Steps:
- In a large pot of lightly salted boiling water, cook broccoli 5 minutes, until crisp-tender. Rinse under cold water; drain.
- In dry skillet over medium heat, toast sesame seeds 5 minutes, until golden and fragrant. Transfer to small plate to cool.
- In large bowl, combine soy sauce, vinegar, oil and sugar substitute and mix well. Add broccoli and half the sesame seeds and toss well. Marinate at room temperature at least 30 minutes, stirring occasionally. Before serving, sprinkle broccoli with remaining sesame seeds.

- Whisk soy sauce, vinegar, oil and honey in large bowl until blended. Season to taste with salt and pepper.
- Steam broccoli florets until crisp-tender, about 5 minutes. Cool.
- Stir sesame seeds in heavy large skillet over medium heat until golden, about 5 minutes. Transfer to small bowl; cool.
- Mix broccoli and half of sesame seeds into dressing. Let marinate at room temperature at least 30 minutes or up to 2 hours, tossing occasionally. Transfer broccoli to platter. Pour dressing over. Sprinkle with remaining sesame seeds.

- In a large pot of boiling salted water, cook broccoli over high heat until crisp-tender, 3-4 minutes. Drain and rinse with cold water. Drain.
- In a small skillet, toast sesame seeds.
- In a large bowl, combine broccoli, beef, red pepper and sesame seeds.
- In a small bowl, whisk together vegetable oil, sesame oil, vinegar, soy sauce, garlic and crushed red pepper. Pour dressing over salad and toss gently.

From Melissa Clark in the *New York Times,* who writes: "This salad is made from uncooked broccoli tossed with an assertive garlic, sesame, chile and cumin-seed vinaigrette slicked with good extra-virgin olive oil and red wine vinegar. The acid 'cooks' the florets a little as ceviche does fish. After an hour, the broccoli softens as if blanched, turning bright emerald, and soaking up all the intense flavors of the dressing. You'll be making this one again."

- 1. In a large bowl, stir together the vinegar and salt. Add broccoli and toss to combine.
- 2. In a large skillet, heat olive oil until hot, but not smoking. Add garlic and cumin and cook until fragrant, about 1 minute. Stir in sesame oil and pepper flakes. Pour mixture over broccoli and toss well. Let sit for at least 1 hour at room temperature, and up to 48 (chill it if you want to keep it for more than 2 hours). Adjust seasonings (it may need more salt) and serve.
SESAME BROCCOLI, REALLY..IT'S GOOD!
The dish is a nice and easy change from the norm, and quite different from some of the other broccoli recipes I have seen here. Try it, you might like it as much as we do! Due to a great suggestion from a reviewer, I have added toasting the sesame seeds, a marvelous idea! Also, PLEASE don't substitute the sesame oil as one review did here, you loose the entire flavor of this great dish! This is an adopted recipe and the above comments were made before I inherited it. Now having made this dish, I can concurr: it's a sesame oil that turns your head and gets your taste buds going in this recipe, and toasting the seeds also adds fuller flavour. I'm delighted to have adopted this recipe and will be making it often:) I hope that you will enjoy it too!

- Prepare the broccoli for cooking. Boil, steam and drain. Please DO NOT over cook! Generally 6-8 minutes to steam or boil is about right for crisp broccoli.
- Heat the sesame oil on a skillet or wok for 15 seconds over high heat. Add the sesame seeds and the broccoli.
- Stir fry until heated through.
- Remove from the pan to a serving dish, pour soy sauce over!

- Bring a large pot of water to a boil; add salt. In a small bowl, whisk olive oil, vinegar, sesame oil, mustard, salt, and pepper; pack vinaigrette into 8 small airtight containers.
- Cut off broccoli stems about 1 inch below the florets. Cut florets into flowerettes by slicing through stem and pulling florets apart. You should have 8 to 9 cups of flowerettes.
- Fill a large bowl with ice and water; set aside. Add broccoli to boiling water; stir for 1 minute. Drain, then plunge into ice bath to stop cooking. When cool, drain well; toss with sesame seeds. Pack into containers with a small container of vinaigrette.
