necessary to avoid crowding, lightly toast all of the chiles in a dry, heavy skillet over medium heat for 30 seconds on each side, until fragrant but not blackened. Set them aside on a plate.
  • Heat 2 tablespoons of the oil in a Dutch oven or other heavy pot with a lid over medium-high heat. When the oil is hot, working in batches to avoid crowding, add the meat and sear for about 3 minutes on each side, until the pieces have formed a uniformly browned crust. Add more oil to the pot as needed to prevent scorching. As the pieces are ready, set them aside on a plate.
  • Add the onion to the same same pot over medium heat and cook, stirring occasionally, for about 5 minutes, until it starts to brown. Add the garlic and cook for an additional 2 minutes.
  • Pour in the beer, add the toasted chiles, and turn down the heat to low. Simmer uncovered, stirring occasionally, for about 5 minutes, until the chiles have softened and are pliable. Remove from the heat and let cool.
  • Transfer the contents of the pot to a blender and reserve the pot. Add the cumin, pepper, oregano, salt, and water to the blender and blend the mixture on high speed until smooth and the consistency of cream, adding more water if needed to thin the mixture a bit.
  • Return the seared meat to the pot and pour in the chile mixture. Cover, transfer to the oven, and cook, stirring occasionally, for 3 to 4 hours, until the meat is fork-tender.
  • Remove from the oven and, using tongs or a couple of forks, shred the meat in the pot. Taste and adjust the seasoning with salt if needed. Serve with the tortillas, onion, cilantro, salsa, and lime.

1 1/2 lbs. pork tenderloin (cut into 1/4-inch cubes)
1 TBS EACH chili powder, ancho chili powder
1 1/4 teaspoon salt
1 tsp EACH garlic powder, ground cumin, brown sugar
1/2 tsp EACH dried oregano, smoked paprika, onion powder, ground coriander
1/4 teaspoon pepper
1/4-1/2 teaspoon cayenne pepper (optional for more heat)
2 tablespoons olive oil
3 tablespoons mild chopped green chiles ((half of a 4 oz. can))
1 tablespoon apple cider vinegar
1 tablespoon lime juice
1 avocado
1/2 cup sour cream or Greek yogurt
2 tablespoons mayonnaise
1 tablespoon lime juice
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon garlic powder
1 Recipe Corn Salsa
10 corn or flour tortillas, 6-inch ((I love La Tortilla Factory))
lime juice
hot sauce
crumbled cotija

Steps:

  • Avocado Crema: Add all of the Avocado Crema ingredients to your blender and blend until smooth, scraping sides down as needed. May make 6 hours ahead of time and refrigerate in an airtight container.
  • Corn Salsa: Prepare Corn Salsa anytime before making pork and store in the refrigerator.
  • Pork: While the pork is still on the cutting board, pat it dry then sprinkle it with all of the seasonings. Toss until evenly coated.
  • Heat oil in a large cast iron skillet over medium high heat. Add the pork in a single layer and let brown for 1-2 minutes then continue to cook and stir just until cooked through (don't overcook, 145-155 degrees F). When almost cooked through, stir in green chiles, lime juice and vinegar. Taste and season with additional salt or cayenne pepper to taste.
  • To serve: Top tortillas with pork, Corn Salsa, Avocado Crema, freshly squeezed lime juice, hot sauce to taste and optional Cotija.

CREAM TACOS: TACOS DE CREMA

1 1/2 pounds whole, unhusked tomatillos
3 garlic cloves
1/2 teaspoon salt
1 to 2 serrano chiles
1/4 cup olive oil, divided
1 pound Mexican sausage (recommended: longaniza or chorizo), minced
12 corn tortillas
1 white onion, minced
1/4 cup minced cilantro leaves
1 cup sour cream
4 poblano or Anaheim chiles, roasted, sweated, peeled, seeded, de-veined, and cut into strips
12 cilantro sprigs, washed and dried

Steps:

