PASULJ (SERBIAN WHITE BEAN SOUP) RECIPE



Pasulj (Serbian White Bean Soup) Recipe image

Serbians prefer the tetovac legume in their white bean soup. Try this recipe for Pasulj, Serbian white bean soup.

Number Of Ingredients 14

For the Soup:
1/2 pound tetovac beans or Great Northern beans (rinsed)
16 cups cold water
1 1/2 pounds ham hock or ham bone or use shortcut above
Salt and pepper to taste
3 carrots (peeled and sliced or medium chopped)
3 medium red potatoes (peeled and cut into medium pieces)
2 ribs celery (medium chopped)
1 medium onion (medium chopped)
1 garlic clove (finely chopped)
For ​the Zafrig (Thickener):
4 tablespoons oil
4 tablespoons all-purpose flour
1 tablespoon sweet or hot paprika

Steps:

  • In a large soup pot, place beans, water, and ham. Bring to a boil, stirring occasionally so beans don't stick, and skimming off any foam that rises to the surface. Add salt and pepper to taste. Lower temperature and simmer 1 hour.
  • Add vegetables, bring back to the boil, reduce heat, and continue to simmer for 1 more hour. Remove the meat from the ham hock or ham bone and return to soup.
  • If the soup isn't thick enough, you can add an optional zafrig or thickener. In a small saucepan, add oil and flour and cook until light brown. Add paprika off heat, stirring well. Return to low heat and add 1 cup bean soup, mixing well. Pour back into the soup pot and simmer 5 minutes or until soup is thickened to your liking.
  • Serve in heated bowls garnished with chopped parsley if desired. It tastes even better the next day.

Serbian raznjici can be made with pork or veal, or a combination of the two, threaded on a skewer and grilled.

2 pounds boneless pork, cut into 1 1/2-inch cubes (or a combination of pork and veal)
Dash salt and black pepper
2 tablespoons vegetable oil
2 minced cloves garlic
1 cup thinly sliced onions plus 1/2 cup finely chopped onions
15 small bay leaves (broken in half)

Steps:

  • Gather the ingredients.
  • Pat the meat cubes dry and sprinkle them with generously with salt and pepper.
  • Place in a nonreactive bowl or pan with the oil, garlic, and sliced onions. Toss to coat. Marinate, covered, in the refrigerator for at least 3 hours, stirring occasionally.
  • Meanwhile, soak bamboo skewers in water for at least 30 minutes.
  • Prepare a gas or charcoal grill to medium-high (350F to 375F), or position a rack 6 to 8 inches from the heat and turn the broiler to high. Remove meat from bowl and discard the marinade. Thread 2 meat cubes alternately with 1 bay leaf half on skewers for a total of about 6 to 8 meat cubes per skewer.
  • Cook the meat until the it reaches an internal temperature of 145F, 8 to 10 minutes per side.
  • Raznjici may be removed from the skewers before serving or left on. Sprinkle chopped onion over razjnici and serve.

1 ½ pounds ground pork
1 pound lean ground beef
½ pound ground lamb
1 egg white
4 cloves garlic, minced
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground black pepper
1 teaspoon cayenne pepper
½ teaspoon paprika

Steps:

  • Preheat a grill for medium-low heat.
  • In a large bowl, combine the ground pork, ground beef, ground lamb and egg white. Add the garlic, salt, baking soda, black pepper, cayenne pepper and paprika. Mix well using your hands, and form into finger length sausages about 3/4 inch thick.
  • Lightly oil the grilling surface. Grill sausages until cooked through, turning as needed, about 30 minutes.

From "The Frugal Gourmet On Our Immigrant Ancestors" by Jeff Smith "This is a simple bean dish that you have rpbably seen before, but the addition of paprika and hot red pepper flakes probably points to a bit of Hungarian influence. It is a good bean dish, and our Yugoslavian immigrants must have eaten a lot of this in their early days in this country." My husband asked for " pork and white beans" for dinner. I went on a search for recipes and found this one. It is very good with much more spice than usual in a bean dish. I used half sweet paprika and half hot paprika since neither was specified. Plenty spicy without the red pepper flakes.

1 lb dried white bean, rinsed and drained
1 3/4 lbs smoked pork hocks, cut into pieces
2 medium yellow onions, peeled and chopped
2 -3 garlic cloves, peeled and crushed
3 tablespoons olive oil
2 tablespoons Hungarian paprika
1 teaspoon crushed hot red pepper flakes (optional)

Steps:

  • Put the beans in a heavy casserole and cover with water. Bring to a boil; boil for 2 minutes. Remove from the heat and let stand, covered, for 1 hour Add the smoked pork and cook slowly, covered, for 1 hour. Meanwhile, saute' the onions and garlic in oil until tender. Stir in the paprika and cook for 1 minute. Add the mixture to the beans and pork; continue to cook until the beans are tender, about 40 minutes. If desired, sprinkle with hot red pepper flakes. Salt and pepper to taste. The final dish should have a very thick sauce.
