SHEPHERD'S PIE FROM BIRDS EYE®
Browned ground beef, diced tomatoes, and mixed veggies are simmered on the stove, then placed in a casserole, topped with prepared mashed potatoes, and baked until golden for this easy, comfort-food classic.

Steps:
- Preheat oven to 400 degrees F.
- Brown beef in large nonstick skillet; drain fat.* Add tomatoes and Recipe Ready Mirepoix and bring to a boil over high heat. Reduce heat to low and simmer 10 minutes. Stir in parsley and salt.
- Turn mixture into 1-1/2 quart casserole dish. Evenly top with mashed potatoes.
- Bake 20 minutes or until potatoes are golden and mixture is bubbling.

BIRD'S EASY CHEESY SHEPHERD'S PIE
This is a very flavorful Shepherd's Pie. It puts a new twist on an old favorite by the addition of cream cheese and a dash of ground mace, and it's super easy to make. You can use any leftover veggies such as corn, carrots, string beans, etc. My photo was made using a shallow pan, because my deep dish pan was busy at the time. :)

Steps:
- Preheat oven to 375°F Mix potatoes, cream cheese, half of the cheddar cheese, and garlic until well blended (use microwave if necessary). Set aside.
- Brown meat, onion, Italian seasoning, and ground mace in large skillet and drain. Return meat back to pan and stir in vegetables and sour cream. Heat to warm.
- Pour meat mixture into a deep 9" pie crust. Cover with potato mixture.
- Sprinkle with remaining cheddar cheese and paprika. Bake for 25 minutes or till heated through.

- Preheat oven to 350°F.
- Heat oil in large frying pan and saute the onions until softened, then add the garlic and heat for 2 minutes.
- Raise the heat and add the ground beef. Cook quickly to brown, stirring occasionally. Once browned, add the carrots, celery, and pepper, paprika, garlic powder, worchestershire sauce, salt & pepper and cook several minutes.
- Stir in the flour, then add the stock and wine. Heat until simmering and thickened.
- Transfer the meat to a large casserole dish and cook in the oven for about 1 hour. Check the consistency from time to time and add a little more stock or wine if required. The meat mixture should be quite thick but not dry. Taste and season with more salt and pepper if required.
- While meat is cooking, make the mashed potatoes. Cook the peeled potatoes in salted water for approximately 15 - 20 min or until tender. Drain well and mash with a potato masher until smooth. Add the butter and milk. If the mixture is too dry, add milk a little at a time.
- On top of the meat mixture, spread the peas on half of the casserole and the corn on the other half (or whichever vegetables you prefer). Pipe or spread the potatoes on top of the vegetables.
- Increase the oven to 400F and cook for 15 - 20 minutes until till golden brown. You can choose to finish it off under the broiler for a few minutes for a really crisp brown topping.

- PREP OVEN AND DISH: Move oven rack to middle position and preheat to 400 degrees F. Lightly spray 9-inch deep-dish pie plate with nonstick cooking spray; set aside.
- MAKE MASHED POTATOES: Using a fork, prick each potato about 5-10 times. Place potatoes in microwave, and cook on high for 5 minutes. Turn potatoes over and cook for another 5 minutes. Cut into largest potato with knife to check for doneness.
- Cut potatoes in half, and cool for 5 minutes. Scoop out potatoes into large bowl, discarding skins. Add milk, butter, cheese, and salt and pepper to taste. Mash with potato masher until smooth, adding more milk as needed.
- MAKE FILLING: While potatoes cook and cool, add 1 tablespoon oil to large skillet over medium-high heat. Add onion and garlic and sauté until softened and fragrant, about 2 minutes. Add ground beef and cook, breaking into chunks with back of wooden spoon. Continue to cook until browned and cooked through, about 5-6 minutes.

- Place potatoes and salt in a large saucepan and fill with enough water to cover. Bring to a boil over high heat and cook 10 to 15 minutes, or until potatoes are tender.
- Drain potatoes thoroughly and return to pot. Mash potatoes until no large pieces remain. Do not over mash or they will be gummy.