  • Blanch the tomatillos in 1 quart boiling water for 3 minutes. Drain and save 1/2 cup of the cooking water. Set aside, cool, and remove husks. Place tomatillos in a blender with the garlic, salt, and serrano chiles. Add 3 to 4 tablespoons cooking liquid and blend on high speed for 10 seconds. Set sauce aside.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the Mexican sausage and fry until browned and completely cooked through. Transfer sausage to paper towels to drain and set aside.
  • Simmer sauce for 5 minutes in a pan wide enough to dip tortillas. Heat the remaining oil in a large skillet over high flame. With tongs, dip 1 tortilla at a time in the hot oil for a few seconds to coat and heat and then dip the tortilla in tomatillo sauce. Place on a serving plate and fill with 1/12th of the Mexican sausage, 1 tablespoon minced onion, and 1/2 teaspoon minced cilantro. Roll the tortilla into the shape of an enchilada. Repeat with remaining tortillas. Top with sauce, sour cream, strips of green chile, and a cilantro sprig. Serve immediately.

SWEET AND SPICY SHORT RIB TACOS



Sweet and Spicy Short Rib Tacos image

4 dried ancho chiles*, stemmed, seeded, and ribs discarded
1 medium onion, quartered
3 garlic cloves, coarsely chopped
1/3 cup brown sugar
1 tablespoon apple cider vinegar
1 1/2 cups low-sodium beef broth
1 teaspoon salt, plus extra for seasoning
1 teaspoon freshly ground black pepper, plus extra for seasoning
6 pounds beef short ribs
1 tablespoon vegetable oil
Warm corn tortillas
Mexican crema or sour cream
1/2 cup chopped fresh cilantro leaves

Steps:

  • Soak the ancho chiles in boiling water until softened, about 15 minutes. Drain and discard the liquid. Transfer the softened chiles to a blender. Add the onion, garlic, brown sugar, apple cider vinegar, beef broth, 1 teaspoon salt and 1 teaspoon pepper. Puree until smooth.
  • Pat ribs dry and sprinkle with salt and pepper. Heat the oil in a 12-inch heavy skillet over medium-high heat until hot but not smoking. Brown the ribs in 3 batches, turning occasionally, about 7 minutes per batch. Transfer the browned ribs to a slow cooker.
  • Pour the sauce over the ribs (liquid should reach about halfway up sides of meat),
  • cover and cook for 7 hours on high until very tender. Allow the ribs to cool slightly in the sauce.
  • Remove the ribs from the sauce. Discard the bones and shred the meat into a large bowl. Skim the fat from the surface and discard. Mix the sauce into the meat and season with salt and pepper, to taste. Spoon the meat and sauce into warm corn tortillas and serve with Mexican crema and chopped fresh cilantro.

1 tablespoon brown sugar
1 tablespoon smoked paprika
1 heaping teaspoon garlic powder
1 large pinch kosher salt
1 large pinch black pepper
3 ears corn, shucked
2 tablespoons olive oil
1/4 cup mayonnaise
1/4 cup BBQ sauce
2 tablespoons brown mustard
1 tablespoon honey
1/2 cup store-bought fried onions
2 green onions, sliced thin

Steps:

  • Preheat the oven to 425°F. Cover the bottom of a baking sheet with parchment paper.
  • For the ribs: In a small bowl, mix together the brown sugar, paprika, garlic powder, salt and pepper. Set aside.
  • Using a sharp knife, carefully halve the ears of corn lengthwise (see Cook's Note). Then, cut each half lengthwise, creating 4 equal pieces. Brush each with the olive oil and season the corn with the spice mix. Transfer to the prepared baking sheet.
  • Bake until the corn is nicely charred and the slices begin to curl, resembling ribs, 18 to 20 minutes.
  • While the ribs bake, make the mustard mayo: Mix together the mayonnaise, BBQ sauce, mustard and honey in a small bowl. Set aside.
  • Remove the ribs from the oven and immediately brush with a little bit of the sauce. Transfer the corn ribs to a platter. Sprinkle over the fried onions and the green onions, then serve.
