SHEPHERD'S PIE RECIPE WITH BEEF OR LAMB
Steps:
- Gather the ingredients.
- Heat the oven to 400 F. Grease a 2 1/2-quart baking dish.
- In a heavy skillet , melt the butter over medium heat. Add the onion and sauté until tender.
- Add the diced beef or lamb to the skillet along with the prepared gravy, carrots, and peas . Stir to blend.
- Heat through and season with salt and pepper, to taste.
- Transfer the meat and vegetable mixture to the prepared baking dish.
- Put the mashed potatoes in a large bowl. Add the egg yolk to the mashed potatoes and beat until well blended.
- Spoon the potatoes evenly over the shepherd's pie meat and vegetables.
- Bake the shepherd's pie in the oven for about 30 minutes, or until mashed potatoes are browned and the gravy is bubbling.

- Pot Roast Layer:.
- In a large skillet over medium-high heat, saute onion in 2 tablespoons butter. Add pot roast and cook until browned. Season with salt and pepper, to taste. Set aside.
- Potato Layer:.
- Peel and slice potatoes 1/4-inch thick. Place in a saucepan, cover with cold water, and bring to a boil. Cook for approximately 15 minutes or until fork tender. Drain potatoes and transfer to a mixing bowl. Whip potatoes with an electric mixer, mixing until moderately smooth. Don't over beat them; a few lumps are nice. Add 1/2 cup heated milk, 1 stick butter, and sour cream. Season with salt and pepper, to taste. Whip again until mixed. Adjust thickness by adding more milk, if desired.
- Biscuit Layer:.
- Combine biscuit mix and 1 1/2 cups of milk. The mix should be thinner than that of normal biscuit mix but not runny.
- Spray a 9x9x2-inch pan (or any similar casserole dish) with cooking spray. Layer mashed potatoes halfway up the sides of the dish. Next, spread a layer of corn or mixed vegetables on top of the potatoes. Then add the layer of pot roast and onions with gravy. Pour the biscuit mix over the meat. Melt 4 tablespoons of butter and drizzle over top. Bake for approximately 35 to 45 minutes or until top is golden brown. Let stand for a few minutes before serving.

DOWN HOME SHEPHERD'S PIE
I am not usually a big Shepherd's Pie fan, but I came upon this recipe one year, when looking for a recipe to use leftover prime rib, and it turned out delicious! It tasted just like a good, old-fashioned down home dish!! I will make this every year after making my traditional prime rib Christmas Dinner, or anytime that I have leftover beef and mashed potatoes. It is truly a cut-above most Shepherd's Pie recipes!

SHEPHERD'S PIE
In the "old days" shepherd's pie was made with roast beef, gravy, vegetables, and mashed potatoes--the leftovers from Sunday dinner. I used to make it when I had leftover mashed potatoes, but then later I went to all the trouble of making the mashed potatoes so that we could have Shepherd's Pie. The key to the flavor is in browning the beef and carmelizing the onions to develop richness and then making a gravy with the results. Heavenly!

Steps:
- Brown the ground beef very well on medium high in a large fry pan stirring frequently.
- (Add a little vegetable oil if necessary.) Add the onion and garlic and cook until the onions are slightly browned.
- Keep an eye on this so that the mixture doesn't burn.
- Sprinkle the flour over the meat and onion mixture and stir until all the flour has been absorbed.
- Cook 2 or 3 minutes stirring frequently.
- Add water and the Worcestershire sauce and stir to dissolve browned particles stuck to the bottom of the pan.
- Let bubble on low for about five minutes.
- Add more water if it's too thick.
- Add salt and pepper to taste and possibly more Worcestershire sauce.
- Place meat mixture in the bottom of a large casserole dish.
- Put frozen peas on top of this and then the mashed potatoes.
- Bake in 350F oven for about a half hour or until bubbly.
- Let rest about 15 minutes before serving.
