1 package (10 ounces) hearts of romaine salad mix
4 radishes, thinly sliced
3 green onions, thinly sliced
1 cup sliced English cucumber
1 cup fresh snow or sugar snap peas
1 cup grape tomatoes
1/4 cup minced fresh cilantro

  • Brush steak with 2 tablespoons vinaigrette; sprinkle with salt and pepper. Cook steak in a large skillet coated with cooking spray over medium-high heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). The original was topped with shrimp, but his version uses scallops, "a slightly more unusual and elegant combination," but don't feel tied to just scallops: any grilled meat, poultry or fish work just as well here.

1 1/4 to 1 1/2 pounds cucumber, preferably thin Asian or English variety
1/2 cup rice vinegar or 1/2 cup white vinegar diluted with 1/4 cup water
2-inch piece of fresh ginger, peeled and minced or grated
2 tablespoons sugar
1 teaspoon salt
3 tablespoons grapeseed or other neutral oil
1 pound sea scallops (cut in half through their equators if very large) or shrimp, peeled
1 medium to large onion, sliced
1/2 teaspoon ground turmeric (optional)
2 tablespoons sesame seeds

Steps:

  • With Asian or English cucumbers (or small garden cucumbers), slice thinly, preferably with a mandoline. With thick cucumbers, peel, halve lengthwise, and scoop out seeds before slicing.
  • Mix vinegar, ginger, sugar and salt, and toss with cucumbers. Let stand for 30 to 60 minutes. (Refrigerate if marinating for more than an hour in warm weather.)
  • Just before serving, drain excess liquid. Put 2 tablespoons oil in a skillet, preferably nonstick, over medium-high heat. Wait a minute, then add scallops or shrimp. Sear for about 2 minutes to a side, then remove to a plate. Turn heat to medium, add remaining oil, onions and turmeric, if you are using it. Cook until onion softens, about 5 minutes.
  • Meanwhile, toast sesame seeds in a dry skillet over medium heat until browned and fragrant, 3 to 5 minutes. Stir onions into cucumbers, top with scallops or shrimp, garnish with sesame seeds, and serve.

Steps:

  • Brush shrimp with 2 to 3 tablespoons Ginger Sesame Vinaigrette. Grill over medium-high heat 3 to 4 minutes or until pink, turning once.
  • Divide salad on 2 large plates. Arrange shrimp, tomatoes, mushrooms and green onions on each. Drizzle with Ginger Sesame Vinaigrette, to taste. Refrigerated leftovers.
  • Combine 1/3 cup rice vinegar, 1/4 cup toasted sesame seed, 1 tablespoon soy sauce, 2 teaspoons finely chopped ginger, and 2 teaspoons minced garlic in blender container. 1/2 cup low-sodium soy sauce
2 tablespoons toasted sesame oil
2 tablespoons distilled white vinegar
2 teaspoons grated peeled ginger
1 teaspoon grated garlic
1 pound angel hair pasta, noodles broken into thirds
2 tablespoons safflower or canola oil
1 small yellow onion, halved and thinly sliced
3 red or yellow medium bell peppers, cored, seeded and sliced lengthwise 1/8-inch thick
8 ounces snap peas, halved lengthwise
8 ounces cherry tomatoes, halved
1/4 cup thinly sliced scallions, plus more for garnish
Toasted white sesame seeds, for garnish (optional)

Steps:

  • Bring a pot of water to a boil, and season generously with salt.
  • In a small bowl, combine soy sauce, sesame oil, vinegar, ginger and garlic. Season with salt and pepper, and mix well.
  • Once the water boils, cook the pasta according to package directions until al dente. Reserve 3/4 cup pasta cooking water, then drain. Transfer pasta to a large bowl. Add half the dressing and 1/4 cup pasta water, season with salt and pepper and toss to evenly coat.
  • Meanwhile, in a large deep-sided saucepan, heat safflower oil over medium. Add onion and bell peppers, season with salt and pepper, and cook, stirring occasionally, until deep golden and tender, about 10 minutes. Add snap peas and cook, stirring occasionally, until crisp-tender, 2 minutes. Add tomatoes, 1/4 cup pasta water and the remaining dressing. Stir to deglaze the pan and lift the browned bits on the bottom of the skillet, then add vegetable mixture (with sauce) and scallions to pasta and toss until well combined (add more pasta water if thinner sauce is desired). Season with salt and pepper.
  • Serve warm or at room temperature. Garnish with scallions and sesame seeds, if using.

There, it is served on a strawberry fields salad, but it makes a delicious dressing on any salad, fruity, oriental, or as a mariande. Just like at the resturaunt it is oily, but thats what makes it so tasty! Shake well before using, and try not to eat it as soup!

6 cups shredded Chinese cabbage or 6 cups shredded romaine lettuce
4 green onions, thinly sliced

3 tablespoons salad oil
2 tablespoons soy sauce
1 tablespoon honey
1/2 teaspoon crushed red pepper flakes
12 ounces fresh sea scallops or 12 ounces shrimp
2 tablespoons sesame seeds

Steps:

  • Cook pasta according to package directions; drain. Rinse with cold water and drain again. In a large bowl, toss together the pasta, cabbage, and green onions. Divide mixture among four dinner plates.
  • Meanwhile, for dressing, in a small bowl stir together vinegar, 2 tablespoons or the oil, the soy sauce, honey, and crushed red pepper. Set aside.
  • Rinse scallops; pat dry. Set aside. In a skillet cook and stir the sesame seed over medium heat about 5 minutes or until toasted. Remove from skillet.
  • Add remaining oil ot skillet. Add scallops. Cook and stir for 1 to 3 minutes or until scallops are opaque. If desired, place romaine leaves on top of pasta mixture on plates. Place the scallops in romaine leaves. Drizzle dressing over salads and sprinkle with toasted sesame seed.
