1 cup coconut
1 (8 ounce) bag chocolate chips

1 cup pecans
1 (14 ounce) can sweetened condensed milk

Steps:

  • Melt margarine in 9 x 13 inch pan.
  • Sprinkle graham cracker crumbs over margarine.
  • Sprinkle coconut, chocolate chips, butterscotch morsels and pecans in that order.
  • Pour sweetened condensed milk over this mixture.
  • Bake at 350° for 30 minutes.
  • Cool and slice into squares.

Steps:

  • Preheat oven to 350 degrees F (325 degrees F for glass baking pan). In small bowl, combine graham cracker crumbs and butter; mix well. Press crumb mixture firmly on bottom of 13x9-inch baking pan.
  • Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with remaining ingredients; press down firmly with fork.
  • Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars or diamonds. Store covered at room temperature.

We inherited numerous recipes from my Memaw. After going through them I found this one and just had to make it! I was never a fan of butterscotch until I got pregnant. Now I can't get enough of it and these cookies are perfect. Very easy to throw together and a crowd pleaser!

1 stick butter, melted
1 1/2 c graham crackers, crushed
12 oz butterscotch chips
12 oz chocolate chips
1 c walnuts, chopped
1 c coconut,shredded
1 can(s) sweetened condensed milk

Steps:

  • 1. Preheat oven to 350 degrees. Line 9x13 inch pan with release foil. In small bowl melt butter and pour into pan. Either crush graham crackers in food processor or in a bag using a rolling pin. Sprinkle over butter in an even layer.
  • 2. Add butterscotch and chocolate chips, nuts, shredded coconut, and sweetened condensed milk, again in even layers.
  • 3. Bake for 20 minutes until lightly browned and caramelized around the edges. Let cool slightly, carefully lifting cookies out of pan with foil and score it. Allow to cool completely before enjoying a few with a glass of milk!

These are just like the cookies(aka rainbow cookies, italian ribbon cookies) you get at NYC bakeries. Your patience and time will be well rewarded. The list of ingredints is for EACH layer. You have to prepare each layer seperately so they bake even. Bon appetit! USE 11x17 PANS TO ASSURE SUCCESSFUL BAKING! The 1st person to review these used 11x7 brownie pans that were way too small. The 11x17 are perfect for these cookies. Don't use smaller pans. Enjoy!

1 cup all-purpose flour
1/2 tablespoon baking powder
1/2 teaspoon salt
1 cup sugar
1 cup butter, room temperature
4 eggs, room temperature
3 teaspoons almond extract
10 -12 drops red food coloring, for each layer
10 -12 drops yellow food coloring, for each layer
10 -12 drops green food coloring, for each layer
2 (15 ounce) jars seedless raspberry jam
2 (12 ounce) packages semi-sweet chocolate chips
2 teaspoons vegetable oil

Steps:

  • You must repeat this 3 times. Once for each layer.
  • Sift flour, salt and baking powder togerther and set aside.
  • Cream the butter and sugar in a stand mixer until the mix lightens in color and is fluffy, about 3 minutes.
  • Add the eggs one at a time and beat about 1 minute for each egg, add in the almond extract.
  • With the mixer on low, add in the flour mixture and mix until just combined, add whichever food coloring your using as it mixes.
  • Coat an 11x17 pan with non stick baking spray and pour mixture into pan. It will take some effort to spread evenly. TIP: If it does not spread evenly, spread the mixture as evenly as you can. Then put in the hot oven for about 45 seconds. Then jiggle the pan gently to get the batter even.
  • Bake for 10 minutes at 350 or until done.
  • CAREFULLY flip the red layer onto wax paper and let cool. If you have more than one of these pans, leave the red layer in the pan and repeat the above listed steps, first with the yellow layer. While that layer is baking, carefully spread the red layer evenly with the raspberry jam. Then CAREFULLY flip the yellow layer on top of the red layer you just coated with the raspberry jam. Now for the last layer, the green one. Repeat the above listed baking steps and coat the yellow layer with the Other jar of jam. Once the green layer is done, fip on top of the yellow layer you coated with the raspberry jam. You now have 5 layers. Hard parts over -- sort of. now you must weigh down the cookies. To do this, cover the cookies with wax paper and take eithier another 11x17 pan or something of equal size like a cutting board and place on top of the cookies. You don't have to put very heavy weight on them anything handy that won't slip off. You're just trying to condense the layers a bit. Place in the fridge for 3 hours.
  • Remove the cookies from the fridge and remove the weight and wax paper.
  • Put the 1st bag of chocolate chips into a small sauce pan with the oil on a low light and melt until even. When done, spread unto top of cookies. Let harden at room temp, at least 3 hours. CAREFULLY flip the cookies and repeat on the other side with the other bag of chocolate chips. Let cool at room temperature.
  • When the chocolate rehardens, Take a long carving knife and cut into small squares. Then put them in the fridge in an airtight container. Enjoy!

