SAUTEED GREEN BEANS WITH SHALLOTS AND GARLIC
Crisp-tender green beans are elevated with sweet sauteed shallots and a bit of garlic.

Steps:
- Bring a medium saucepot of salted water to a boil. Add the green beans and cook until crisp-tender, about 4 minutes. Drain and rinse under cold water until the beans are cool. Drain well.
- Heat the olive oil in a large skillet over medium heat. Add the shallot and cook, stirring occasionally, until lightly browned and tender, about 2 minutes. Add the green beans and garlic and increase the heat to medium-high. Cook, stirring occasionally, until the garlic has softened and the beans are heated through, about 4 minutes. Season with salt and pepper.

- Place green beans in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 8-10 minutes or until crisp-tender., Meanwhile, in a large skillet saute shallot in butter until tender. Add the garlic, sugar, lemon juice, salt, parsley and pepper; cook 2 minutes longer. Stir in beans and tomatoes; heat through. Sprinkle with basil.

This is a very simple side dish, that has lots of flavor. I like to serve it in the fall in winter because it seems light and fresh and still well-balanced with creamy sides. I made it up all on my own ;-)

Steps:
- Peel and slice the shallots thinly.
- Heat a sauce pan over medium heat and put the olive oil and shallots in the pan.
- Saute the shallots until caramelized, maybe 20 minutes.
- You can prepare this far ahead of time.
- Take the stems off the beans but otherwise leave whole.
- Steam them briefly until just tender but still crisp.
- Toss the beans with the shallots and oil and season with salt and serve.

- Bring a medium pot of cold water to a boil over high heat and salt it generously. Trim the stem end off the green beans. Peel and finely chop the shallot.
- Drop the green beans into the boiling water and cook, uncovered, until crisp-tender, about 4 minutes. Drain in a colander set in the sink and rinse with very cold water until cool. Drain well and pat dry with paper towels. (The vegetables can be prepared up to this point, up to 4 hours ahead.)
- Heat the olive oil in a large skillet over medium heat. Add the shallot and cook, stirring occasionally, until the shallot is just golden, about 2 minutes. Add the green beans, increase the heat to high, and cook, stirring occasionally, until the beans are heated through, about 4 minutes. Season with the 1/2 teaspoon salt and some pepper and serve immediately.

- Blanch the string beans in a large pot of boiling salted water for 1-1/2 minutes only.
- Drain immediately and immerse in a bowl of ice water.
- Heat the butter and oil in a very large saute pan or large pot(12" diameter) and saute the shallots with crrushed red pepper flakes, if using, on medium heat for 5-10 minutes, tossing occasionally, until lightly browned.
- Drain the string beans and add to the shallots with 1/2 teaspoon salt and the pepper, tossing well.
- Heat only until the beans are hot.
- *If you are using regular string beans, blanch them for about 3 minutes, until they're crisp-tender.

- In a small skillet, melt 1/4 cup butter with olive oil over medium heat.
- Add shallots and cook for 7-9 minutes over low heat, stirring occasionally, until tender.
- Stir in remaining butter, salt and pepper and remove from heat.

- Bring 6-7 quarts of water to a boil in a large, deep pot. When at a rolling boil, add two pinches of salt.
- Carefully add the washed and trimmed green beans.
- Stir gently for 30-45 seconds, or until the beans turn a bright green color. The ideas is not only to blanch them, but to partially cook them.
- After 30-45 seconds have passed, drain beans into colander. Toss beans to remove any excess water and leave to drain.
- Melt butter over low heat. When foaming subsides, add olive oil. Add the shallots in handfuls, separating the layers while sprinkling into the pan.
- Allow the shallot to cook over medium heat until it becomes slightly translucent.
- Add beans, boost heat to medium high. Toss the beans with the butter and oil until all are coated.
- Continue to toss the beans every few minutes, or until they are cooked through and a little browned. Add salt and pepper to taste.

- Combine vinegar and shallots in heavy small saucepan. Boil over medium heat until most vinegar is absorbed (about 1 tablespoon liquid should remain in pan), stirring frequently, about 6 minutes. Transfer mixture to small bowl; cool completely. Add butter; mix with fork until blended.
- Cook beans in large pot of boiling salted water until crisp-tender, about 6 minutes. Drain. Refresh under cold water; drain. Pat dry with paper towels. (Balsamic-shallot butter and beans can be made 1 day ahead. Cover separately; chill.)

Personally, I recommend revising the original 2 tablespoons butter to 1 tablespoon butter and 1 tablespoon olive oil. Note: the purple shallots generally available are "large" shallots, and 2 small shallots equal 1 large shallot, but the large shallot will be stronger. Old French recipes generally refer to small shallots.

- Wash beans in cold water. Trim ends of beans, either using a sharp knife or snap them off.
- Heat a large skillet over medium heat and add butter and olive oil. Add shallots and saute for 30 seconds.
- Add beans, sprinkle with thyme, salt, and pepper, and cover. Cook for 3-4 minutes, shaking pan once in a while to prevent them from burning or sticking. Check to see if tender: if not, recover and cook until desired doneness. (They should still have snap, but rawness should be cooked out.).
