CRUNCHY SHRIMP FRITTERS



Crunchy Shrimp Fritters image

To make these super-tasty and summer-y fritters, juicy shrimp are poached in lemon water and then coated in a batter made with rice flour before being deep fried to golden brown perfection. The rice flour ensures an ultra-crisp coating with a side benefit of making this dish naturally gluten-free!

1 lemon, plus zest and wedges for serving
Kosher salt
12 ounces large unpeeled shrimp (about 10)
Vegetable oil, for frying
3/4 cup white rice flour (such as Bob's Red Mill), plus more as needed
1 teaspoon baking powder
1 teaspoon sugar
3/4 cup seltzer or club soda, plus more as needed
1 large egg, whisked
Tartar sauce

Steps:

  • Grate 1 teaspoon zest from lemon, then cut in half. Place both halves and 4 cups water in a saucepan; bring to a boil and add 1 tablespoon salt. Add shrimp; return to a boil, then reduce heat and simmer until just cooked through, about 1 minute. Drain; let cool 15 minutes. Peel and cut into a 1/4-inch dice (about 1 1/2 cups).
  • Heat 1 1/2 inches oil in a medium heavy-bottomed pot over medium until a deep-fry thermometer reads 350°F. Whisk together flour, baking powder, sugar, 1 teaspoon salt, and lemon zest. Whisk seltzer and egg into dry ingredients. (Batter should have the consistency of thick honey. If too thick, add more seltzer; if too thin, add 1 tablespoon rice flour.) Stir in shrimp.
  • Working in batches, and using two tablespoons (one to scoop, one to scrape), drop batter in oil. Fry, turning occasionally, until cooked through and golden brown, 3 to 4 minutes, adjusting heat as needed to keep oil between 340° and 350°. Transfer to a paper-towel-lined baking sheet; sprinkle with salt. Serve immediately with tartar sauce and lemon wedges and zest.

1 lb baby shrimp, thawed and diced small
1 lb cod or your favorite white fish, cooked and diced small
1 large egg
1/3 c coconut milk, mixed well
1 1/3 c cups regular flour
1 Tbsp baking powder
1 tsp salt
1/2 tsp black pepper
1/3 tsp all spice or five spice powder
1/4 c minced onion
1/4 c red bell pepper, diced small
1/2 tsp celery seeds or salt
3 Tbsp cilantro chopped or parsley
1 tsp lime zest
MARMALADE DIPPING SAUCE
3/4 c mayonnaise not miracle whip
3/4 c orange marmalade jam
1 large lime, juiced and zested
1 tsp lime zest
3 Tbsp cilantro, chopped small or parsley
1 Tbsp red bell pepper, chopped small
2 Tbsp red onion, minced small
1/4 tsp cayenne pepper
1/4 tsp salt
1/8 tsp cracked pepper
1/2 t tsp five spice powder or allspice powder
4 large limes, cut into wedges for garnish

Steps:

  • 1. Combine all ingredients and let them rest in fridge for 15 minutes up to an hour.
  • 2. Heat cooking oil to 360 degrees. Using a small scoop, drop in small batches in the oil, turning as needed to assure they cook evenly.
  • 3. Remove in three to five minutes when lightly browned. Cool, season with salt and pepper or your favorite spice such as Old Bay and serve with dipping sauce.
  • 4. FOR THE DIPPING SAUCE: Combine all the ingredients and refrigerate for at least an hour. Now you are ready to dip your fabulous fritters into your divine dipping sauce and enjoy!

1 cup flour

  • Sift flour, baking powder and salt into bowl. Add egg and sufficient milk to make a smooth batter.
  • Stir fish (or prawns) into batter.
  • Lightly oil frypan. Pour approximately 1/4 cup batter onto hot frypan base and cook over moderate heat until golden.
  • Turn and cook other side.