Steps:

  • Preheat oven to 350ºF. Lightly grease a 11 x 7 baking pan.
  • Stir together melted butter and graham cracker crumbs. Press into prepared pan.
  • Add the other ingredients in order: coconut, chocolate chips, and butterscotch chips. Pour sweetened condensed milk over the top. Add the pecans.
  • Bake for 25 minutes. Remove from the oven and cool on a wire rack. Place pan in the refrigerator and serve cold.

3 large avocados
1/2 lemon, juiced
1 teaspoon salt

2 cups ricotta cheese
1 medium bunch cilantro, cleaned and chopped
1 medium bunch parsley, cleaned and chopped
6 green onions, green part only, chopped
1 1/2 to 2 cups light sour cream
1 tablespoon taco seasoning
1 pint cherry tomatoes, quartered
1 can black olives, sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon red pepper flakes, optional
Squeeze fresh lime juice
Cilantro sprig, garnish

Steps:

  • Place beans into a food processor with green onion (if using). Run until smooth. Spread evenly on the bottom of a deep glass 3-quart baking dish.
  • Rinse food processor. Add avocado, salt, lemon juice and chopped jalapeno (if using). Run until smooth. Spread over the bean layer. Sprinkle the drained, chopped red peppers over the avocado layer. Spread the ricotta over the pepper layer, and smooth to make an even layer.
  • Clean and chop the cilantro, parsley and tops of the green onions together. Then place on top of the cheese layer and smooth the top. In a small bowl mix the sour cream and taco seasoning. Then gently smooth over the herb layer. Quarter cherry tomatoes, and slice black olives and loosely sprinkle over sour cream mixture. Season with salt, pepper and chili flakes (if using). Squeeze a little lime and top with a cilantro sprig.

1 lb butter, room temp
6 teaspoons almond extract
2 cups flour
2 cups sugar
1 tablespoon baking powder
red, yellow and green food coloring
2 lbs dark chocolate, divided
1 (18 ounce) jar apricot preserves or 1 (18 ounce) jar seedless raspberry jam (or 1 smaller jar of each)
Pam cooking spray
1 (6 ounce) jar chocolate sprinkles

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl beat eggs.
  • Beat in the butter, almond extract, and flour.
  • Mix in the sugar and baking powder.
  • Divide into 3 bowls.
  • In one bowl add the red food coloring.
  • In one bowl add the yellow food coloring In the last bowl add the green food coloring.
  • Spray a 12x18 inch pan with pam-bottom and sides.
  • Spread red mixture in pan first.
  • Bake for 10 minutes or until done.
  • To remove from pan place parchment paper on top and flip onto a hard surface.
  • Spread with half the preserves.
  • Repeat baking process with yellow batter.
  • Flip onto red jam layer.
  • Repeat with jam on yellow layer.
  • Repeat baking process with green batter.
  • Place green layer on top.
  • Melt chocolate in top of a double boiler.
  • Spread a even thick layer on top.
  • Place in fridge to harden-this shouldnt take more than 15-20 minutes tops.
  • Once hard remove and flip onto a hard surface and spread remaining chocolate on top and sides of product.
  • Cover top with sprinkles.

  • With a hot knife cut into small cubes and serve.

To make sure they're vibrant, purchase gel food colorings from a kitchen or craft store -- the liquid drops from the supermarket won't be able to produce the deep red and green this cookie requires.

