SESAME-CRUSTED TOFU WITH GINGERY NOODLES

1 egg , beaten
300g block tofu , patted dry and cut into triangles
3 tbsp cornflour
3 tbsp sesame seed
150ml sunflower oil , for frying
4 carrots , cut into matchsticks
1 red chilli , thinly sliced
3 garlic cloves , finely sliced
50g stem ginger (around 4-5 balls), finely chopped, plus 2 tbsp syrup
½ bunch spring onion , shredded lengthways
250g pack medium egg noodle
1 tbsp soy sauce

Steps:

  • Tip the beaten egg onto a plate and coat the tofu in it. On a plate, mix the cornflour, sesame seeds and seasoning and dip the tofu pieces into it. Set aside.
  • Heat the wok and add 2 tbsp of the oil, plus the carrots, and stir-fry until tender, adding a few splashes of water if they start to stick. Add the chilli, garlic, ginger and most of the spring onions, and fry for a few more mins. Meanwhile, cook the noodles following pack instructions, drain, then toss into the vegetables, along with the syrup and soy.
  • Heat the remaining oil in a large frying pan. Carefully shallow-fry the tofu pieces, a few mins each side, until golden. Remove and drain on kitchen paper. Scatter with the remaining spring onions and serve with the noodles and a little extra soy sauce, if you like.

A vegetarian stir-fry packed with spice and flavour. Marinate tofu in ginger, garlic and sesame and serve with a vermicelli noodle mix

195g extra-firm tofu
2 tsp tamari or soy sauce
2cm piece ginger , peeled and finely chopped or grated
1 garlic clove , finely chopped
2 tbsp lemon or lime juice
1 tsp sesame oil
85g vermicelli rice noodle
2 tsp rapeseed oil
1 tsp sesame oil
1 spring onion , trimmed and thinly sliced
1 garlic clove , finely chopped
½ red chilli , deseeded and finely chopped
2cm piece ginger , peeled and finely chopped
100g sugar snap pea
100g pak choi (or spinach)
1 large red pepper , sliced
1 tsp tamari or soy sauce
juice ½ lime
1 tbsp finely chopped coriander

Steps:

  • Make the marinade by mixing together all the ingredients. Drain the tofu by placing on several sheets of kitchen paper on a plate, with several more on top, and a heavy weight (such as a pan) on top of that. Leave for at least 15 mins. Cut the tofu into cubes and put in a small bowl with the marinade. Cover and leave for 30 mins-1 hr.
  • Meanwhile, cook the noodles following pack instructions, then drain and sit them in a bowl of cold water.
  • Heat a non-stick frying pan. Add the tofu pieces and fry until hot and crispy. Just before you remove the tofu from the pan, add any remaining marinade and let it sizzle for 10 secs. Place the tofu on a plate and cover with foil to keep warm.
  • In a frying pan or wok, heat the rapeseed and sesame oils over a high heat. Add the spring onion, garlic, chilli and ginger, and stir constantly for about 1 min. Add the sugar snap peas, pak choi and pepper, and stir for another 1-2 mins, then add the cooked noodles. Toss well, then add the soy sauce and lime juice, and mix until well combined and the pan is sizzling.
  • Remove from the heat and divide between 2 bowls. Top each with tofu cubes and drizzle over any juices. Sprinkle with coriander and serve.

300 g (10½ oz) hard tofu
2 teaspoons sesame oil
2 tablespoons soy sauce
1 tablespoon sesame seeds
2 tablespoons oil
3 zucchini (courgettes), sliced
150 g (5½ oz) button mushrooms, halved or quartered
1 large red capsicum (pepper), cut into squares
2 garlic cloves, crushed
550 g (1 lb 4 oz/3 cups) cold, cooked brown rice
1-2 tablespoons soy sauce, extra

Steps:

  • 1. Drain the tofu and pat dry with paper towels. Cut into cubes, place in a non-metallic bowl and add the sesame oil and soy sauce. Stir well and leave in the fridge to marinate for 30 minutes, stirring occasionally. 2. Heat the wok until very hot, add the sesame seeds and dry-fry for 2-3 minutes, or until lightly golden. Tip onto a plate to cool. 3. Reheat the wok, add the oil and swirl it around to coat the side. Remove the tofu from the dish with a slotted spoon and reserve the marinade. Stir-fry the tofu over high heat, turning occasionally, for about 3 minutes, or until browned. Remove from the wok and set aside. 4. Add the vegetables and garlic, and cook, stirring often, until they are just tender. Add the rice and tofu, and stir-fry until heated through. 5. Add the toasted sesame seeds, the reserved marinade and extra soy sauce to taste. Toss to coat the tofu and vegetables, then serve immediately.

