3 large potatoes, peeled and quartered (about 1 1/2 pounds)
1/4 cup nonfat milk
1 1/4 cups fat free chicken broth
1 tablespoon Dijon mustard
1 medium onion
3/4-1 lb ground turkey
1 1/2 tablespoons all-purpose flour
2 tablespoons Worcestershire sauce
1 1/2 teaspoons finely chopped fresh sage
1 (10 ounce) package frozen peas and carrots

Steps:

  • Boil potatoes until tender enough to mash. Add milk and 1/2 cup of the chicken broth, mustard, and mash together. Add salt and pepper to taste.
  • Preheat over to 350.
  • Spray nonstick skillet with cooking spray (or small amount of oil). Add the onion and garlic and cook until soft. Add the ground turkey and cook until browned.
  • Sprinkle flour over the turkey mixture. Stir well and cook until flour is absorbed (about 30 seconds). Stir in worcestershire sauce, sage, salt and pepper.
  • Stir in 3/4 cup chicken broth. Turn down heat to simmer and cook until the sauce bubbles and thickens.
  • Stir in peas and carrots. Pour the mixture into 9-inch square baking dish. Spoon the mashed potatoes over the turkey mixture.
  • Place on a rimmed baking sheet and place in oven for about 40 minutes.
  • Let stand about 5 minutes before serving.

1/4 cup nonfat sour cream
1 tablespoon reduced-calorie margarine
1/8 teaspoon table salt
2 teaspoons olive oil
1 cup onion (chopped)
2 medium carrots (diced)
2 medium celery ribs, diced
1 lb uncooked ground turkey breast
3 tablespoons all-purpose flour
1 tablespoon fresh rosemary, chopped or 1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon table salt
1/4 teaspoon black pepper
2 cups canned chicken broth or 2 cups beef broth

Steps:

  • Preheat oven to 400ºF.
  • Place potatoes in a large saucepan and pour in enough water to cover potatoes. Set pan over high heat and bring to a boil; reduce heat to medium and simmer 10 minutes, until potatoes are fork-tender. Drain potatoes, transfer to a large bowl and add sour cream and margarine; mash until smooth, season to taste with salt and set aside.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add onion, carrots and celery; cook until soft, about 3 minutes. Add turkey and cook until browned, breaking up the meat as it cooks, about 5 minutes. Add flour, rosemary, thyme, salt and pepper; stir to coat. Add broth and bring to a simmer; simmer until mixture thickens, about 3 minutes.
  • Transfer turkey mixture to a 9-inch, deep-dish pie plate. Spread mashed potatoes over top and using the back of a spoon, make decorative swirls over the top. Bake until potatoes are golden, about 30 minutes. Slice into 6 pieces and serve.

This is a great recipe for a cold day. I got this off of weight watchers website. I am not a big fan of rosemary, but it makes this recipe extra delicious. I personally did not make my own mashed potatoes, instead I used instant. Enjoy!

1/4 cup fat free sour cream
1 tablespoon reduced-calorie margarine
1/8 teaspoon table salt (to taste)

2 medium celery ribs, chopped
1 lb ground round or 1 lb turkey
3 tablespoons all-purpose flour
1 tablespoon rosemary, fresh
1 teaspoon dried thyme
salt & pepper

Steps:

  • Preheat oven to 400.
  • Place potatoes in large saucepan and pour in enough water to cover potatoes. Set pan over high heat and bring to a boil; reduce heat and bring to a boil; reduce heat to medium & simmer 10 minutes, until fork tender. Drain potatoes, transfer to large bowl & add sour cream and margarine; mash until smooth, season with salt for taste.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add onion,carrot, & celery; cook until soft. Add meat and cook until browned. Add flour, rosemary, thyme, salt & pepper. Stir to coat. Add broth and bring to a simmer, simmer until mixture thickens.

2 tablespoons all-purpose flour
1 cup chicken broth
1 teaspoon salt
1/4 cup water
2 cups cubed cooked chicken breasts
2 carrots, peeled, sliced and blanched
1 cup spinach leaves, chopped and cleaned
1 onion, finely chopped
1/2 cup frozen corn kernels
1/2 cup fat-free evaporated milk
1 teaspoon dried thyme
1/2 teaspoon ground marjoram
3 medium russet potatoes, cooked, peeled, and mashed
1 tablespoon grated parmesan cheese
1/4 teaspoon paprika

Steps:

  • In medium saucepan over medium heat, melt the butter. Sprinkle with 1 tablespoon of flour; cook, stirring constantly, 2 minutes.
  • Whisk in broth, salt, and water. Bring to a boil. Reduce heat and simmer, stirring constantly, until thickened, 3 to 4 minutes.
  • Preheat oven to 400 degrees F. Spray a 2-quart casserole dish with non-stick cooking spray.
  • In a large bowl, combine the chicken and remaining tablespoon of flour. Stir in the carrots, spinach, onion, corn, milk, thyme, marjoram, and sauce from pan. Transfer to the casserole dish.

Steps:

  • Preheat oven to 375°F.
  • Place potatoes in a large saucepan and pour enough water to cover potatoes. Set pan over high heat and bring to a boil; reduce heat to medium and simmer 10 minutes, until potatoes are fork-tender. Drain potatoes, transfer to a large bowl and add sour cream, margarine and milk; mash until smooth, season to taste with salt and pepper. Set aside.
  • Meanwhile, brown hamburger and onions together in sauce pan. Drain fat.
  • Add can of tomatoes (do not drain) and beef broth. Bring to a boil.
  • Add enough Wondra to cover and boil until slightly thickened. Add salt and pepper.
  • Transfer beef mixture to a casserole dish.
  • Spread green beans over the top.
  • Spread mashed potatoes over the top of green beans.
  • Bake 40 minutes.

Drain and return to saucepan. Add sour cream, butter, and 1/2 teaspoon salt and mash with potato masher or large fork until smooth.
  • Meanwhile, heat oil in large skillet over medium heat. Add carrots, celery, and onion; cook, stirring frequently, until softened, about 5 minutes. Stir in corn and garlic and cook, stirring constantly, 1 minute. Transfer to bowl. Return skillet to heat and add turkey; cook, breaking up turkey with side of wooden spoon, until cooked through, about 5 minutes. Stir in tomato paste, rosemary, thyme, pepper, and remaining 1/2 teaspoon salt and cook 2 minutes longer. Stir in carrot mixture. Stir in flour and broth and simmer until thickened, about 2 minutes.
  • Transfer turkey mixture to prepared casserole dish. Spread mashed potatoes over top, making sure to cover edges. Bake until potatoes are browned, 35–40 minutes. Cool at least 20 minutes before serving.
