EASY (AND TASTY) MEATLOAF
This is the meatloaf recipe my family has used my whole life. I love it! Of course, we have to double to whole recipe, using 2 to 3 pounds ground beef, the whole package of onion soup mix, and a 12 fluid ounce can of Carnation evaporated milk. This is good with baked potatoes and some Bush's baked beans. (or any other vegetables: corn, peas...) I hope you like it!

Steps:
- Heat oven to 350 degrees.
- In 8 by 4 inch loaf pan, combine first 3 ingredients; mix well (mixture will be very moist) Press evenly in pan.
- Combine brown sugar, mustard, and ketchup in a small bowl. (We seem to double -- or triple the topping- It is so good!) Spoon over mixture.
- Bake for 45 minutes.
- Using spatulas, lift meat loaf from pan to a serving plate. (Because it will be in lots of liquid, mostly water if using lean ground beef).
- Enjoy!
EASY ONION MEATLOAF
I believe you are a meatloaf person or you aren't; simple. I also believe the best meatloaf is the one you grew up on; others just seem to taste not quite right. I haven't found the one my family eats on here. After trying several others, I keep coming back to my Mom's. It's not necessarily better but it's the one I grew up on and that makes all the difference in the world. Meat, onions, gravy and a big pile of ketchup on the side for dipping, yum.

- Preheat oven to 350 degrees Fahrenheit.
- Mix ground beef, onion soup mix, egg, and evaporated milk together. The texture should be very mushy with a lot of moisture. (6 oz. evaporated milk is usually enough but you could use a 12 oz. can, adding as you mix and save the leftover evaporated milk).
- Form meat mixure into a loaf and place in a baking pan.
- Bake until meat is done, about 45 minutes.
- Drain off some of the excess juice/grease.
- Top meatloaf with the jar of gravy; put pan back in oven to heat gravy through, about 5 minutes.

- For the meatloaf: Preheat the oven to 350 degrees F.
- Pour the milk over the bread and allow it to soak in for several minutes. Place the ground beef, milk-soaked bread, Parmesan, salt, some pepper, seasoned salt and parsley in a large mixing bowl. Pour in the eggs. With clean hands, mix the ingredients until well combined.
- Form the mixture into a loaf shape on a foil-lined broiler pan, which will allow the fat from the meat to drain.
- Lay the bacon slices over the top, tucking them underneath the meatloaf to give the meatloaf some support.
- Next, make the tomato sauce: Pour the ketchup into a bowl. Add the brown sugar and dry mustard, and splash in the hot sauce and Worcestershire sauce. Stir the mixture until well combined. Pour one-third of the sauce over the top of the meatloaf.
- Bake for 45 minutes, and then pour over another one-third of the remaining tomato sauce over the meatloaf. Bake for an additional 20 to 25 minutes; the meatloaf should be no longer pink in the middle. Allow to sit 10 minutes before serving.
- Serve with the remaining tomato sauce on the side as a dipping sauce.

- Melt the butter in a large saucepan and add the onion, celery, pepper, spring onions, garlic, parsley, chili sauce, Worcestershire sauce and bay leaves. Cook over a gentle heat, stirring occasionally, for about 6 minutes. Add the evaporated milk and ketchup and continue to cook for a further 2 minutes. Remove from the heat and allow to cool. Discard the bay leaves. Preheat the oven to 350° F (180°F.) Place the beef and pork in a large bowl, add the eggs, breadcrumbs and vegetable mixture, and season. Place the mixture in an un-greased roasting dish and bake for 25 minutes. Raise the temperature 400°F and bake for a further 35-40 minutes. Serve from the roasting dish.

- Preheat the oven to 350 degrees. Lightly grease a 9x13 pan.
- In a large mixing bowl, knead together the ground beef, onion, bread crumbs, milk, egg, Worcestershire sauce, salt, basil, oregano, pepper, and red pepper flakes.
- Shape the meat into a loaf and put it into the prepared pan. Bake in the 350 degree oven for 45 minutes.

THE ORIGINAL DONAIR FROM THE EAST COAST OF CANADA
In the early 70's, a Greek restaurateur in the city of Halifax introduced the Donair. Within a few short years, virtually all pizzerias had added their version of the dish to their menus. Not to be confused with gyros, the Donair has a vastly different flavor. Originally the dish was made with ground lamb, but this proved too costly and ground beef was later substituted. Technically, this resulted in an aberration of sorts, as the final product was not what the originator had intended. What resulted, however, is the legendary East Coast Donair.

- In a bowl, thoroughly mix together the ground beef, black pepper, onion powder, garlic powder, salt, paprika, cayenne pepper, and oregano. Pack the spiced meat into a thick loaf shape, cover, and let rest in the refrigerator overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Place the meat loaf onto a baking sheet, and bake for 1 hour, flipping the loaf over halfway through cooking. Allow the meat loaf to cool so it holds together for slicing.
- Mix together the evaporated milk and white sugar in a bowl, stirring until the sugar is dissolved, and then add the vinegar by teaspoons, mixing together after each addition, to taste. Refrigerate the sauce until serving.
- Slice the meat loaf into 1/4-inch thick slices, and brown the slices in a skillet over medium heat until both sides are brown and crisp, about 5 minutes per side.
- Sprinkle the pita bread rounds with a little water, and press each onto a heated skillet to warm up.
- To serve, place several slices of meat into a warmed pita bread, and spoon about 2 tablespoons of sauce over the meat. Roll the pita bread into a cone shape, wrap in aluminum foil to keep the sauce from dripping out, and serve.
