This recipe was given to me by a friend several years ago. It's easy to make and always a hit! Co-workers beg for it, and it's my husband's favorite!

Steps:
- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
- Line the bottom of the prepared baking dish with crescent roll dough, and sprinkle with crumbled sausage. In a large bowl, mix beaten eggs, mozzarella, and Cheddar. Season the mixture with oregano, and pour over the sausage and crescent rolls.
- Bake 25 to 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean.

- Heat oven to 350°F.
- Spray 13x9-inch baking dish with cooking spray. Cover bottom with bread slices, cutting if necessary to form even layer. Top with layers of sausage, vegetables and 1/2 cup cheese.
- Pour eggs over ingredients in baking dish; sprinkle with remaining cheese.
- Bake 25 min. or until knife inserted in center comes out clean. About 5 min. before casserole is done, heat gravy as directed on label.
- Cut casserole into 8 pieces. Serve topped with gravy.

- Heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
- Beat eggs in a large bowl; stir in milk, salt, and mustard. Fold bread cubes, Cheddar cheese, and sausage into egg mixture. Pour into a lightly greased 7x11-inch baking dish. Cover and refrigerate for 8 hours or overnight.
- Preheat oven to 350 degrees F (175 degrees C). Remove casserole from the refrigerator 30 minutes before baking.

Mozzarella, or any other cheese of your choice, may be substituted for cheddar. Egg Substitute (2 cups) may also be substituted for whole eggs for a healthier version.

- In large bowl, beat together eggs, cottage cheese, milk, oregano, garlic powder, salt and pepper.
- Squeeze excess moisture from spinach. Stir spinach, Cheddar cheese, patties and onions into egg mixture. Pour into 9 x 13 x 2 inch baking dish, coated with cooking spray. Bake at 325 degrees F for 35 to 40 minutes, or until set. Let stand 10 minutes before serving.

- Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by-13-by-2 casserole dish. In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with cheese. Stir together half-and-half, dry mustard, salt and eggs. Pour this mixture over cheese and bread. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight. The next day, preheat the oven to 350 degrees F. Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

This is a wonderful breakfast casserole that will feed many. We have it every year for Christmas brunch. The family will not allow me to make anything else. - Toss the potatoes with the vegetable oil in a bowl until potatoes are well coated. Press the potatoes into a 10-inch pie pan to create a crust.