4 sticks (1 pound) unsalted butter, at room temperature
1 1/2 cups confectioners' sugar
1 pound (two 8-ounce cans) almond paste
8 large eggs
1 tablespoon vanilla extract
2 1/2 cups all-purpose flour
Red and green gel food coloring
1/3 cup raspberry jam
1/3 cup apricot jam
1 cup chocolate chips
2 tablespoons light corn syrup
1 tablespoon canola oil or shortening

Steps:

  • Preheat the oven to 325 degrees F. Line three 13-by-9-inch baking pans with either parchment paper or greased aluminum foil.
  • In a food processor, pulse together the butter, confectioners' sugar and almond paste until pale yellow and fluffy. Continue to pulse while adding the eggs one at a time, then the vanilla extract. Add the flour and process until a smooth dough forms, stopping occasionally to scrape the sides and corners of the bowl.
  • Remove the dough and divide into 3 even pieces. Place one piece back into the processor with a dab of red gel food coloring, and pulse until combined. Repeat with another piece and a dab of green food coloring.
  • Spread the red, green and plain doughs in the prepared baking pans, and bake until light and springy to the touch, about 15 minutes. Allow to cool completely in their pans, about 1 hour.
  • Remove the cookie layers from their pans, reserving 1 pan to use as a mold. Place the apricot and raspberry jams in separate bowls or mugs and microwave until loose, about 1 minute. In another bowl, toss the chocolate chips with the corn syrup and oil and microwave in 30-second spurts, stirring with a fork in between, until a shiny glaze is formed.
  • Place the green layer in the pan, then spread a thin layer of raspberry jam over it. Next, add the white layer, then repeat the process with the apricot jam. Top with the red layer, then spread the chocolate glaze across the top. Place in the refrigerator until the chocolate hardens, then wrap in plastic and allow to set for another hour, refrigerated.
  • Place a cutting board on top of the pan, invert it, and unmold the cookies. Using a sharp knife, cut the cookies lengthwise into 4 long pieces, then cut across in 1/2-inch intervals. These keep, well-wrapped at room temperature, 5 days.

4 ears fresh yellow or white corn, kernels cut from the cobs (or 4 cups canned or frozen and thawed corn kernels)

1/4 cup (10 grams) chopped fresh cilantro
1 red Fresno chile (20 grams), seeded and finely diced
1 lime, juiced
1 small red onion (or 1/2 large; 175 grams), finely chopped
Refried Beans, recipe follows (or store-bought is fine)
Guacamole, recipe follows (or store-bought is fine)
1 pint (454 grams) sour cream
1 teaspoon ground coriander
1 teaspoon smoked paprika
5 ounces (from a 10-ounce wheel) Cotija, crumbled
4 red radishes (50 grams), thinly sliced
4 green onions (28 grams), dark and light green parts only, sliced
Hot sauce, optional
One 17-ounce bag lime-flavored tortilla chips
1 1/2 tablespoons (20 grams) olive oil
1 small yellow onion (97 grams), roughly chopped
2 cloves garlic (8 grams), roughly chopped
2 teaspoons kosher salt, plus more as needed
Two 15.5-ounce/465-gram cans pinto beans, drained and rinsed
One 4-ounce/117-gram can diced green chiles (mild, medium or hot-your choice!)
2 chipotle peppers in adobo (52 grams) with 1 tablespoon sauce (from a 7-ounce can)
1 1/4 cups (287 grams) low-sodium chicken broth, plus more as needed
4 large avocados, halved, peeled and pitted
1/2 cup (20 grams) cilantro leaves and tender stems, finely chopped
Zest of 1 large lime, plus the juice of 2 limes (40 grams)
1 teaspoon kosher salt, plus more to taste

Steps:

  • To make the roasted corn salsa: Heat 1 tablespoon olive oil in a 12-inch cast-iron skillet over medium-high heat. Add the corn kernels and stir to coat in the oil. Season with salt. Cook until the corn kernels are browned and blistered, 6 to 8 minutes. Remove from the heat and pour into a bowl. While still hot, add the cilantro, chile, lime juice, onion and the remaining tablespoon olive oil. Stir to combine. Season with salt, if needed, and a couple turns of black pepper. Allow to cool to room temperature.
  • Spread the Refried Beans on the bottom of a 9-by-13-inch baking dish in an even layer.
  • Carefully spread the Guacamole in an even layer over the beans.
  • Mix together in a medium bowl the sour cream, coriander, smoked paprika and 1 teaspoon salt until thoroughly combined. Carefully spread the sour cream on top of the layer of Guacamole.
  • To complete the remaining layers, sprinkle the Cotija evenly over the corn salsa. Top the Cotija with the radishes. Sprinkle the green onions on top. Drizzle with hot sauce, if desired. Serve with the limey tortilla chips.
  • Heat the oil in a 12-inch cast-iron pan over medium heat. Add the onion and garlic. Season with 1 teaspoon salt. Cook until the garlic and onion are softened and fragrant, about 5 minutes. Add the beans, green chiles, chipotles and sauce. Season with the remaining teaspoon salt. Stir to combine until the beans are coated, then cook for 2 minutes. Add the chicken broth and stir to incorporate. Increase the heat to medium-high. Bring to a boil and reduce to a simmer. Simmer until the chicken broth is slightly reduced and thickened to a gravy, 10 to 12 minutes. Turn off the heat and transfer the beans to a food processor with a blade attachment or to a high-speed blender. Puree until smooth. Season with salt.
  • In a large bowl, add the avocados, cilantro, lime zest and juice and salt. Mash until smooth but still slightly chunky.

