5-MINUTE SEARED AHI TUNA

- Pat the tuna dry. Sprinkle liberally with kosher salt and fresh ground black pepper on both sides.
- Heat the olive oil in a medium skillet over medium high heat. Add the steak and cook 1 to 2 minutes per side, until lightly browned on the outside but still rare the inside. Slice the tuna against the grain into 1/2 inch slices. Serve immediately.

MARINATED SEARED TUNA
Steps:
- In a flat, shallow dish, combine the soy, rice vinegar, sambal, white and light green scallions, garlic and ginger. Add the tuna and roll around to get the marinade on all sides. Cover and let sit in the fridge for up to 2 hours, turning the tuna periodically.
- Remove the tuna from the fridge and let sit in the marinade outside of the fridge for 20 to 30 minutes.
- When the tuna has come to room temperature, remove it from the marinade. With a paper towel, gently remove some of the excess marinade.
- Coat a large saute pan with peanut oil and bring it to a VERY high heat. When the pan is VERY hot but not quite smoking, pull the pan off the heat and add the tuna to the pan. Return the pan to the heat and sear the tuna for 1 minute on each side.
- Remove the tuna from the pan, let rest for 4 to 5 minutes and slice into 1/4 to 1/2-inch thick slices. Sprinkle with the dark green sliced scallion tops.
- Serve immediately with a little extra soy on the side if desired.
SESAME SEARED TUNA AND SUSHI BAR SPINACH SALAD
This recipe is dedicated to the other side of the sushi bar menu, where after you work your way through the nigiri and sushi rolls, you discover things like tuna tataki and cold, Japanese-style spinach salad. While I can't promise authenticity, I can promise this is fast and simple to make - and I think, extremely delicious.

Steps:
- Place spinach in a dry pot set over medium-high heat and cook, stirring, until it just begins to wilt, 1 to 2 minutes. Transfer into a strainer to cool.
- While spinach cools, toast white sesame seeds in a dry pan over medium heat until light golden brown. Transfer into a mortar and pestle and crush into a very coarse paste, leaving some seeds whole. Add white sugar, soy sauce, and mirin. Stir with a wooden spoon to combine and reserve.
- Transfer cooled spinach to a towel and squeeze out any excess liquid. Chop roughly and add to a mixing bowl. Add the dressing and mix well. Cover and chill thoroughly before serving.
- Mix mayonnaise, miso paste, and rice vinegar together for miso mayo sauce. Place in the refrigerator until needed.
- Lightly salt tuna steaks, and then coat all sides well with as many sesame seeds as you like, pressing them lightly as you do.
- Brush a nonstick pan with oil and place over medium heat. Sear tuna steaks in the hot pan for 30 to 45 seconds on each side, as well as each edges.
- Slice and place tuna over the miso sauce. Brush tuna with ponzu and serve with spinach salad on the side.

SEARED TUNA 'SUSHI'

- Wipe steaks dry with paper towels. Mix pepper, salt and five- spice powder together and coat outside of tuna. Leave for about 30 minutes.
- Preheat grill or broiler. Sear the tuna over very hot coals for about two minutes on the top and on the bottom. Pass the sides over the coals for a minute. Cool the tuna and serve, passing the soy sauce, ginger and wasabi paste separately.

- Cut tuna steak in half.
- Pour soy sauce into shallow container and place tuna into soy sauce for 10 minutes. Flip pieces over and allow to sit in soy sauce for another 10 minutes.
- Pour both types of sesame seed into a small plate and coat tuna on all sides by pressing the tuna into the seeds.
- Put olive oil into pan and heat until it reaches smoking point.
- Sear tuna on all sides for five seconds. Seeds are very likely to pop from the heat.
- Pull tuna from pan and allow to rest for 10 minutes.
- Slice thinly and serve.

SEARED TUNA WITH JAPANESE SALSA

- Mix all the ingredients for the sauce. Add the chopped tomato, cilantro and onion. Season the tuna very well with salt and pepper. Heat a large skillet over high heat and add the vegetable oil. When the oil is hot, sear the tuna for 30 seconds on each side. Remove from heat and slice the tuna into 1/4-inch slices. To serve, neatly arrange the tuna slices and avocado slices on a plate and drizzle the sauce over the tuna.

- Mix all ingredients.
- ===Albacore.
- Thaw tuna loin completely in refrigerator and let come to room temperature before cooking. Sprinkle salt and pepper on the fish and press it in with the hands.
- Heat 3 Tbl grapeseed oil in a nonstick skillet over high heat until hot but not smoking.
- Place the tuna in the hot oil and sear on each side to desired doneness. (Check the ends or slice through the middle to check doneness.).
- Remove the tuna loin to a heated platter and slice into 1/2 or 1-inch slices as desired.
- Serve with the sauce, accompanied with rice and sautéed greens.
