- In a large pot of boiling salted water, cook spaghetti until al dente; reserve 1/2 cup pasta water. Add shrimp to pot, and stir. Immediately drain spaghetti and shrimp, and set aside (the shrimp will continue to cook).
- In same pot, heat oil over medium. Add garlic, rosemary, and red-pepper flakes. Cook, stirring, until garlic is golden, 1 to 3 minutes.
- Remove from heat; return pasta and shrimp to pot. Add lemon juice and enough pasta water to create a thin sauce that coats pasta. Season with salt and pepper, and serve.

- Melt 4 tablespoons of butter in a large skillet over low heat. Add the onions; cook and stir until they turn a deep brown, about 10 minutes. Stir in the garlic, and cook for 2 minutes, until fragrant. Mix in the chicken stock and rosemary, and increase the heat to medium-high. Cook until reduced by 1/3, about 8 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add the spaghetti pasta, and cook until tender, about 8 minutes. Drain, then add noodles to the sauce in the skillet. Stir in the remaining butter and Parmesan cheese. Season with salt and pepper.
- Serve in a large bowl family style, or place about 1 cup of pasta in a large mug or small bowl. Insert a dinner fork in the center of the pasta and twirl the fork around, holding the mug steady. The pasta will wind up tighter and tighter as you turn. Remove the fork and immediately turn the pasta out onto a dinner plate or shallow bowl. Garnish with extra cheese and rosemary sprigs.

Shrimp is now the most popular seafood in America, and this bright and fragrant treatment couldn't be simpler. Just scatter several rosemary branches onto a sheet pan and top with shrimp. Drizzle with lemon juice and olive oil then roast until the shrimp are peachy pink all over. For the most part, the shrimp will tell you when they're done. Certainly they're ready once they're pink, though very large shrimp may need an extra minute to cook through. To check, slice one in half; if it's opaque, or even nearly so, season to taste and start eating.

- Combine first 7 ingredients in processor. Using on/off turns, process until mixture is smooth. - Remove the rosemary leaves from the stalks and finely chop.
- Slice the chicken in half horizontally, resulting in two thin chicken fillets.
- Drizzle the olive oil over the chicken and season well with the rosemary, salt and pepper.
- Cook the chicken in a hot pan until golden brown on both sides and cooked through. Remove from the pan and set aside to rest.
- Pour the chicken stock into the pan and scrape the bottom to release all the caramelized bits.
- Allow the stock to simmer and reduce for 2 minutes then add the garlic and cook for another 30 seconds.
- Pour in the cream and lemon juice and allow to simmer for 5 minutes.
- Season to taste.
- While the sauce is cooking, bring a large pot of salted water to a boil. Add penne pasta and cook for 9-10 minutes or until al dente. Reserve 1 cup of cooking water and drain.
- Slice the chicken and add to cooked pasta then pour over the sauce and toss well. Add some of the pasta cooking water to emulsify the sauce. Add grated Parmesan and serve.

- Bring a large pot of water to a boil. Generously salt the water.
- Cook pasta for 8-9 minutes, or until al dente, and drain.

- Turn oven on to 400F.
- Bake halved grape tomatoes seasoned with 1 tbsp EVOO, salt and pepper until slightly browned and thoroughly cooked, about 20 minutes.
- Place a pot of water to boil, cook pasta according to package directions. Reserve 1 cup of pasta water and drain pasta
- In a skillet, add 2 tbsp EVOO, brown shrimp on both sides over high heat, about 5 minutes. Season with salt and pepper and set aside in bowl.
- In the same skillet, sauté garlic with rosemary and 2 tbsp EVOO until garlic turns slightly yellow.
- Stir in Cannellini beans and 1 cup of pasta cooking water. Season with salt and pepper and simmer for a few minutes. Let cool and process 1/3 in the blender until smooth. Put back together with the other beans, add tomatoes, shrimp, parsley and bring to simmer.
- Drain pasta and stir in the bean and shrimp mixture. Serve drizzled with a touch of olive oil.
PENNE WITH SHRIMP & ASPARAGUS

- Have all the ingredients for this recipe prepared and ready to cook before beginning. Bring about 3 quarts of salted water to a boil and have it ready for the pasta.
- Heat the butter in a large, deep skillet and add the shrimp. Cook until the shrimp are opaque and just cooked through. With a slotted spoon or spatula, transfer them to a large plate or platter.
- Cut the asparagus into lengths about 2 inches long. If the stalks are thick, cut them in half or quarter them. Leave the tips in tact. Add the asparagus pieces to the skillet. Salt and pepper to taste. Cook for 4 to 5 minutes, or until crisp-tender and lightly browned. Transfer the asparagus to the plate holding the shrimp and reserve.
- In the same pan, add the oil and garlic. Cook until the garlic cloves are lightly browned. Remove and discard the garlic. Add the tomatoes, parsley and basil. Salt and pepper to taste. Cook, stirring, for about 10 minutes.
- Meanwhile, add the pasta to the boiling water and, when it returns to a boil, cook for about 7 minutes or until al dente. (Or follow package directions) Do not overcook.
- Just before the pasta is done, turn off the heat under the tomatoes and add the beaten eggs, stirring vigorously so that they blend without curdling. Do not boil the sauce after the eggs are added. (If you are nervous about curdling the eggs, you may temper them in, by stirring a ladleful of the hot tomato sauce into the eggs, then whisking the mixture back into the pan.)
- Add the shrimp and asparagus to the tomato sauce and stir to blend.
- Drain the pasta immediately. Add the pasta to the tomato sauce, shrimp and asparagus mixture and toss with half the cheese. Serve piping hot with the remaining cheese on the side.