3 1/4 cups (450 grams) all-purpose flour
3/4 cup (65 grams) unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
3/4 cup (170 grams) brewed coffee
3/4 cup (170 grams) warm water
8 ounces dark chocolate, chopped
2 cups heavy cream
1/2 teaspoon pure vanilla extract
Pinch kosher salt
2 cups confectioners' sugar
1 cup hot fudge topping, such as Hershey's

  • For the cake: Preheat the oven to 350 degrees F. Grease three 8-inch-round cake pans with butter and line with parchment paper.
  • Place the sugar and oil in the bowl of a stand mixer fitted with the whisk attachment and beat on medium speed until combined. Add the eggs, one by one, until completely incorporated. Add the vanilla extract and buttermilk and continue mixing until combined.
  • Sift the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Mix together the coffee and warm water. Alternate adding the dry ingredients and the coffee mixture into the bowl of the stand mixer, beginning and ending with the dry ingredients. Mix until you don't see any lumps and a thin batter has formed.
  • Divide the batter evenly among the prepared pans and bake until a toothpick inserted in the middle of each cake comes out clean, 30 to 35 minutes. Transfer the pans to a wire rack and allow to cool for 10 minutes. Remove the cakes from the pans and set on the wire rack to cool completely, about 1 hour.
  • For the dark chocolate mousse: Place the dark chocolate in a large bowl and set aside. Pour 1 cup of the heavy cream into a small saucepan and bring to a boil over medium-high heat. Pour the cream over the chocolate, cover the bowl with a kitchen towel and let sit for 3 minutes.
  • Remove the towel and slowly whisk the ganache until it's smooth and shiny. Set aside to cool to about room temperature.
  • Meanwhile, whip the remaining cup of heavy cream to stiff peaks in the bowl of a stand mixer fitted with the whisk attachment, or by hand. Using a rubber spatula, fold one-fourth of the whipped cream into the cooled ganache to lighten the consistency, then fold that mixture into the remaining whipped cream until almost completely combined with just a few streaks. Add the vanilla and salt and gently fold until combined into a light, fluffy mousse.
  • For the chocolate fudge buttercream frosting: Place the sugar, hot fudge, cocoa powder, butter, milk, vanilla extract and salt in the bowl of a stand mixer fitted with the paddle attachment and beat on low speed to combine. When the sugar is incorporated, increase the speed to medium and beat until the buttercream is smooth and satiny, 8 to 10 minutes.
  • For the chocolate royal icing: Place the confectioners' sugar, cocoa powder, meringue powder and water in the bowl of a stand mixer fitted with the whisk attachment and whip on low speed to combine. Increase the speed to medium-high and whip until the icing holds stiff peaks, 5 to 8 minutes. If it seems too soft, add more confectioners' sugar in 1 tablespoon increments. If it is too stiff, add a bit more water, drop by drop. Transfer to a piping bag fitted with a medium star tip.
  • For the white chocolate ganache: Place the white chocolate in a medium bowl and set aside. Pour the cream into a small saucepan and bring to a boil over medium-high heat. Pour the cream over the chocolate, cover the bowl with a kitchen towel and let sit for 3 minutes.
  • Remove the towel and slowly whisk the ganache until it's smooth and shiny. Set aside to cool to about room temperature, then transfer to a piping bag fitted with a medium star tip.
  • To assemble, level the tops of the cakes with a serrated knife or cake leveler. Spread half of the mousse over the top of one cake layer. Stack the second layer and repeat. Add the third cake layer and frost the top and sides with a thin coat of the buttercream. Refrigerate until the frosting is firm, 20 to 30 minutes.
  • When the cake is ready, frost the top and sides with a thicker layer of the buttercream and refrigerate again until very firm, about 1 hour.
