SESAME SCONES
These scones are terrific with soups- serve with lots of butter! From an October 1985 issue of Bon Appetit in a "Soup and Bread" feature.

Steps:
- Preheat oven to 425 degrees.
- Butter baking sheet.
- Sift flour,baking powder,baking soda and salt into medium bowl.
- Cut in 1/2 cup butter until coarse meal forms.
- Make well in center of dry ingredients; add eggs,honey,sesame oil and 1/3 cup buttermilk to well and blend with fork.
- Stir into dry ingredients, adding enough buttermilk to make sticky but workable dough.
- Gently pat dough into 1-inch thick round on floured surface.
- Cut dough into 10 wedges, cutting straight down with sharp,floured knife.
- Brush each wedge lightly with glaze.
- Place sesame seeds on plate; dip glazed top of each wedge into seeds.
- Arrange sesame side up on prepared sheet, placing 1/2 inch apart.
- Bake until golden brown, 12 to 15 minutes.
- Serve hot with butter.
- Dip top of each.
CHEESE SCONES (WITH SESAME SEEDS)
These are wonderful savoury scones, which I got from 99 cents traditional british cooking cookbook. What a great invest I have to say! ;) These are very easy to make and in my opinion have a great flavour, too. Let me know what you think!

Steps:
- Preheat the oven to 220°C/425°F.
- In a big bowl mix flour, baking powder and salt. Using your finger tips work in butter until dough resembles coarse crumbs.
- Make a well in the center and add milk. Using a knife stir quickly into a smooth dough.
- Turn out onto a lightly floured surface and knead for 2 or 3 turns before rolling out (you can also just pat it down a bit).
- Using a cookie cutter or glass to cut out scones (I use a 7.5 cm glass).
- Place on a paper-lined baking sheet.
- For glaze combine melted butter with cheese and sesame seeds and spread evenly over scones.
- Bake for 10-12 minutes or until nicely browned.
- Enjoy warm or cooled.
SESAME ORANGE SCONES
The orange zest and toasted sesame seeds gives these scones a Mediterranean touch.

- 1. Heat oven to 425 degrees F. Grease baking sheet. Set aside 1 tbsp. sesame seeds and 1 tbsp. orange zest. In a large bowl, combine flour, remaining sesame seeds, orange zest, brown sugar, baking powder and salt. With a pastry blender or 2 knives, cut in shortening until mixture resembles coarse crumbs.
- 2. Reserve 1 tbsp. orange juice. Add remaining orange juice to dry ingredients and mix lightly with fork until mixture clings together and forms a soft dough.
- 3. Turn dough out onto lightly floured surface and knead gently 5 or 6 times. Divide dough in half. With lightly floured rolling pin, roll one half of dough into a 7 inch round. Cut into 4 wedges. Repeat with remaining half of dough.
- 4. Place scones, 1 inch apart, on the greased baking sheet. Pierce tops with tines of a fork. In a small saucepan, heat reserved orange juice and the granulated sugar to boiling; stir in reserved orange rind and brush over tops of scones. Sprinkle with reserved sesame seeds.
- 5. Bake scones 15-18 minutes or until golden brown. Serve warm.

- Measure the flour, brown sugar, baking powder, baking soda, salt, and sesame seeds into a medium mixing bowl. Add the coconut oil to the dry ingredients, using a pastry cutter to incorporate the coconut oil into the flour. There should still be a few pea-sized pieces of coconut oil throughout. Make a well in the center of the bowl, and set aside.
- In a small mixing bowl, use a whisk together the coconut cream and egg until no streaks of egg yolk remain. Pour this mixture into the well in the bowl of dry ingredients. Use a wooden spoon or dough whisk to the wet and dry ingredients, just until all of the flour is absorbed and the dough begins to come away from the sides of the bowl.
- Divide the dough evenly in half, then pat/shape it into two disks, 1/2-inch thick and six inches in diameter. Wrap the disks of dough with plastic wrap and refrigerate for at least 1 hour.
- Line a baking sheet with a silicone baking mat or parchment paper and preheat the oven to 350°F.

- Freeze your stick of butter into the freezer an hour in advance (or overnight). When you are ready to prep the ingredients for baking, using a box grater, grate the stick of butter into shreds. Stick it back into the freezer or refrigerator to keep the butter cold. (See notes for an alternative method)
- In a large mixing bowl, sift the dry ingredients and mix until well combined. In a separate bowl, whisk all liquid ingredients. Set the liquid ingredients aside.
- Drop the shredded butter into the dry ingredients. Using your clean hands, massage the butter into the mix. Massage into the dry ingredients until all the butter is incorporated - it should have a resemblence to a "damp sand" consistency. Be sure to work fast, as the warmth of your hands will affect the temperature of the butter. If you feel, in any way, that your butter is softening - place your mix into the freezer for 15-20 minutes to let it cool down.
- Pour the liquid ingredients into the dry butter mixture and fold (using a spatula or your hands) until it forms into a dry looking dough. The dough might look dry (or fall apart) which is completely normal. As you press the dough with your hands, it should be able to combine. Massage through until all the dough pieces are hydrated. Do not overwork.