1/4 cup reduced-sodium soy sauce (or gluten-free soy sauce)
1/4 cup reduced-sodium vegetable broth
1 tablespoon honey (or brown sugar for vegan)
16 ounces super firm tofu (drained, pressed)
1 tablespoon reduced-sodium soy sauce (or gluten-free soy sauce)
2 tablespoons cornstarch or arrowroot powder
1 tablespoons neutral oil (such as grapeseed or canola)

1 red bell pepper (diced 1/2 inch)

Steps:

  • In a small bowl combine soy sauce, vegetable broth and honey. Set aside.
  • Once the tofu has drained, slice in half then into 1/2 inch cubes and place into a large bowl and season with 1 tablespoon soy sauce.
  • Sprinkle cornstarch on top and gently toss with your hands to ensure all tofu pieces are covered.
  • In a large nonstick skillet or wok, add 1 tablespoon oil and heat to medium-high.
  • Add the tofu and let it get crispy without touching it or flipping for 3-4 minutes, then repeat on all sides.
  • Remove tofu and set aside.
  • To the skillet at medium heat, add sesame oil, red peppers, broccolini and cook until softened, about 5 minutes.
  • Add the garlic and ginger and cook 30 to 60 seconds.
  • Add the tofu and sauce, toss and cook for an additional 1 to 2 minutes, or until sauce is slightly thickened and the tofu is heated through.
  • Top with sesame seeds.

8 ounces firm tofu, drained and weighted for 30 minutes
1/2 teaspoon grated tangerine or lemon zest
2 tablespoons orange juice
Salt and pepper
2 tablespoons hoisin sauce
1 tablespoon rice wine vinegar
1 tablespoon low sodium soy sauce
1/2 teaspoon sugar
1 teaspoon cornstarch
1 tablespoon each vegetable and sesame oil
1 large clove garlic, minced
Quarter-size piece fresh ginger, minced
4 ounces mushrooms, stemmed and thinly sliced mushrooms
3 cups 3/4-inch broccoli florets
Salt and crushed red pepper

Steps:

  • Cut the tofu into 3/4-inch squares and marinate in citrus zest and juice; season with salt and pepper. Combine hoisin, rice vinegar, soy sauce, sugar and cornstarch; reserve for later. In a 12-inch skillet heat vegetable and sesame oils until very hot. Add garlic and ginger and stir fry for 10 seconds. Add mushrooms and broccoli, some water, cover and steam for 2 minutes or until mushrooms and broccoli begin to get tender. Add tofu. Stir hoisin sauce to recombine cornstarch and add to skillet. Cover and simmer 30 seconds to a minute to thicken. Season with salt and crushed red pepper.

This recipe is a amalgam of 40 years of stir frying. Do what I did, add the things you like, delete the things you don't. Include ideas you found in other recipes and then file the serial number off and claim it's your's. It worked in my case.

1 -2 dried shiitake mushroom
1/3 cup chicken stock
1/4 cup rice wine (Dry Sherry is OK. NOT COOKING SHERRY)
4 tablespoons soya sauce (The best is made with soy beans, salt,and Water. Nothing else.)
2 tablespoons cornstarch
1/2 lb firm tofu, cut into 1/2 inch cubes
2 tablespoons sesame seeds
2 tablespoons peanut oil
3 -4 garlic cloves, minced
2 tablespoons ginger, grated
1/4 cup cut bite size cauliflower
1/4 cup cut bite size broccoli
1/4 cup cut bite size snow peas
1/4 cup cut bite size baby carrots
1/4 cup cut bite size julinne red bell pepper
1/4 cup cut bite size yellow bell pepper, julinne
1/4 cup cut bite size green onion, 1 inch pieces
1/2 lb fresh bean sprout
sambal oelek
3 tablespoons peanut oil
uncooked fine rice noodles

