2 pounds boneless skinless chicken breast (cut into large chunks)
½ cup plain whole milk yogurt
¼ cup lemon juice
¼ cup olive oil
6 garlic cloves (crushed)
1 tablespoon tomato paste
1 teaspoon paprika
¾ teaspoon cinnamon
½ teaspoon oregano
½ teaspoon ground ginger
1 teaspoon salt
¼ teaspoon black pepper

Steps:

  • In a large bowl, add the ingredients for the marinade (yogurt, lemon juice, olive oil, garlic, tomato paste, all the seasoning and salt/pepper) and whisk to combine.
  • Place the chicken cubes in the same bowl and coat the chicken in the marinade. Cover, and let rest/marinate in the fridge for at least 4 hours.
  • Thread the chicken on skewers right before grilling. Add one wedge of onions to each skewer, if desired.
  • Grill on medium heat for 5-8 minutes per side.
  • Serve with pita bread, lettuce and garlic sauce, if desired.

1 lb good quality chicken breast, cut into 1/2 inch cubes (They're easier to cube if you cut them while still a little frozen)
1 garlic clove, peeled and crushed, is what the recipe i have calls for, but I used 1 tablespoon of minced garlic fr
3/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon black pepper
1/4 teaspoon allspice
2 tablespoons best quality olive oil
3 tablespoons lemon juice, but I used Lime juice

Steps:

  • In non-reactive container (glass, good ceramic or stainless steel) combine the cubed chicken, garlic, salt, cinnamon, black pepper, allspice, oil and lemon juice, mix well, cover (you can use saran wrap).
  • *Note* You should marinate the chicken for several hours in the refrigerator to get the best taste out of the chicken.
  • Thirty minutes before grilling remove from refrigerator, allowing it to reach room temperature.
  • Thread onto skewers *note*.
  • If using wooden skewers, be sure to soak them in cold water for at least 20 minutes prior to using.
  • Grill over medium charcoal fire, basting and turning several times, until delicately browned.
  • The recipe also says you can also grill in the oven, but if you've got a charcoal grill, it works much nicer.
  • But if you dont have a charcoal grill; pre-heat the grill. Place chicken on skewers over an oven sheet and cook until browned (6-8 minutes), turning skewers and basting occasionally with the marinade to keep moist.
  • I serve this with baked pita,hummus, Kibbee, and a nice green salad with feta cheese dressing.

3 tablespoons lemon juice
1 tablespoon olive oil

Steps:

  • In a medium bowl, combine all ingredients.
  • Place in the refrigerator to marinate for at least 2 up to 24 hours.
  • Place about 5 chicken chunks on the skewers alternating between the vegetables and the chicken.
  • Place them on the grill for 15 minutes or until done.
  • Don't forget to turn skewers during cooking.

2 lbs boneless chicken breast (cut into cubes/Kabab chunks)
1 cup lemon juice
slice lemon (optional)
15 cloves garlic (crushed)
6 tablespoons plain yogurt
6 tablespoons olive oil
2 tablespoons red vinegar (or apple cider vinegar)
1 teaspoon white pepper (ground)
1/3 teaspoon ground ginger
1/2 teaspoon ground thyme (or ground oregano)
1/3 teaspoon paprika
1 teaspoon salt (or to taste)
1 teaspoon tomato paste
4 teaspoons Garlic Paste (Lebanese style)
4 loafs pita bread
4 tomatoes (grilled)
2 cups French fries
8 salted pickles (Lebanese style cucumber pickles)

Steps:

  • Cut the chicken breasts into cubes of about 2 inches each. The cubes shouldn't be too small otherwise they'll dry quickly on the grill.
  • Place chicken cubes in a bowl, add all marinade ingredients and rub with hands until all ingredients assimilated well.
  • Let marinate in a covered container in the fridge for at least 4 hours, preferably overnight.
  • Skewer the chicken right before grilling.
  • Grill on a BBQ on medium heat for 12-15 minutes maximum turning frequently. Overcooking can dry the chicken.
  • Alternatively, you can lay the skewers on the edges of a deep Pyrex dish and bake in the oven at 400F for 15 mins.
  • Once cooked, remove the chicken cubes and place in a pot while covering the lid tightly. Let rest for 5 minutes to help the chicken self-steam and turn juicier and softer.
  • Spread 1 teaspoon of Lebanese garlic paste along the center/diameter of a pita bread.
  • Add 4-5 chicken kabobs.
  • Garnish with salted cucumber pickles, French fries, grilled tomatoes or peppers (optional)., Roll and enjoy. You could also toast the wrap roll through a panini grill for 2-3 minutes.

This is my sister-in-law's recipe for Chicken Shish-tawuk ( I would love to know the correct spelling for this.

4 boneless skinless chicken breasts
1/4 cup flour
3 lemons
1 tablespoon tomato paste
2 tablespoons plain yogurt
1 tablespoon yellow mustard
2 minced garlic cloves
1 pinch salt
1 pinch black pepper
1 pinch cinnamon
1/2 teaspoon allspice (I use 7 Spice)
1/2 teaspoon Season-All salt
bamboo skewer, soaked in water

Steps:

  • Wash chicken breasts with cool water, then cut them into equal sized cubes.
  • In a mixing bowl, squeeze the juice of 1/2 lemon over chicken cubes and coat them with the flour and a pinch of salt. Cut two lemons and put the pieces in the bowl with the chicken.
  • Cover and refrigerate for 15 minutes.
  • During that 15 minutes, in a mixing bowl, mix tomato paste, yogurt, mustard, garlic cloves, salt, black pepper, cinnamon, 7 spice/allspice, season-all and the juice of 1/2 lemon together.
  • Rinse flour and lemon mixture off of the chicken cubes and discard the lemons.
  • Coat the chicken with the spice mixture, cover bowl with saran wrap and refrigerate for at least 3 hours.
  • I like to eat this meal with fattoush salad and baba ghannouj, and use the marinating time to prepare those things.
  • Preheat the oven to 350 degrees.
  • Fry the chicken cubes until they are almost completely cooked. Allow them to cool to the touch.
  • When they have cooled, put about 6 cubes on each skewer.
  • Mix the remaining sauce with 3T of water in the bottom of a Pyrex baking dish and balance the chicken skewers over the top.
  • Bake the chicken for about 15 minutes until the sauce thickens and the chicken is thoroughly cooked.
  • Serve with pita bread and/or rice.

12 -15 bamboo skewers, soaked

Steps:

  • Soak bamboo skewers, if using, for about an hour (soak extra and freeze any unused ones for later).
  • Stir together ingredients and allow chicken to marinate in it for at least an hour, preferably more.
  • Skewer chicken.
  • Cook skewers on the grill or under the broiler until cooked through (time will vary with size of chunks).
  • To make toum sauce, grind the garlic with the salt in a mortar until it is pasty.
  • Mix in the lemon and mayonnaise, and very slowly add oil, whisking as you go.
  • Add salt and pepper to taste.
  • Serve sauce with kabobs.
