- Combine honey, mustard , lemon juice, curry powder, garlic, and pepper in a resealable plastic bag. Add chicken wings, and marinate at least 1 hour in refrigerator.
- Meanwhile, toast sesame seeds by placing on a cookie sheet in a 350 degree F (175 degrees C) oven for approximately 10 to 15 minutes, shaking to toss occasionally.
- Remove wings from marinade. Broil for 5 to 10 minutes on each side, or until well cooked. Baste with marinade every few minutes. Remove from oven, and sprinkle liberally with the sesame seeds.

TERIYAKI CHICKEN WINGS WITH SESAME AND CILANTRO

- Prepare the teriyaki sauce by combining the soy sauce, grapefruit juice, hoisin sauce, ketchup, rice wine vinegar, brown sugar, chiles, garlic, and ginger in a pot. Bring to a slow boil and cook, stirring, until thickened, about 20 minutes.
- Preheat the oven to 400 degrees F.
- Season the chicken wings generously with salt and pepper. Lay the chicken wings in a single layer on a sheet pan. Bake for 20 minutes or until the skin gets crispy. With tongs, dip the wings in the teriyaki sauce and return to the oven for 10 to 15 minutes to glaze. An impressive presentation is to serve these chicken wings family style; arrange them on a large platter, pour the remaining sauce over them and sprinkle with sesame seeds and cilantro. - Toast the sesame seeds in a dry 20cm non-stick frying pan on a medium heat until lightly golden, then remove to a plate.
- Still on the heat, sit the wings in the pan - they should fit snugly. Let them colour for 1 minute on each side, then add the teriyaki and just cover the wings with water.
- Halve the chilli lengthways and add to the pan. Simmer for 35 to 40 minutes, or until the chicken is tender and the sauce is nice and sticky, turning occasionally.
- Add a splash of red wine vinegar to the pan and jiggle around to pick up the gnarly bits.
- Trim and finely slice the spring onions, scatter them over the chicken with the toasted sesame seeds, and get stuck in.

- Combine the honey, soy sauce, oil, vinegar, ginger, sesame oil, garlic, coriander, scallion, and red pepper in a small saucepan and bring to a simmer. Remove from the heat and cool to room temperature.
- Cut the wing tips off the chicken wings and discard. Separate the wings into two pieces at the joint. Season with salt and pepper. Put the wings in a shallow baking dish, and cover with the sauce. - In a blender or food processor, combine the soy sauce, honey, vinegar, sesame oil, garlic and ginger; blend until the mixture is smooth.
- Trim the tips off the wings and remove any excess skin or fat.
- Place trimmed wings in a heavy-duty zip-top plastic bag and add the mixture from the blender; marinate, refrigerated, for at least 2 hours or overnight.
- Preheat oven to 425 degrees F. and arrange wings on a rack over a baking pan.

- Preheat oven to grill/broil settings on high heat (or 200c | 400f).
- Wash and rinse chicken wings and pat dry. Cut the skin off of the wing drumettes, and leave it on for the wingettes (if you want to cut out the extra fat).
- In a large shallow dish, whisk together the soy sauce, Kecap Manis, honey, sesame oil and garlic. Add the chicken and mix into the sauce to coat. Refrigerate to marinade for 1-2 hours (or overnight for a stronger flavour).
- Remove wings from marinade and reserve liquid. Arrange chicken wings skin side up onto an oven tray lined with aluminium foil, and drizzle with a little extra honey. - For the wings: Preheat the oven to 400 degrees F. Line a sheet pan with foil, then place a metal rack on the pan.
- Pat the wings dry with kitchen paper, then sprinkle with the salt, pepper and smoked paprika on both sides. Place them on the rack, making sure they are not touching. - In a large zippy bag, add all the ingredients listed in the marinade section, close the bag and squish it around until it's all incorporated. Add the chicken wings, close the bag and shake around until all the wings are coated with the marinade. Place the bag in the refrigerator for at least 4 hours and up to overnight.
