1 pound cherry tomatoes, halved (about 3 cups)
.5 cup pitted Castelvetrano olives, quartered
.33 cup chopped fresh flat-leaf parsley (from 1 bunch)
2 tablespoons nonpareil capers, drained and chopped, plus 1½ tablespoons caper brine
5 tablespoons olive oil, divided
1.25 teaspoons kosher salt, divided
.75 teaspoon freshly ground black pepper, divided
4 7-oz. tuna steaks (about 1 in. thick)
1 shallot, finely chopped (¼ cup)
2 tablespoons sherry vinegar
1 teaspoon whole-grain mustard

Steps:

  • Stir tomatoes, olives, parsley, capers and brine, 1 tablespoon oil, and ¼ teaspoon each salt and pepper in a bowl until well combined. Let stand at room temperature until tomatoes start to release their juices, about 10 minutes.
  • Meanwhile, heat 1 tablespoon oil in a large cast-iron or nonstick skillet over medium-high until shimmering. Season tuna steaks with remaining 1 teaspoon salt and ½ teaspoon pepper. Add tuna to skillet and cook, flipping once, until desired degree of doneness, 1 to 1½ minutes per side for rare. Transfer to a plate.
  • Reduce heat to medium and add shallot to skillet; cook, stirring constantly, until softened, about 30 seconds. Remove skillet from heat and stir in vinegar, mustard, and remaining 3 tablespoons oil.
  • Cut tuna across the grain into ½-inch-thick slices. Serve tuna with tomato-olive relish. Drizzle with warm shallot vinaigrette.

3 tablespoons extra-virgin olive oil
3 large garlic cloves, thinly sliced
1/2 cup red onion, thinly sliced
1 1/4-1 1/2 lbs albacore tuna, cut into 1-inch wide strips
1 tablespoon fresh basil, minced
1 tablespoon of fresh mint, minced
1 teaspoon fresh oregano or 1 teaspoon marjoram, minced
salt and pepper
1 cup tomatoes, chopped, seeded, and peeled if you like
1/2 cup kalamata olives or 1/2 cup other dark olive, pitted if you like
1 tablespoon capers, drained
1 pinch red pepper flakes (to taste)
minced fresh basil
minced of fresh mint

Steps:

  • Heat the garlic in the oil over low heat until it turns pale gold, about 15 minutes. Remove garlic with a slotted spoon to a small bowl.
  • Increase the heat to med-high and add the red onions. Cook for 2 minutes. Add the tuna strips. Increase the heat to high and quickly sear the fish on all sides, while seasoning it with the basil, oregano, and mint. Cook until the fish is done to your liking, 2 to 5 minutes. Remove fish to a hot platter or warm oven.
  • Return the garlic to the skillet. Add the tomatoes, olives, capers, and red pepper flakes. Cook for just a minute, stirring occasionally. Spoon over fish.
  • Garnish with the remaining basil and mint.

6 medium garlic cloves, thinly sliced

1 pint cherry tomatoes, halved or 1 (28-ounce) can whole, peeled tomatoes, chopped

Steps:

  • Cook pasta in large pot of rapidly boiling water until al dente or done to your liking.
  • Meanwhile, prepare the sauce. Place olive oil and the garlic in a large saute pan and turn heat to medium. Cook until the garlic is fragrant and lightly golden. Add capers, anchovies, olives, and tomatoes. Cook until the tomatoes start to break down and become a sauce, about 8 minutes. Toss with cooked pasta. Add parsley and tuna and season, to taste, with salt and pepper. Serve immediately.

4 fresh tuna steaks, each about 8 ounces and 3/4 inch thick
Extra-virgin olive oil, to coat tuna
Salt and freshly ground black pepper
4 tablespoons (1/2 stick) unsalted butter, room temperature
2 tablespoons capers, rinsed and dried
1 tablespoon finely diced red and/or yellow pepper
1 large bunch fresh arugula

Steps:

  • Rub tuna with olive oil, salt, and plenty of pepper. Set aside to marinate for at least 20 minutes.
  • In a small bowl, combine butter, capers, and diced peppers. Turn mixture onto a square of parchment or wax paper, and roll into a log about 1/2-inch in diameter. Refrigerate until firm, about 30 minutes.
  • Heat an iron skillet slowly over low heat until very hot (a few drops of water splashed in the pan should evaporate almost immediately). Arrange tuna in skillet, and cook for about 5 minutes on each side. It should be well browned and crisp on the outside and rare to medium on the inside.
  • Arrange arugula on plates or platter. Place tuna on top with a slice of caper butter on each steak. Serve immediately.
