This quick version of paella is superhealthy, plus it's all cooked in one pan so there's minimal washing-up

1 tbsp olive oil
1 onion , finely chopped
1 red and 1 yellow pepper , deseeded and sliced
2 garlic cloves , sliced
250g paella rice
850ml hot vegetable stock (we used Kallo very low salt stock)
pinch saffron
400g seafood mix (we used a bag of frozen mixed seafood, defrosted before use)
juice ½ small lemon
small handful flat-leaf parsley , roughly chopped

Steps:

  • Heat the oil in a large saucepan and soften the onion for 6-7 mins. Add the pepper and garlic, cook for 2 mins more, then stir in the paella rice and cook for 1 min, stirring to coat.
  • Pour in the stock, add the saffron and bring to the boil. Cook, uncovered, at a gentle bubble, for 20 mins, stirring occasionally until the rice is tender.
  • Stir in the seafood and lemon juice and cook for 2 mins or until piping hot and completely cooked through. Serve in warm bowls scattered with the parsley.

1 tablespoon olive oil
1 chorizo sausage, sliced
1 onion, chopped
2 garlic cloves, crushed
1 red capsicum, seeded and sliced
2 cups long grain rice
1 teaspoon paprika
1 pinch saffron
2 1/2 cups chicken stock
400 g diced tomatoes
300 g seafood (Mussels, prawns, calamari, salmon, fish pieces etc)
1/2 cup frozen peas
lemon wedge

Steps:

  • Heat oil in pan over medium heat.
  • Add chorizo, onion and garlic.
  • Cook for 2 minutes then add rice, capsicum, paprika and saffron, cook for 1 minute.
  • Pour in stock and tomatoes, season with salt and pepper and stir well.
  • Bring to the boil, reduce heat to low simmer , cover and cook for 15 minutes.
  • Uncover and stir in seafood and cook for further 10 minutes until marinara cooked.
  • Remove from heat and stand for further 5 minutes before serving.
  • Serve with lemon wedge.

I created this recipe to replicate paella for a crowd. I love paella, but it's expensive and not everyone likes the mussels and sausage in it. Serve this dish with a good Spanish wine and some bread and oil and it will be a sure crowd-pleaser!

2 cups water
1 (7 ounce) box Spanish yellow rice mix (such as Goya®)
3 tablespoons olive oil, divided
½ cup diced onion
1 pound uncooked medium shrimp, peeled and deveined
1 green bell pepper, diced
1 red bell pepper, diced
1 tablespoon sweet and spicy seafood seasoning (such as McCormick®)
½ cup fresh parsley, or to taste

Steps:

  • Bring water to a boil in a saucepan. Add rice mix and 1 tablespoon olive oil. Boil for 1 minute; cover and reduce heat. Simmer until water is absorbed, about 25 minutes.
  • Heat remaining olive oil in a skillet over medium-high heat. Add onion and saute until just soft, about 2 minutes. Add shrimp, green bell pepper, red bell pepper, and seafood seasoning. Cook, stirring occasionally, until shrimp are bright pink, about 5 minutes.
  • Mound rice on each plate; top with a portion of the pepper-shrimp mixture and a generous sprinkling of parsley.

2 tablespoons olive oil
1 onion, finely diced
½ tomato, finely diced
1 pinch salt
½ tablespoon smoked paprika
6 fresh romano or green beans
½ cup canned butter beans, drained and rinsed
½ cup white rice
6 large shrimp
6 mussels
6 clams
1 cup white wine
2 cups seafood stock
1 pinch saffron threads
1 teaspoon finely chopped fresh rosemary
1 cup fresh peas
5 baby squid, cut into rings and tentacles
1 lemon, cut into wedges
1 tablespoon chopped fresh flat-leaf parsley

Steps:

  • Heat olive oil in a large skillet or paella pan over high heat. Cook and stir onion, tomato, salt, and smoked paprika into the hot oil until softened, about 3 minutes. Add romano beans, butter beans, and rice; cook and stir until rice is coated with oil, 2 to 3 minutes.
  • Place shrimp, mussels, and clams over the top of the rice mixture. Pour in white wine and seafood stock; sprinkle in saffron threads and rosemary. Bring mixture to a simmer. Turn shellfish and continue to cook until clams and mussels have opened, and shrimp are pink and cooked through, about 5 minutes. Remove clams, mussels, and shrimp and set aside.
  • Stir peas into the paella; simmer, uncovered, until rice is tender and has absorbed the liquid, 20 to 25 minutes. Stir in squid, and return clams, mussels, and shrimp to the pan. Cook until squid is opaque and cooked through, 2 to 3 more minutes. Serve with lemon wedges and chopped parsley.

  • Put a large, heavy pot over medium heat (I use a cast iron pan or a Dutch oven). Add the olive oil and slowly cook the diced onion and pepper until tender and browned (about 10 minutes).
  • Add the rice and stir for a couple of minutes, allowing the rice to coat itself in the oil but making sure it never burns or sticks.
  • Start adding the fish stock little by little. Cover the rice with about 1/2 an inch of stock and stir every couple of minutes. When it looks dry add more stock. It should take about 20 minutes to add it all.
  • Add the shellfish after about 15 minutes. They will cook through and open up before the dish is done. If any happen to remain closed, discard.