Steps:

  • Put the Shiitaki in a micro wave safe bowl with water to cover.
  • Nuke for 22 seconds. Let set for 30 minutes.
  • Mix the four marinade ingredients. Add the Tofu. Stir gently to coat.
  • When the mushrooms are ready, drain and cut into thin slices the size of your thumb nail. Set aside.
  • Heat the wok.
  • Toast the Sesame Seeds 'til golden. Set aside.
  • Add the Oil to wok. Swirl to coat. Add garlic and Ginger. Stir fry 1 minute.
  • Add all the vegetables but snow peas and Bean sprouts. Stir fry 3-4 minutes.
  • Add Snow peas, Stir fry 2 minutes.
  • Push vegetables up the sides of the wok.
  • Lift the Tofu from the marinade, set aside.
  • Add the Sabal Oelek to the marinade, Mix well, add to the center of the wok. ***NOTE*** If you're not familiar with Sabal Oelek, it is an delicious asian chili paste but IT IS HOT! By all means got to know it but use caution try less than 1/4 teaspoon the first time. You can work you're way up as you learn.
  • Stir 'til the sauce starts to thicken.
  • Add the Tofu and Bean Sprouts, stir gently to mix.
  • Heat through.
  • Empty the wok into a serving bowl. keep warm.
  • Quickly clean and dry the wok. Heat, add 3 TBS oil. Add noodles, stir as they puff.
  • Place hot noodles on each plate. Top with the vegetables. Top with toasted Sesame Seeds. Serve.

16 ounces firm tofu, drained
4 tablespoons rice vinegar
1 tablespoon sesame oil
2 tablespoons reduced sodium soy sauce
1 tablespoon honey
1 tablespoon fresh ginger, minced
2 garlic cloves, peeled and minced
3 tablespoons Thai sweet chili sauce
4 green onions, sliced (white and green parts)
1 lb fresh asparagus
1 cup mushroom, sliced
1/4 cup reduced sodium soy sauce
2 tablespoons lime juice
5 tablespoons water
1 teaspoon cornstarch
2 tablespoons canola oil or 2 tablespoons peanut oil

Steps:

  • Place tofu between several sheets of paper towels on a plate and top with another plate or heavy pan and let sit for 30 minutes to press out liquid. Discard towels and turn tofu block on it's side and slice in half, making halves about 1 inch thick. Place slices in a pie plate or shallow baking dish.
  • In a small bowl, mix vinegar, sesame oil, 2 tbls soy sauce, honey, ginger, garlic and chili sauce. Pour this mixture over the tofu slices and cover with plastic wrap. Refrigerate for 2-4 hours, turning slices over halfway through.
  • Wash asparagus and snap off tough ends. Slice spears and tips into 1-inch pieces.
  • Remove tofu from marinade and pat dry. Save marinade.
  • Mix reserved marinade in a bowl with 1/4 cup soy sauce, lime juice, water and cornstarch.
  • Cut tofu slices into 1-inch cubes.
  • Heat oil over medium-high heat in wok or large skillet and stir-fry tofu until it begins brown, about 5 minutes. Remove tofu from pan to a plate.
  • Add asparagus, green onion and mushrooms to wok or skillet (add more oil if needed) and stir-fry until asparagus is just beginning to be tender, about 6 minutes. Return tofu to pan and stir-fry another minute or two.
  • Stir in marinade mixture and bring to a boil, cooking until slightly thickened. Serve at once over rice or noodles.

Steps:

  • Place tofu in a colander and drain 10 minutes.
  • Pat dry with paper towels.
  • Place soy sauce in a shallow dish, add tofu, cover, refrigerate, and marinate 15 minutes, or up to 1 hour, turning once.
  • In medium covered saucepan, bring 2 cups vegetable broth or water to a boil.
  • Slowly stir in rice, cover, and reduce heat to low.
  • Simmer 40 minutes, or until all the water is absorbed.
  • Meanwhile, heat the oil in a wok, large skillet, or heavy saucepan over medium-high flame.
  • Add garlic and onion and sauté until onions are wilted, 1-2 minutes .
  • Add broccoli and red peppers, the remaining 1 1/4 cup broth or water, and cook, stirring frequently, 5 minutes.
  • Add mushrooms, water chestnuts, basil, oregano, and black pepper and continue to cook 2 more minutes, or until mushrooms are soft.

