1/4 cup sesame oil
1 Tbsp. ground red pepper (cayenne)
2 tsp. ground ginger
2 lb. chicken wings, split at joints, tips removed
1/2 cup KRAFT Original Barbecue Sauce
1/4 cup Buffalo wing sauce
1 green onion, sliced

Steps:

  • Mix first 3 ingredients until blended; pour over wings in shallow dish. Stir to evenly coat wings. Refrigerate 30 min. to marinate, turning after 15 min.
  • Heat grill to medium-high heat. Remove wings from marinade; discard marinade. Grill wings 15 min., turning occasionally. Combine barbecue sauce and wing sauce; brush half onto wings. Continue grilling 4 to 5 min. or until wings are done, turning and brushing frequently with remaining sauce mixture.
  • Place wings on platter; sprinkle with onions.

2 pounds chicken wings
½ cup honey
⅔ cup prepared mustard
½ lemon, juiced
1 teaspoon curry powder
3 cloves crushed garlic
ground black pepper to taste
½ cup sesame seeds

Steps:

  • Combine honey, mustard , lemon juice, curry powder, garlic, and pepper in a resealable plastic bag. Add chicken wings, and marinate at least 1 hour in refrigerator.
  • Meanwhile, toast sesame seeds by placing on a cookie sheet in a 350 degree F (175 degrees C) oven for approximately 10 to 15 minutes, shaking to toss occasionally.
  • Remove wings from marinade. Broil for 5 to 10 minutes on each side, or until well cooked. Baste with marinade every few minutes. Remove from oven, and sprinkle liberally with the sesame seeds.

1 cup grapefruit juice
1/4 cup hoisin sauce
1/4 cup ketchup
1/4 cup rice wine vinegar
1/4 cup light brown sugar
2 fresh red chiles, halved
5 garlic cloves, halved
2-inch piece fresh ginger, whacked open with the flat side of a knife
2 dozen chicken wings, about 31/4 pounds, rinsed and patted dry
Sea salt and freshly ground black pepper
1 tablespoon sesame seeds, toasted, for garnish
1/2 bunch fresh cilantro, chopped, for garnish

Steps:

  • Prepare the teriyaki sauce by combining the soy sauce, grapefruit juice, hoisin sauce, ketchup, rice wine vinegar, brown sugar, chiles, garlic, and ginger in a pot. Bring to a slow boil and cook, stirring, until thickened, about 20 minutes.
  • Preheat the oven to 400 degrees F.
  • Season the chicken wings generously with salt and pepper. Lay the chicken wings in a single layer on a sheet pan. Bake for 20 minutes or until the skin gets crispy. With tongs, dip the wings in the teriyaki sauce and return to the oven for 10 to 15 minutes to glaze. An impressive presentation is to serve these chicken wings family style; arrange them on a large platter, pour the remaining sauce over them and sprinkle with sesame seeds and cilantro. Don't forget the wet naps!

1 fresh red chilli
2 spring onions

Steps:

  • Toast the sesame seeds in a dry 20cm non-stick frying pan on a medium heat until lightly golden, then remove to a plate.
  • Still on the heat, sit the wings in the pan - they should fit snugly. Let them colour for 1 minute on each side, then add the teriyaki and just cover the wings with water.
  • Halve the chilli lengthways and add to the pan. Simmer for 35 to 40 minutes, or until the chicken is tender and the sauce is nice and sticky, turning occasionally.
  • Add a splash of red wine vinegar to the pan and jiggle around to pick up the gnarly bits.
  • Trim and finely slice the spring onions, scatter them over the chicken with the toasted sesame seeds, and get stuck in.

Steps:

  • Combine the honey, soy sauce, oil, vinegar, ginger, sesame oil, garlic, coriander, scallion, and red pepper in a small saucepan and bring to a simmer. Remove from the heat and cool to room temperature.
  • Cut the wing tips off the chicken wings and discard. Separate the wings into two pieces at the joint. Season with salt and pepper. Put the wings in a shallow baking dish, and cover with the sauce. Cover with plastic wrap and marinate the wings in the refrigerator for at least 4 hours or overnight.
  • Preheat the oven to 375 degrees F. Strain the wings from the marinade, reserving the marinade. Spread the wings out on a foil-lined baking pan. Bake the wings, basting with the marinade every 10 minutes during the first 30 minutes of cooking. (Discard any excess marinade.) Continue to bake until the wings are browned and cooked through, about 15 to 20 minutes more. Serve immediately.

4 tablespoons soy sauce
2 tablespoons Kecap Manis ((Sweet Soy Sauce))

1-2 tablespoons (extra) honey

  • Preheat oven to grill/broil settings on high heat (or 200c | 400f).
  • Wash and rinse chicken wings and pat dry. Cut the skin off of the wing drumettes, and leave it on for the wingettes (if you want to cut out the extra fat).
  • In a large shallow dish, whisk together the soy sauce, Kecap Manis, honey, sesame oil and garlic. Add the chicken and mix into the sauce to coat. Refrigerate to marinade for 1-2 hours (or overnight for a stronger flavour).

  • For the garnish: Place the wings on a platter and sprinkle over the chopped parsley. Serve with a bowl of ranch dressing for dipping.

  • In a large zippy bag, add all the ingredients listed in the marinade section, close the bag and squish it around until it's all incorporated. Add the chicken wings, close the bag and shake around until all the wings are coated with the marinade. Place the bag in the refrigerator for at least 4 hours and up to overnight.
  • When you are ready to cook your wings, remove them from the refrigerator and place them on a cookie sheet. With paper towels, pat them dry. I mean, really dry them off. If you skip this step, the skin won't crisp up. So it doesn't even hurt to pat them dry and then leave them out for a 1/2 hour or so while your grill warms up.
  • To make the glaze, in a medium-sized bowl, whisk together the honey, sesame, ginger, garlic, and tamari (soy). Set aside.
  • Cooking 2 ways:If you want to smoke the wings, preheat the smoker to 225 degrees. Place the wings on the smoker and smoke for 1 hour. Remove the wings and place on a cookie sheet and turn your smoker (or another grill) to high heat. Baste the wings with the glaze and place on the hot grill. Cook for 5 minutes and then flip the wings over and cook for another 5 minutes or until they are golden brown and delicious. Remove from the heat and toss the wings in the additional glaze and serve. If you are grilling the wings, turn your grill up to a medium-high temperature. Baste the wings with the glaze and place on the grill. Cook the wings for about 10 minutes and flip them over. Baste them again and cook for another 10-15 minutes or until the internal temperature reaches 165 degrees. When done, remove from the grill and toss with the remaining glaze.
