Steps:
- In a bowl, combine 1/4 cup of the warm water with the baking powder. In a food processor, combine the semolina with the flour, yeast, sugar and the remaining 2 3/4 cups of warm water; process for 30 seconds, until smooth. Add the salt and baking powder mixture and process for 30 seconds longer. Pour the batter into a large bowl, cover with a kitchen towel and let rise at room temperature until doubled in bulk, about 1 hour.
- Heat a 10-inch nonstick skillet and coat it with a thin layer of vegetable oil. In a small bowl, blend the honey with the melted butter. Whisk the batter until creamy. Ladle 1/3 cup of the batter into the skillet, tilting the skillet to distribute it evenly. Cook the pancake over moderate heat until bubbles appear all over the surface and the bottom is pale golden, about 2 minutes. Shake the skillet to loosen the pancake, then slide the pancake onto a plate. Drizzle with the honey butter and serve right away. Repeat with more oil and the remaining batter and honey butter.
- Notes Fine semolina flour, sometimes also called extra-fancy durum flour, is available at Whole Foods and online at kingarthurflour.com.

Steps:
- In your blender, combine water, yeast, flour, semolina and salt, pulse until everything mixes well together.
- Add the Baking powder and mix again.
- Place in a container and cover to rise, will take approximately 30 minutes.
- After 30 minutes, the batter should be thin and not thick as the usual pancakes.*
- Heat an 8" skillet over medium heat, pour about 1/2 cup of the batter into the skillet. Batter should spread to the edges of the skillet, if not then thin it with more water . see notes for clarification.
- Small holes should appear all over the surface, continue cooking until no obvious uncooked surface appears. Took me 2 minutes to be completely cooked.**
- Let them cool down a bit before serving.
- Serving suggestions: Traditionally, these are enjoyed with butter and honey. Also for a savory twist, sometimes can be rolled over olive oil and hard boiled eggs( cut into small pieces. Practically, this can be enjoyed with your favorite syrup.
- Enjoy!!

SEMOLINA PANCAKES ( COOKING UNDER 10 MINUTES)
Although very easy and fast, semolina pancakes are very nutritious too as they contain a bouquet of veggies like capsicum, carrots and cabbage, not to forget bean sprouts and spring onions. The crushed peanuts boost the flavour and texture of these pancakes.

- The pancakes. Combine 2 teaspoons warm water and yeast. Set aside for 10 minutes until the yeast is foamy. If it doesn't foam, you should discard it.
- In a large bowl, combine both flours, baking powder, salt, and sugar. Mix well. Add the yeast and additional 3 1/2 cups warm water. Put the mixture into a food processor and process until smooth. Pour it into a bowl, cover, and let sit for 30 minutes. The batter should be rather thin. If it's too thick (it can happen because semolina flour can differ), thin it by stirring in more water.
- Warm a nonstick pan over medium heat. Pour about 1/4 cup of the batter for one pancake. Cook on one side only until small holes form all over the surface, for about 3-4 minutes.
- The topping. In a saucepan, add the butter and honey, and bring to a boil. Remove from heat and let cool. Drizzle over pancakes and enjoy!

- In a separate bowl, mix the eggs, milk, mascarpone, vanilla extract and lemon zest together. Add warm brown butter and mix for a minute more—this will help to better incorporate the mascarpone.
- Gently mix the wet ingredients into the dry ingredients. It’s OK if the mixture seems a bit too watery—that’s how it should be.
- Refrigerate for 4 hours and test your batter. Quickly make a small pancake on the stove to see if the consistency feels right. Semolina hydrates slow and steady, so if the batter seems too thick, add a bit more milk and let the mixture sit and soak for a few more hours.

- Use a blender or food processor to combine all ingredients. Blend on medium to high speed for a solid minute to yield a smooth, creamy batter. If you notice anything sticking to the pitcher or bowl, interrupt the blending to scrape down the sides.
- Transfer the batter to a bowl and cover with plastic wrap. Leave to rest for about 10 to 15 minutes, or until the batter appears light and foamy with lots of tiny bubbles.
- Heat a nonstick crepe pan over medium heat. When hot, stir the beghrir batter with a ladle, then slowly pour some batter into the center of the pan, allowing it to spread outward into a circle on its own. (Don't swirl the pan as you would for a crepe.)
- Cook the pancake without turning until set with no wet spots, about one to two minutes. (You can test the pancake by touching it lightly; it should feel spongy and no batter should stick to your finger.) Transfer it to a clean towel to cool.

- Place all the ingredients into a blender and puree for 1 minute. Pour the batter into a medium bowl, cover with a kitchen towel, and let stand at room temperature until bubbly on top (15 to 20 minutes). The consistency of the batter should be thin like crepe batter or whipping cream (See Note 1).
- Preheat a non-stick griddle or skillet over medium heat for 2 minutes. Stir the batter, and using a 1/4 cup, pour batter into skillet and cook until holes form and the baghrir feels dry to the touch, about 2-3 minutes. Be careful to watch heat and lower if they get too dark around edges before they're dry on top. Baghrir is only cooked on one side, do not flip. Transfer each pancake to the baking sheet and keep warm in the oven while you cook the remaining batter.
- Serve warm or room temperature with melted butter and honey drizzled on top. For a sweeter option, spread 1 tablespoon of Nutella on top and roll the pancake up to eat by hand.
