SEARED SALMON WITH CREAMY WHITE WINE MUSHROOM SAUCE

Seared Salmon With Creamy White Wine Mushroom Sauce image

This seared salmon is nicely complemented by a creamy, lemony white wine mushroom sauce, flavored with thyme and dill weed. Lovely served with steamed asparagus and crusty bread to soak up extra sauce. Using light butter and fat free half and half in the sauce will yield great results and lower calories.

Provided by Heather U.

Categories     < 60 Mins

Time 50m

Yield 4 serving(s)

Number Of Ingredients 20

1 lb salmon fillet
1/2 teaspoon dried dill weed
salt, to taste
pepper, to taste
cornstarch, for dredging (aka corn flour)
1 teaspoon extra virgin olive oil
1 teaspoon butter
1 teaspoon extra virgin olive oil
1/4 cup onion, chopped
2 cloves garlic, minced
4 ounces button mushrooms, sliced
1/2 teaspoon dried dill weed
1/2 teaspoon dried thyme
3 tablespoons fresh lemon juice
1/2 cup white wine
1/2 cup half-and-half or 1/2 cup light cream
1/4 teaspoon xanthan gum or 1 tablespoon cornstarch (used as a thickener)
fresh parsley
fresh dill weed
lemon slice

Steps:

  • PREP THE SALMON: Rinse and dry the salmon filet; divide into four portions; sprinkle with 1/2 tsp dill weed, salt and pepper to taste; then dredge in the cornstarch and set aside for 15 minutes while you prepare the sauce.
  • PREPARE THE SAUCE: Heat a nonreactive saucepan over medium heat and add 1 tsp olive oil; when oil is hot, add the onion and garlic and saute until onion is translucent.
  • Add the mushrooms, dill weed, and thyme, and saute until mushrooms have released their liquid.
  • MEANWHILE: Preheat oven to 400 degrees F; Heat a heavy, oven-proof skillet (cast iron preferred) over medium high heat.
  • RETURN TO SAUCE: Combine the lemon juice and wine (and cornstarch if not using xanthan gum), and add to the mushroom mixture; Bring to a boil, then simmer on low heat for 5 minutes; Remove from heat and set aside.
  • SEAR THE SALMON: Place 1 tsp each olive oil and butter in the hot skillet; Swirl around to coat the bottom; Place the salmon filets in the skillet (skin side up), and sear for about 3 minutes, or until a nice brown crust has formed.
  • Carefully turn the filets over so the skin side is now down; Then set the skillet in the preheated oven and roast for about 8-10 minutes, or until center is cooked through; remove from oven and set aside to rest.
  • FINISH THE SAUCE: Place the mushroom wine mixture in a blender or food processor along with the 1/2 cup of half and half and xanthan gum; blend until smooth and thickened; microwave as needed to re-heat but do not allow to boil.
  • SERVE salmon with sauce on the side; garnish with fresh parsley, slices of lemon, and dill weed, if desired.

SEARED SALMON WITH CREAMY LEEK SAUCE

Seared Salmon with Creamy Leek Sauce image

Crisp Sugar Snap Peas, lemony Rice Salad, and an arugula garnish offset the richness of this salmon with creamy leek sauce.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Salmon Recipes

Number Of Ingredients 11

3 tablespoons unsalted butter
3 medium leeks, white and light-green parts only, washed well and sliced into 1/2-inch rounds (about 1 1/2 cups)
1/3 cup dry white wine
1/3 cup heavy cream
3 tablespoons finely chopped fresh chives
Coarse salt and freshly ground pepper
1/4 cup Homemade Chicken Stock
1 tablespoon extra-virgin olive oil
4 six-ounce salmon fillets
Arugula, washed well and dried, for garnish
Lemon wedges, for garnish

Steps:

  • Melt butter in a medium skillet set over medium-low heat. Add leeks; simmer, stirring occasionally, 5 minutes. Add wine, and simmer until leeks are very tender, about 4 minutes. Add cream and 2 tablespoons chives; return to a simmer. Season with salt and pepper. Reserve half; transfer remaining mixture to jar of blender. Add chicken broth, and puree until leek sauce is smooth.
  • Meanwhile, heat oil in a large saute pan over medium heat. Season fillets with salt and pepper; place in pan skin side down. Cook until skin side is well browned, about 5 minutes. Turn over, and saute just until fish is cooked through, 3 to 6 minutes more; it should still be slightly pink in the center. Transfer to a platter.
  • Serve salmon with leek sauce. Garnish with reserved leek mixture, remaining chives, arugula, and lemon wedges.

PAN SEARED SALMON WITH WHITE WINE BUTTER SAUCE RECIPE BY TASTY

Pan Seared Salmon With White Wine Butter Sauce Recipe by Tasty image

Here's what you need: fresh Atlantic salmon, salt and pepper, extra virgin olive oil, unsalted butter, shallots, garlic, large lemon, caper, italian parsley, rainbow tomatoes, dry white wine, fresh baby spinach

Provided by Sarah Mahilum

Categories     Lunch

Time 30m

Yield 4 servings

Number Of Ingredients 12

1 ½ lb fresh Atlantic salmon, skin-on
salt and pepper, for seasoning
2 tablespoons extra virgin olive oil
8 tablespoons unsalted butter
2 shallots, diced
5 cloves garlic, minced
1 large lemon, halved, leave one half as is and slice the other half
2 tablespoons caper
1 bunch italian parsley, finely chopped
16 oz rainbow tomatoes, halved
8 oz dry white wine
2 cups fresh baby spinach

Steps:

