SEE'S FUDGE CANDY (THE " ORIGINAL" RECIPE!)
This is the original See's fudge recipe I found when I did a Google search HISTORICAL NOTE: Given to Amy DeVore by Emma Julian c. 1930, this is "supposedly" the original recipe for See's Fudge, produced by the See's Candy Company, Los Angeles. Emma allegedly worked for See's and later owned her own candy store.

- No one has attempted a calorie count, but it's estimated that each piece contains about 47 gazillion calories. Dieters, beware!
FUDGE RECIPE LIKE THE FAMOUS SEE'S CANDY STORE
4 years ago I worked the Christmas season at See's Candy Store. I was the greeter, passing out candy, etc. When the season was over I was given the SEES's Book, with two pages signed by my co-workers. Also the recipe by the manager for Fudge made with the Famous SEE's semi-sweet CHOCOLATE CHIPS! I have seen a few recipes...

Tried and true, this is the fudge you remember from growing up, and probably the only fudge recipe you'll ever need. It's got just the right bite to it and the perfect sweetness.

Steps:
- Combine the chocolate chips, marshmallow cream, butter, vanilla, and walnuts in a large heat-proof bowl and set aside. In a heavy saucepan over medium-high heat, combine the sugar and evaporated milk. Stir well to dissolve the sugar and bring to a boil. Boil briskly for exactly 9 minutes after the mixture comes to a boil, stirring constantly. Remove the pan from the heat and stir the milk mixture into the ingredients in the large bowl. Mix well until the chocolate melts and the mixture is a uniform color. Spread the fudge into a buttered pan and place in the refrigerator until set. Slice into small squares and serve. You can freeze the fudge for 2-3 months. cook's notes The original copycat recipe had vague amounts based on old standards for ingredient sizes. We've updated the ingredient list and clarified the instructions to fit with more modern times.

Steps:
- Line a 9x13 baking dish with foil or parchment paper. This makes it easier to remove the fudge and cut it. This makes a full 9x13 pan of fudge so if you want shorter pieces you could use a bigger pan.
- Place chocolate chips, marshmallow cream, butter, vanilla, and nuts in large bowl. Set aside for later.
- Pour sugar and evaporated milk in a very large pot. You need a larger pot than you think because when the mixture boils is will expand a lot. Bring mixture to a boil and boil briskly over medium high gear for 7 minutes stirring continuously. Remove from heat and pour into the bowl containing the first mixture. Mix until incorporated completely. Work quickly because fudge will start to set up. Pour into prepared pan and refrigerate until set. See notes if it doesn't set up or separates.
- Slice into squares and serve. You can prepare this ahead of time and freeze if desired.
