My daughter-in-law made this for a Christmas appetizer, and it was a hit. I had to have the recipe. For having Ro*Tel® and jalapenos in it, it really isn't that hot. This recipe can also easily be cut in half.

Ingredients

2 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
2 (8 ounce) packages cream cheese, cut into cubes
1 cup heavy whipping cream
1 (8 ounce) package processed cheese food (such as Velveeta®), cut into cubes
1 (8 ounce) package frozen chopped spinach, thawed and drained
½ cup milk
½ onion, finely diced
¼ cup chopped jalapeno pepper, or to taste
4 cubes chicken bouillon

Steps:

Combine diced tomatoes with green chile peppers, cream cheese, cream, cheese food, spinach, milk, onion, jalapeno pepper, and chicken bouillon in the crock of a slow cooker.
Cook on Low, stirring regularly, until smooth, about 2 hours.

I tried for years to make the White Cheese Dip they make in the Mexican restaurants in the southern states only to never be able to figure out just what the ingredients were. Then one day I came across the secret by accident and found out it was just the simplest of ingredients. Edited to add, after doing more experimenting, I have found that not all brands of Mexican Style Cream are the same. The brand that I used in Boston which I have listed here in the ingredients has cream cheese in it and is a certain consistency that other creams may vary on. You may have to tweak it by adding a little cream cheese if the mexican style cream you are using does not list it in it's ingredients and the consistency may vary as well.

1/3 cup quesos la ricura Mexican crema (Mexican Style Cream)
2 slices of kraft white American cheese

Steps:

In a microwavable bowl pour the mexican style cream and put the 2 pieces of cheese on top.
Microwave for 30 seconds and stir, then microwave for another 30 seconds or until cheese is melted.
Serve with Tortilla chips, or on your favorite Mexican food such as in place of other cheese on Tacos or Nachos.
To make it spicy, you can add diced pickled Jalapenos.

Ingredients

1 tablespoon olive oil
1 onion (finely chopped)
2 (400 g) cannellini beans (drained, rinsed)
1 cup parmesan cheese (grated)
1 tablespoon parmesan cheese (grated extra for topping)
1/2 cup mayonnaise (whole-egg)
2 teaspoons Worcestershire sauce
Tabasco sauce (few drops or to taste)
2 tablespoons breadcrumbs (fresh)

Steps:

Preheat oven to 180C or 160C fan forced.
Heat oil in a small frying pan over medium heat and cook onions for 5 minutes until softened.
Place beans in a large bowl and mash lightly with a fork and then add onion, parmesan, mayonnaise, worcestershire and tabasco sauces and mix until combined.
Transfer to a heat proof bowl.
Combine breadcrumbs and extra parmesan and sprinkle over bean mixture.
Bake for 20 minutes until bubbling and golden.
Serve with sliced baquette and or corn chips.

Ingredients

4 1/2 teaspoons cornstarch
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground cumin
8 ounces white American cheese, shredded (about 2 cups)
Two 5-ounce cans evaporated milk
Fresh cilantro leaves, for garnish
Finely diced jalapeno, for garnish
Finely diced red onion, for garnish
Tortilla chips, for serving

Steps:

Whisk together the cornstarch, garlic powder, onion powder and cumin in a medium saucepan. Add the cheese and whisk to combine. Pour in the evaporated milk and whisk to combine. Set over medium-low heat and cook, whisking constantly, until the cheese is melted and the mixture is thick enough to coat the back of a spoon, about 5 minutes.
Transfer the queso dip to a warm serving dish. Top with cilantro, jalapeno and red onions. Serve with tortilla chips.