  • First prepare the salmon by seasoning the fleshy side with salt and pepper. Then, set aside.
  • Next, heat your cast iron pan on the stove on a medium heat. Once your cast iron or pan is heated, add in the olive oil and 4 tbsp of butter.
  • When the butter has melted, place your salmon into the pan - skin side down first. DO NOT touch or move the salmon around. Leaving the salmon alone will allow the skin to cook and become crispy.
  • After about 3 minutes, use your turner to check if the salmon separates from the pan without resistance. If it doesn't, continue to let it cook for another 2 minutes. If you're able to slide and lift the salmon from the pan with nothing sticking, it's time to flip.
  • Continue to cook the salmon, flesh side down now, for an additional 3-5 minutes - or until you reach an internal temp of about 140°F. Fahrenheit.
  • Remove the salmon from the pan and place onto a serving dish. Next, reduce heat to medium and add shallots and garlic. Saute until fragrant and to this, add the juice from half of a lemon.
  • Add in capers, parsley, tomatoes, and white wine and mix well to combine.
  • Add remaining 4 tbsp butter and mix. Then lower heat and simmer for 5-10 minutes.
  • Add spinach and cook until spinach is slightly wilted. Season with salt and pepper to taste.
  • Finally, plate salmon and garnish with lemon slices. Top with sauce and veggies. Serve.

SALMON FILETS WITH CREAMY, WHITE WINE/CRAB-MEAT SAUCE

Salmon Filets With Creamy, White Wine/Crab-Meat Sauce image

The other night after dinner, the conversation was something like this. "Did you just make up this recipe?".... "Yes, I did." Then, you should share it with your "recipe- people"....That is what you ZAARians are "recipe-people"....Served with your favourite dry white wine, this recipe can be adapted to any thick-fleshy fish fillet....remember to leave the fish skin on for the cooking process....Remember to use shallots in this recipe, not white or green onion...shallot flavour is more distinctive, and compliments the other ingredients, without being overpowering.

Provided by TOOLBELT DIVA

Categories     Crab

Time 1h

Yield 2 serving(s)

Number Of Ingredients 9

2 salmon fillets, with skin
0.5 (6 1/2 ounce) package crabmeat, chopped coarse
1 -2 shallot, chopped coarse
1/4 cup extra virgin olive oil
1 1/2-2 1/2 tablespoons butter
1/4 teaspoon Old Bay Seasoning
1/2 cup milk (not canned milk) or 1/2 cup whipping cream (not canned milk)
1/4 cup dry white wine
flour or cornstarch, for thickening

Steps:

  • Clean and pat dry salmon filets- set aside.
  • Drain chopped crab meat- set aside.
  • Use your favourite pan which is large enough to accommodate all of the ingredients, when finished.
  • Heat olive oil and butter in pan- medium heat (you don't want to burn the liquid).
  • Clarify coarsely chopped shallots; remove from pan and set aside.
  • To the pan, add coarsely chopped crab meat; fast-fry until slightly brown; remove from pan and set aside.
  • At this point, you may need more oil or butter-- you be the judge.
  • Be sure your stove burner is set medium, to medium-low-- olive oil and butter heat through at low temperature.
  • Add salmon filets, skin side down, to the pan, and cover.
  • Allow filets to cook, skin side down, until the flesh is pink- approximately 10 minutes.
  • Carefully turn the filets over, and allow to cook until the topside is nicely browned- approximately 5 minutes.
  • Remove salmon filets from pan and place on a plate (skin side up) to keep warm-- carefully peel back, remove and discard skin-- cover filets, to keep warm.
  • Prepare the Creamy, White Wine, Crab-Meat Sauce Add flour or corn starch to pan-- whisking constantly-- until all browning juices are absorbed Add 1/2 the quantity of milk, slowly-- whisking constantly-- When mixture is thickened, add balance of milk-- whisking constantly When completely blended, and smooth add crab meat and shallots Mix constantly, (with a mixing spoon) during this cooking process; you want the mixture to be well blended.
  • Add Old Bay Seasoning and mix well-- Add white wine when crab meat mixture is completely blended and well thickened. Mix well to ensure a good blend. Turn off burner and cover pan while you prepare the salmon filets for serving.
  • To serve, place salmon filets on two preheated dinner plates-- Divide crab meat mixture and sauce evenly between the two servings and spoon over Salmon Fillets.
  • Serve with any kind of rice; orzo; baked potato; or just a mixed green salad with an olive oil/ balsamic vinaigrette-- crusty Italian bread or French baguette.

  • Heat oil in a large skillet over medium heat. Pat the salmon fillets dry, then season flesh side with salt and pepper. Sear in the hot oil, skin side down, for ~7 minutes, then flip salmon fillets and sear the flesh side. While the flesh side is down, use a fork to peel the skin off of the top of the salmon. (Searing the skin first makes it easier to remove.) After ~4 minutes, flip again so that both sides have a chance to brown. Once cooked, remove from pan and set aside.
  • The pan should still have some juices in it from the salmon. Add butter to it, and warm over medium heat. Sauté the garlic and onion in the butter.
  • In a separate bowl, combine the half and half, the fat free half and half and the Greek yogurt. Stir until well combined.
  • Once the garlic and onions are cooked, reduce heat to low, and add the crème mixture to the pan, then add the mushrooms and Parmesan cheese. Stir constantly until simmering. Once simmering, add spinach leaves and stir into the sauce, allowing them to wilt and cook. Simmer for a few minutes, stirring occasionally, then add the salmon fillets back to the pan. Spoon the crème sauce over the salmon fillets, add fresh chopped parsley and thyme, and serve.