Flavorful tofu and veggie stir fry! The tofu is loaded with the sesame-ginger flavor and is crispy without deep frying. This stir fry is healthy and can be eaten with rice, quinoa or on its own.

14 ounces extra firm tofu
2 tablespoons cornstarch
3 tablespoons vegetable oil
2 1/2 cups chopped chopped green beans
1 cup sliced carrot
1 tablespoon sesame oil
1 1/2 tablespoons grated ginger or 1/2 tablespoon ginger powder
1 1/2 tablespoons minced garlic
3 tablespoons soy sauce
1 tablespoon rice vinegar
1/4 teaspoon red pepper flakes, to taste
3 tablespoons brown sugar
2 tablespoons water
1 tablespoon sesame seeds

Steps:

  • Slice tofu into 3-4 horizontal slices. Drain well by placing between 2 cookie sheets lined with paper towels. Weight down the top cookie sheet with canned goods or a cast iron skillet to "press" the moisture out of the tofu. Keep changing the paper towels until no more moisture can be pressed from the tofu. This is the key to crispy tofu. Once dry, cut the tofu up into 1" cubes and toss with 1 tablespoon of cornstarch to coat.
  • While drying the tofu, prepare the sauce. Combine sesame oil, ginger, garlic, rice vinegar, soy sauce, red pepper flakes, brown sugar, 1 tablespoon cornstarch and water. Mix in blender or food processor until completely smooth. Set aside.
  • In a large skillet over medium-high heat, add 1 tablespoons of oil and swirl to coat pan. Add the cubed tofu to the pan and fry for 3-5 minutes. Flip the tofu as needed to brown all sides. Add 2 tablespoons of the prepared sauce to the tofu and allow to cook for an additional 2-3 minutes. When the tofu is carmelized, remove to plate and keep warm.
  • Add the remaining 1 tablespoon of oil to the pan. Add the veggies and toss to coat. Cook the veggies for 3-4 minutes or just to al dente. Add the sauce and let it thicken just slightly. Add the tofu and sesame seeds and stir to coat. Cook for an additional 1-2 minutes or until the tofu has soaked up all the flavors.
  • Serve warm with rice or quinoa or on its own. Eat right away as the tofu will lose its crispiness as it sits and cools.

Cover with another 2 layers of kitchen paper. Place a smaller baking tray over the covered tofu then place 4 cans of beans on top. Leave the tofu to drain for at least 15 minutes, 30 minutes if you can.
  • Once the tofu is done, make the marinade.Add ½ a tablespoon of cornflour (cornstarch) to a large bowl. Whisk in 1 tablespoon of dark soy sauce, 1 tbsp sweet chilli sauce, ½ a tablespoon of maple syrup, 1 and a ½ tablespoons of lemon juice, ½ tablespoon of grapeseed oil and 1 tablespoon of toasted sesame oil. Stir in 1 minced clove of garlic. Then add the tofu. Stir well to make sure each cube is covered in the marinade. Leave the tofu to soak up the marinade for about 30 minutes. Keep the leftover marinade.
  • After 30 minutes, heat ½ tbsp of oil in a wok then start frying the tofu in small batches. Making sure to turn the tofu so all sides get nice and crispy. Remove from the wok then place on a plate and cover to keep warm.
  • Heat 1 tablespoon of oil in a wok or large frying pan. Add the onion and cook until it is translucent for about 5 minutes. Add garlic, ginger and ¼ teaspoon of dried red chilli flakes, cook for a minute. Then add the peppers and cook for about 3 minutes.Whisk together the lemon juice soy sauce and sesame oil in a small bowl.Add the sauce and cook for until it bubbles up.Add the remaining marinade and the tofu, cook over medium heat, gently stirring all the time, until the sauce is thick and sticky and the tofu is hot.Serve immediately, with boiled rice, sliced spring onions and sesame seeds.
