I can throw this chicken lo mein together on a weeknight when my kids are doing their homework. It uses frozen veggies, which I always have on hand, so I don't need to run to the grocery store for ingredients. -Natasha Kennedy, Orlando, Florida

8 ounces uncoooked linguine
8 garlic cloves, minced
3 teaspoons canola oil, divided
2/3 cup chicken stock
1/4 cup reduced-sodium soy sauce
2 teaspoons sugar
2 teaspoons oyster sauce
2 teaspoons lime juice
2 teaspoons chili sauce
2 teaspoons cornstarch
2 teaspoons water
1 cup frozen mixed vegetables
2 cups cubed rotisserie chicken
Chopped green onions, optional

Steps:

  • Cook linguine according to package directions for al dente. Meanwhile, in a small saucepan, cook garlic in 1 teaspoon oil for 1 minute. Whisk in stock, soy sauce, sugar, oyster sauce, lime juice and chili sauce; bring to a boil. Reduce heat; simmer for 1 minute., In a small bowl, combine cornstarch and water until smooth. Stir into pan. Bring to a boil; cook and stir 1-2 minutes or until thickened. Remove from heat., In a large skillet or wok, stir-fry vegetables in remaining oil for 4-6 minutes or until crisp-tender. Stir in chicken and sauce; heat through. Drain linguine; toss with chicken mixture. Top with green onions, if desired.

3 Tbsp cornstarch, divided
3/4 cup fat-free chicken broth
1/2 cup low-sodium teriyaki marinade
2 tsp sesame oil
2 tsp minced garlic
2 tsp ground ginger
1 pkg (8 oz.) wide lo mein noodles or rice noodles
1 lb chicken tenders
2 Tbsp canola oil, divided
3 cups broccoli florets
6 oz frozen sugar snap peas, thawed
1 red bell pepper, cut into 1" pieces
3 scallions, sliced

Steps:

  • Make sauce; in small bowl, stir 1 Tbsp. cornstarch, chicken broth, teriyaki marinade, sesame oil, garlic and ginger until blended, set aside. Cook noodles as directed, drain. Cut chicken into 1/4-inch thick slices. Place with remaining 2 Tbsp. cornstarch in plastic bag. Seal bag, shake until evenly coated.
  • Heat 1 Tbsp. oil in large skillet over med-high heat. Add chicken, stir-fry for 4 min or until lightly browned. Remove to platter.
  • Heat remaining 1 Tbsp. oil in same pan, Stir-fry veggies 5 min or until crisp-tender. Stir sauce, add to skillet, cook 30 seconds or until thickened. Stir in chicken and noodles. Sprinkle with scallions.

Easy Chicken Lo Mein is a favorite fresh egg noodles, delicious hoisin grilled chicken, veggies all tossed in a delicious sauce!

4 boneless skinless chicken breasts
½ red pepper (, finely sliced)
8 oz bean sprouts
1 tablespoon oil
4 cloves garlic (, minced)
1 tablespoon fresh grated ginger
4 scallions (, chopped & divided)
1 package fresh egg noodles ((8-10 oz. Asian style))
½ cup Hoisin sauce
Pea Shoots ((optional))
½ cup chicken broth ((we use low sodium))
4 tablespoons soy sauce
2 tablespoons Hoisin Sauce
2 tablespoons Oyster Sauce
2 teaspoons sesame oil
4 teaspoons corn starch

Steps:

  • Pound chicken breasts to ½ inch thick. Marinate in Hoisin sauce 30 minutes (or up to 4 hours).
  • Chop scallions and set the green part aside.
  • Combine all sauce ingredients and mix well. Grill chicken over medium heat about 5 minutes each side or until cooked through. Slice diagonally.
  • Cook noodles according to package directions (mine were "boil 1 minute").
  • Heat oil in a large pan or wok over medium heat. Add scallions, ginger and garlic. Cook until fragrant (about 1 minute). Add red pepper slices and cook 1 minute.
  • Add cooked noodles, bean sprouts, sliced chicken and sauce. Stir over medium heat until sauce is thickened (about 2 minutes). Top with scallion greens and pea shoots.

4 skinless, boneless chicken breast halves - cut into thin strips
5 teaspoons white sugar, divided
3 tablespoons rice wine vinegar
½ cup soy sauce, divided
1 ¼ cups chicken broth
1 cup water
1 tablespoon sesame oil
½ teaspoon ground black pepper
2 tablespoons cornstarch
1 (12 ounce) package uncooked linguine pasta
2 tablespoons vegetable oil, divided
2 tablespoons minced fresh ginger root
1 tablespoon minced garlic
½ pound fresh shiitake mushrooms, stemmed and sliced
6 green onions, sliced diagonally into 1/2 inch pieces

Steps:

  • In a medium, non-reactive bowl, combine the chicken with 2 1/2 teaspoons of white sugar, 1 1/2 tablespoons vinegar and 1/4 cup soy sauce. Mix this together and coat the chicken well. Cover and let marinate in the refrigerator for at least 1 hour.
  • In another medium bowl, combine the chicken broth, water, sesame oil and ground black pepper with the remaining sugar, vinegar and soy sauce. In a separate small bowl, dissolve the cornstarch with some of this mixture and slowly add to the bulk of the mixture, stirring well. Set aside.
  • Cook the linguine according to package directions, drain and set aside. Heat 1 tablespoon of the vegetable oil in a wok or large saucepan over high heat until it starts to smoke. Add the chicken and stir-fry for 4 to 5 minutes, or until browned. Transfer this and all juices to a warm plate.
  • Heat the remaining vegetable oil in the wok or pan over high heat. Add the ginger, garlic, mushrooms and green onions, and stir-fry for 30 seconds. Add the reserved sauce mixture and then the chicken. Simmer until the sauce begins to thicken, about 2 minutes. Add the reserved noodles and toss gently, coating everything well with the sauce.

1 (15 ounce) package oriental-flavor instant ramen noodles
1 tablespoon sesame oil
1 1/2 teaspoons fresh garlic, finely chopped
1 lb chicken breast, chop into 1/2-inch cubes
4 cups coleslaw mix
2 tablespoons green onions, chopped
light soy sauce

Steps:

  • Break noodles in half; cook according to package directions.
  • Rinse with hot water; drain well.
  • Meanwhile, in large skillet or wok, heat oil over MED-HIGH; sauté garlic to fragrant, stirring constantly.
  • Add seasoning packet from mix and the chicken. Continue cooking; stirring until chicken is no longer pink, about 5 minutes,.
  • Stir in coleslaw mix. Continue cooking, stirring constantly, until cabbage is slightly soft but crisp, about 1 minutes.

salt and pepper to taste
6 slices Swiss cheese
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup sherry
¼ cup sour cream
1 cup croutons
½ cup butter, melted
⅛ teaspoon dried dill weed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place chicken in a 9x13 inch baking dish and season with salt and pepper to taste. Cover each chicken breast with a slice of cheese.
  • In a medium bowl mix together the soup, sherry and sour cream, and pour mixture over chicken. Soften dill in melted butter; toss croutons in butter, and sprinkle them on top of chicken.
  • Bake in the preheated oven for 45 minutes, or until chicken is cooked through.
