SHERRY TOFU AND SNOW PEAS
My vegetarian friend Matthew and I get together to cook now and then (he being a newbie chef), and this was the first dish we made as his introduction to veggie cooking. Very tasty! Based on a recipe from Curtis Aikens.

Steps:
- Fry the tofu, covered, in 1 tablespoon of the oil until the tofu is nicely browned; remove from heat.
- In a small bowl, mix together the sherry, soy sauce, and cornstarch; pour over the tofu, stir well, and set aside to marinate.
- Remove the ends and strings from snow peas and cut each one into 2 to 3 pieces.
- Blanch the snow peas in boiling water for 1 to 2 minutes, then plunge them into very cold water to halt further cooking.
- In a skillet or wok heat the remaining 2 tablespoons of oil and saute the green onions, minced yellow onion, water chestnuts, and garlic for 4 minutes; add the snow peas and cashews and stir well.
- Add the tofu together with the marinade, lemon juice, and pepper and cook for 3 to 5 minutes or until the snow peas and sauce reach desired texture.
- Serve immediately with rice or noodles.

- In a large saucepan bring 6 cups water to boiling. Add snow peas, haricots verts, and asparagus. Return to boiling; reduce heat. Boil gently, uncovered, for 2 minutes. Using a slotted spoon, immediately remove vegetables from water; plunge vegetables into a large bowl half-filled with ice water. Let stand for 10 minutes. Drain vegetables well; pat dry with paper towels. Transfer vegetables to the large bowl.
- In a small bowl, combine salad dressing and Jamaican jerk seasoning; pour over vegetables, tossing to coat. Transfer vegetables to a serving platter or bowl and sprinkle with sesame seeds.

Having bought a new Wok recently (yeah another cooking gadget) I pulled out this Chinese cookbook, I love this recipe which comes from the book "The art of Wok cooking".

Steps:
- Marinate chicken for 15-30 minutes in mixture of the first 5 ingredients.
- Heat oil in uncovered wok until temps reach 375% degrees.
- Add chicken mixture and stir fry for 3-5 minutes.
- Add snow peas and water chestnuts stir fry for 1 minute.
- Add chicken stock and salt, stir fry until slightly thickened.
- Stir in cashews and cook for a few seconds.
- Serve immediately over noodles or rice.

PEANUT BUTTER TOFU AND SNOW PEAS

- Cut the tofu block into two slabs, then cover on all sides with lots of paper towels and set some plates or a skillet on top to weigh it down and remove water. Let sit for 15-20 minutes, then cube the tofu.
- Bring a large pot of water to a boil. Lightly salt and add snow peas for 30 seconds; remove and set aside. Cook the noodles according to the package directions; when they're done, drain and rinse them in cold water to stop the cooking and set them aside.
- In a large skillet over medium-high heat, heat the oil. Add the tofu cubes, turning after about two minutes and repeating until each side is lightly browned. Lightly sprinkle with salt and remove from heat, but you'll be adding the sauce to the pan with the tofu.
- While you're searing the tofu, whisk together the peanut butter and coconut milk in a saucepan over medium heat. Add the curry paste (you may want more or less, to taste), soy sauce, lime juice, and sugar and whisk to combine.
- Dump the sauce into the tofu pan and add the noodles and snap peas. Let the flavors combine over medium heat for a minute or two before serving.

- Heat water to boiling and add ramen noodles (reserve flavor packets).
- Cook two minutes.
- Drain noodles, reserving 1/4 cup noodle cooking water.
- Meanwhile, in nonstick skillet, heat oil over med-high heat until very hot.
- Add tofu and cook 5-6 minutes or until lightly browned, stirring occasionally.
- Add snow peas and green onions to skillet; cook 3-5 minutes or until veggies are tender-crisp, stirring frequently.
- Stir in carrots, stir-fry sauce and contents of 1 ramen noodle flavor packet and cook 2 minutes or until carrots are tender (Discard remaining ramen flavoring packet or save for another use).
- Reserve some bean sprouts for garnish.
- Add noodles, reserved noodle water, and remaining bean sprouts to skillet and cook 1 minute, stirring.
- Sprinkle with reserved sprouts and serve.
