Ingredients

1 cup sprouted wheat flour
1/2 cup raw sesame seeds
1/4 cup whole wheat flour ((or white wheat flour))
1 tsp sea salt
1/4 tsp turmeric powder
2 TB sesame oil ((regular))
2 TB sesame oil ((toasted))
6 TB water

Steps:

Mix all dry ingredients (except sesame seeds) in a mixing bowl.
In a skillet, toast sesame seeds over medium-high heat, stirring constantly. Heat until sesame seeds are golden brown.
Pour sesame seeds into dry ingredients. Mix well. Add oil and water.
Stir until dough clings together. Knead into a ball if needed.
Press out dough on a cookie sheet. Cover with waxed paper and roll until thin. Cut into sticks of desired size.
Bake sesame sticks at 425 degrees F until crispy and golden, probably about 15-20min.
Cool and then package into snack bags for quick snacks.

STICKY POTATO WEDGES WITH SESAME & LEMON

These homemade wedges flavoured with oregano, garlic, lemon and sesame are great served as a side dish or for dunking with dips

Ingredients

1kg red-skinned potato , such as Desirée, skins left on and cut into wedges
2 tbsp olive oil
1 tsp dried oregano
1 tsp garlic granules (we used Bart)
juice 2 lemons
150ml vegetable or chicken stock
2 tbsp sesame seed

Steps:

Heat oven to 200C/180C fan/gas 6. Put the wedges in a single layer in a roasting tin. Whisk together the olive oil, oregano, garlic granules, lemon juice and stock. Pour the liquid over the potatoes, ensuring they are well coated. Season and bake for 1 hr, stirring every 15 mins so they don't stick to the tin.
Add the sesame seeds, increase the heat to 220C/200C fan/gas 7, and bake for a further 10 mins.

2 large yams
1/2 cup sesame seeds
1 tablespoon corn or 1 tablespoon sesame oil

Steps:

Boil or bake yams until soft but not mushy.
Let cool or refrigerate overnight.
Peel and cut yams into pieces about 2” x 1/2” x 1/2”.
Roll yam sticks in sesame seeds, pressing to make seeds stick.
Sauté in oil for one minute on each side, drain and cool.
Serve cool or broil briefly to crisp sticks and serve hot.
