One 15 1/2-ounce can pinto beans, drained and rinsed
3 tablespoons extra-virgin olive oil
1/2 medium onion, chopped
4 cloves garlic, minced
1 teaspoon ground coriander
1/2 teaspoon ground cumin
2/3 to 1 cup chicken broth, homemade or low-sodium canned
Kosher salt and freshly ground black pepper

1 tablespoon chopped fresh coriander (cilantro) (optional)

Steps:

  • Reserve about a third of the beans. Mash the rest of the beans in a medium bowl with a large fork. Set aside.
  • Heat the oil in a medium skillet over medium-high heat. Add the onion, and cook until lightly browned, about 4 minutes. Add the garlic and continue to cook, stirring, until lightly browned. Add the spices and cook until fragrant about 1 minute.
  • Add the mashed beans and half the broth; cook, stirring frequently, until slightly thickened, about 5 minutes. Add the reserved beans and the enough of the remaining broth to loosen up the beans. Simmer until the beans are thick but not pasty, about 2 minutes more. Season with salt and pepper to taste. Stir in the fresh coriander, if desired, and serve.

1/4 cup butter
1 tablespoon soy sauce
1/2 cup cheddar cheese, shredded

Steps:

  • In a small saucepan, bring Beans to a boil.
  • Drain excess liquied and discard.
  • Put Beans in a medium size bowl and beat with electric mixture until mashed.
  • Stir in Onion, Butter and Soy Sauce.
  • Return bean mixture to small saucepan over low heat and stir until heated through.
  • Stir in Cheddar Cheese.

After trying some of the refried beans recipes from this site, I will never again eat them from a can. However, the recipes I enjoyed were time consuming. This recipe is a marriage between scrumptious home made and easy (like canned).

2 (15 ounce) cans pinto beans, drained
4 tablespoons butter
1 teaspoon salt
1/4 cup salsa
1 cup cheddar cheese or 1 cup Mexican blend cheese

Steps:

  • Place first four ingredients in a medium sauce pan over medium heat.
  • Cook until the butter is melted and the ingredients are heated through.
  • Remove pan from the heat source, and add the cheese.
  • Mash all of the ingredients in the pan with a potato masher or beat with a hand-held mixer.
  • Add salt and pepper to taste.

2 (16 ounce) cans pinto beans (undrained)
1 (10 ounce) can Ro-Tel tomatoes (undrained)
1 (4 ounce) can diced green chilies (undrained)
1/2 cup chopped frozen onion (or saute 1/2 cup diced onion in a little oil until soft)
1 teaspoon minced fresh garlic (or use garlic powder to taste)
1 (12 ounce) bottle mexican beer (don't substitute. If you like your beans a little thicker use only half the bottle)
1/3 cup bacon bits
1/4 cup fresh cilantro leaves, finely chopped
1 fresh lime, sliced into wedges (optional)

Steps:

  • In a medium pot, over medium-high heat, combine all of the ingredients except the cilantro leaves and lime wedges.
  • Bring to a boil, reduce heat to medium-low and simmer about 20 minutes.
  • Stir in cilantro and serve with lime wedges.
  • NOTE: I serve mine in individual bowls topped with some shredded Monterey Jack cheese-Yum!).

2 (15 ounce) cans pinto beans, including liquid
1 tablespoon olive oil
5 green onions, white and pale green parts chopped (1/4 cup)
1 tablespoon ground cumin
2 garlic cloves, minced (2 tsp.)
1 tablespoon lime juice
2 teaspoons lime zest
4 tablespoons cilantro, chopped

Steps:

  • In a large bowl, mash pinto beans and liquid. (You may leave some beans whole, or mash until smooth if you prefer a creamier texture).
  • Heat olive oil in large nonstick skillet over medium heat.
  • Add green onions, cumin, and garlic, and cook 1 minute, stirring frequently.
  • Stir in mashed beans (mixture will be soupy).
  • Increase heat to medium-high, and cook beans 10 minutes, or until they thicken and will hold their shape on plate, stirring frequently.
  • Remove pan from heat. Stir in lime juice and lime zest, and season with pepper.
  • Top with cilantro for serving.

1 (1 lb) package dried pinto bean
4 cups water
1/4 cup bacon grease (optional)
3 teaspoons garlic powder
2 tablespoons chicken bouillon powder
1 tablespoon american chili powder

Steps:

  • Put beans and water into Dutch oven.
  • Soak at least six hours.
  • Pour beans into colander and rinse thoroughly.
  • Add two cups water back into the Dutch oven, along with bacon grease, garlic powder, bouillon and chili powder.
  • Bring to a boil.
  • Cover and reduce heat, simmering for about four to six hours.
  • Stir occasionally.
  • You'll know when the frijoles are done because they'll be very tender.
  • Mash until about only half are left whole.

1 (40 ounce) can pinto beans
1/2 tablespoon chili powder
1/2 teaspoon dried cilantro
1/2 teaspoon oregano flakes
1/2 teaspoon ground cumin
1/4 teaspoon garlic salt
1/2 tablespoon of minced onion
1/4 teaspoon fresh ground black pepper
1/4 teaspoon red pepper flakes
1/2 teaspoon of juice from jarred jalapeno
1 dash cayenne pepper
1 tablespoon extra virgin olive oil
1/4 cup milk

Steps:

  • Take the can of beans and drain it until there is about 1/3 of the liquid left in the can. Pour into large nonstick skillet and add the olive oil and all the seasonings. Turn the burner up to high and stir everything until well mixed. Wait until the beans have come to a boil and then lower the heat to a little more than low.
  • Leave the beans simmering for about 15-20 minutes Once the liquid that we left in the beans starts to almost dry out completely time to add the milk. Take a potato masher and mash the beans until they are at the consistency that you prefer. I like to mash until I've mashed almost every last beans. Turn off the burner and they are ready to serve inside your favorite burrito or alongside your favorite mexican dish.
