Is there anything more comforting than a bowl of homemade soup? Cook up a pot of Parker's Split Pea Soup by Ina Garten, Food Network's Barefoot Contessa.

Provided by Ina Garten

Categories     appetizer

Time 1h40m

Yield 5 to 6 servings

Number Of Ingredients 10

1 cup chopped yellow onions
2 cloves garlic, minced
1/8 cup good olive oil
1/2 teaspoon dried oregano
1-1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 cups medium-diced carrots (3 to 4 carrots)
1 cup medium-diced red boiling potatoes, unpeeled (3 small)
1 pound dried split green peas
8 cups chicken stock or water

Steps:

  • In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot.

SPLIT PEA SOUP WITH HAM

Split Pea Soup with Ham image

Split pea soup is an easy and cozy one-pot meal-and it's the perfect way to use leftover ham.

Categories     Easter     spring     winter     comfort food     dinner     main dish     soup

Time 1h40m

Yield 6-8 servings

Number Of Ingredients 13

3 tbsp. olive oil
2 c. diced ham (about 12 oz.)
1 yellow onion, chopped
3 carrots, peeled and sliced
2 celery stalks, sliced
3 garlic cloves, chopped
1 lb. dried green split peas
8 c. chicken stock
2 tsp. dried thyme
1 bay leaf, optional
1/2 tsp. salt, plus more to taste
1/2 tsp. ground black pepper, plus more to taste
Chopped fresh parsley, optional

Steps:

  • Heat a large Dutch oven or pot over medium heat. Add the olive oil and ham. Cook, stirring occasionally, until the ham pieces are golden brown, 8 to 10 minutes. Increase the heat to medium-high; add the onion, carrot, and celery and continue to cook until the vegetables are slightly softened, about 5 more minutes. Add the garlic and cook 1 more minute.
  • Meanwhile, place the split peas in a colander. Rinse them well and pick through and discard any tiny pebbles or debris.
  • Add the chicken stock, dried thyme and bay leaf, if using. Bring to a simmer, then reduce the heat to medium-low and cook, uncovered, stirring occasionally, for 1 hour and 30 minutes until the peas "split" open in the pot and are very tender. (If the pot stops simmering during cooking, increase the heat to medium until it returns to a simmer, then reduce the heat back to medium-low). Add 1/2 to 1 cup of water to reach desired consistency.
  • Season with the salt and black pepper. Serve topped with chopped parsley, if preferred.

SPLIT PEA SOUP

Split Pea Soup image

This classic yellow split pea soup has some versatility when it comes to one of the main ingredients: the ham.

Provided by Gabby Peyton

Categories     Soup & Stews

Time 3m

Number Of Ingredients 10

16 oz dried yellow split peas ((around 2 1/4 cups/ 560 mL))
2 Tbsp butter
1 cup onion (peeled and chopped)
1 cup celery (chopped)
1 cup carrots (peeled amd chopped)
2 cups leftover ham, cubed into 1-inch pieces ((or 1 meaty ham bone, or 2 ham hocks))
8 cups chicken stock
2-3 bay leaves
2 Tbsp fresh thyme
salt and pepper to taste

Steps:

  • In a large Dutch oven, melt the butter over medium heat; add the carrots, celery, onion and garlic, stirring occasionally, until the mixture has softened and golden, around 15 minutes.
  • Add the yellow split peas, bay leaves and thyme. Season with salt and pepper, cooking for about 2 minutes to impart flavours into the peas.
  • If using a ham bone, trim off any excess fat.
  • Add in the ham and chicken stock, then bring up to a boil. Cover and let simmer and medium-low, stirring occasionally, until the soup has thickened, 1.5 to 2 hours.
  • Remove bay leaves. If using ham bone or hock, remove and let cool enough to handle to remove the meat, cut it into bite-sized pieces and put it back into the soup.
  • Serve with fresh bread rolls.

SPLIT PEA SOUP

Split Pea Soup image

I love how easy it is to make split pea soup, and I never tire of it. I didn't have a ham bone, so I used ham I aleady had in my fridge in it's place. I always add a couple potatoes to every split pea soup recipe with the rest of the peas because it makes for great texture and flavor. Recipe courtesy of The Pillsbury Cookbook.
