SESAME-GINGER PORK WITH SOBA NOODLES

8 ounces soba noodles or whole-wheat spaghetti
4 teaspoons toasted sesame oil, divided
1 tablespoon minced pickled ginger
1 (1 1/4-pound) pork tenderloin, cut into 1-inch chunks
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 scallions (green and white parts), chopped
1 tablespoon sesame seeds
1 cup reduced-sodium chicken broth
1/4 cup reduced-sodium soy sauce
1/2 cup sliced water chestnuts, drained
1/4 cup chopped fresh cilantro leaves

Steps:

  • Cook the soba noodles according to the package directions. Drain and transfer to a large zip-top plastic bag. Add 2 teaspoons of the oil, seal the bag, and shake to coat the noodles.
  • Meanwhile, heat the remaining 2 teaspoons oil in a large skillet over medium heat. Add the ginger and cook, stirring, for 1 minute. Increase the heat to medium-high; add the pork, and cook, stirring, until browned on all sides, about 5 minutes total. Add the salt and pepper and stir to coat the pork. Add the scallions and sesame seeds and cook, stirring, for 1 minute. Add the broth and soy sauce reduce heat to medium, and simmer until the pork is cooked through, about 5 minutes. Remove from the heat and stir in the water chestnuts.
  • If you're stopping here:
  • Let cool to room temperature, then transfer the mixture to a large zip-top plastic bag or plastic container and refrigerate along with the bag of noodles for up to 3 days.
  • When you're ready to eat:
  • Combine the pork mixture and soba noodles in a large skillet set over medium heat and simmer for 5 minutes to heat through. You can also reheat the noodles and pork mixture together in the microwave for 3 to 5 minutes on HIGH. Meanwhile, chop the cilantro.
  • Remove from the heat, stir in the cilantro, and serve.

I was bored and decided to add some flavor to a couple of pork shoulder steaks. I can't think of any reason you couldn't use this same method to prepare just about any cut of pork. My wife and I really enjoyed this, and the lightly toasted flavor of the sesame seeds was just perfect!

2 pork shoulder
1 cup soy sauce
1/2 cup cider vinegar
2 tablespoons ground ginger
1 tablespoon Dijon mustard
1 cup breadcrumbs
2 tablespoons sesame seeds
1/2 teaspoon fresh ground pepper
1/2 teaspoon garlic powder

Steps:

  • Combine the wet ingredients in a large resealable plastic bag.
  • Pinch the bag near the top and twist once.
  • Shake the content vigorously.
  • Place shoulder steaks in the bag and place flat on a shelf in the fridge in the morning.
  • When you get home from work, combine the dry ingredients in a shallow, and wide bowl.
  • Dredge the shoulder steaks through the breading.
  • Broil for approximately 20 minutes, depending upon thickness of the steaks.

1/2 cup reduced-sodium soy sauce
3 tablespoons olive oil
2 teaspoons minced fresh gingerroot
1 to 3 garlic cloves, minced
2 pork tenderloins (1 pound each)
1/2 cup honey
1/4 cup packed brown sugar
1/3 cup sesame seeds, toasted

Steps:

  • In a large resealable plastic bag, combine the soy sauce, oil, ginger and garlic. Add pork; seal and turn to coat. Refrigerate for 4 hours or overnight, turning occasionally., Drain and discard marinade. Place pork on a greased rack in a foil-lined shallow roasting pan. Combine the honey and brown sugar; spoon over pork. Sprinkle with sesame seeds. , Bake, uncovered, at 425° for 20-25 minutes or until a thermometer reads 145°. Let meat stand for 5 minutes before slicing.

1 -1 1/2 lb pork tenderloin
1/4 cup soy sauce
2 garlic cloves, minced
3 tablespoons honey
2 tablespoons brown sugar
1 teaspoon fresh ginger, minced
2 tablespoons toasted sesame seeds
1 large English cucumber
1/2 small red onion, thinly sliced
1/4 cup rice wine vinegar
2 tablespoons lime juice
1 1/2 teaspoons sugar
2 tablespoons chopped fresh cilantro
2 tablespoons chopped unsalted peanuts

Steps:

  • Combine soy sauce and garlic in a small cup.
  • Place tenderloin in a resealable food storage bag; pour soy/garlic mixture over the pork; turn to coat and refrigerate for 1 to 2 hours.
  • While pork marinates, prepare cucumber salad.
  • Wash, but do not peel cucumber; cut into thin slices.
  • Mix cucumber and onion in a medium bowl.
  • Combine vinegar, lime juice and sugar in a small bowl; stir into cucumbers and onions.
  • Cover and refrigerate salad at least 30 minutes.
  • Stir in cilantro and top with peanuts before serving.
  • Preheat oven to 400 degrees F.
  • Drain pork, reserving 1 tablespoon of the marinade.
  • Combine honey, brown sugar, ginger and reserved marinade in a small bowl.
  • Place pork in a shallow foil lined roasting pan; brush with 1/2 the honey mixture; roast for 10 minutes.
  • Turn pork over and brush with remaining honey mixture.
  • Sprinkle sesame seeds evenly on the top.
  • Roast for 10 to 15 minutes or until internal temperature reaches 155 degrees F when tested with a meat thermometer inserted into the thickest part of the meat.
  • Let pork rest under a foil tent on a cutting board for 5 minutes. Internal temp will continue to rise to about 160 degrees.
  • Cut into 1/2-inch slices and serve with Thai cucumber salad.

2 tbsp sesame oil
25g sesame seeds
1 tbsp soy sauce
1 tbsp mirin
2 tbsp hot chilli sauce
25g ginger , finely grated
500g pork loin or leg steaks, cut into thin strips
8 spring onions , cut into long pieces
2 red peppers , deseeded and thinly sliced
cooked rice , to serve

Steps:

  • Mix together 1 tbsp oil, the sesame seeds, soy sauce, mirin, chilli sauce and ginger. Pour over the pork and mix it all together. Heat the remaining oil in a large non-stick frying pan or wok. Add the pork and fry for 5 mins until browned. Add the peppers and spring onions, and cook for 5-10 mins more until the vegetables have softened and the pork is cooked through. Serve with cooked rice.

2 nests medium egg noodles
2 tsp cornflour
2 tbsp soy sauce
1 tbsp honey
1 tbsp sunflower oil
250g/9oz pork tenderloin, cut into bite-sized pieces
thumb-sized piece ginger, finely chopped
2 garlic cloves, finely chopped
1 green pepper, deseeded and sliced
100g mange tout
1 tsp sesame seed

Steps:

  • Bring a pan of salted water to the boil and cook the noodles following pack instructions. Meanwhile, mix the cornflour with 1 tbsp water, then stir in the soy sauce and honey, and set aside.
  • Heat the oil in a wok over a high heat. Add the pork and cook for 2 mins until browned all over. Add the ginger, garlic, pepper and mangetout, and cook for a further 2 mins. Reduce the heat, then add the soy and honey mixture, stirring and cooking until the sauce bubbles and thickens. Divide the drained noodles between 2 bowls. Top with the pork and vegetables, and finish with a sprinkling of sesame seeds.
