Used this on my Thanksgiving ham and everyone loved it! Great for after cooking the ham, as an extra layer of flavor over the sliced ham. I usually make extra for pouring over the sliced ham and this will by itself cover and glaze a 12-pound ham over the course of the whole cook time to keep the ham moist and tasty.

The Best Ham Glaze image

A perfectly glazed ham is often the centerpiece of many holiday celebrations, including Easter and Christmas. Guests swoon over the juicy, savory slices on their plate. The most beautiful ham will have a tangy, sticky-sweet and shiny glaze. After tinkering with many ingredients, we landed on a knock-your-socks-off combination that includes brown sugar, maple syrup, cinnamon and cloves for sweet, warm and slightly smoky notes. Dijon and a splash of apple cider vinegar add tang and zip while soy sauce gives it a great depth of flavor. Rounding out the glaze with brightness are the zest and juice of an orange. We hoped to only brush the ham once during baking, but test after test proved that glazing two more times during the last 30 minutes in the oven brings out the best flavors and creates the most magical sheen.

One 8- to 10-pound fully-cooked bone-in ham
3/4 cup packed dark brown sugar
3/4 cup pure maple syrup
1/4 cup low-sodium soy sauce
Zest and juice of 1 navel orange
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon onion powder
Freshly ground black pepper

Steps:

  • Preheat the oven to 325 degrees F. Let the ham sit at room temperature for 30 minutes and trim off any skin. If your ham is not a spiral-cut ham, use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat.
  • Place the ham, flat side down, on a roasting rack in a roasting pan. Pour 1 cup water into the pan. Bake until a thermometer inserted into the thickest part of the ham registers 130 degrees F, about 2 hours 30 minutes (about 15 minutes per pound-reduce the time to 10 minutes per pound for a spiral-cut ham).
  • Meanwhile, make the glaze: Whisk the brown sugar, maple syrup, soy sauce, orange zest and juice, Dijon, vinegar, cinnamon, cloves, onion powder and a few grinds of black pepper in a medium saucepan until smooth. Bring to a boil over medium-high heat, whisking occasionally, then reduce the heat to low and simmer until the glaze has thickened and reduced by half (you should have 1 cup glaze), 20 to 25 minutes. Set aside until the ham is ready.
  • Increase the oven temperature to 425 degrees F. Brush half of the glaze over the ham. If the water in the bottom of the pan has evaporated, add 1 cup water. Return the ham to the oven and roast for 30 minutes, brushing with the remaining glaze every 10 minutes (two more times) before returning to the oven.
  • Let the ham cool for 15 minutes before thinly slicing.

  • Mix well and spread on ham, before putting it into oven.

1/2 cup maple syrup
1/2 cup brown sugar
1/2 cup apple juice
1 tablespoon Dijon mustard
1 fully cooked and smoked spiral half ham

Steps:

  • For Ham: Place ham in roasting pan with 2 ounces water in the bottom of pan.
  • Cover with foil and heat at 350 degrees for 1 hour.
  • Uncover and baste with glaze and heat uncovered for 30 minutes more.
  • For Glaze: Combine 4 glaze ingredients in saucepan and bring to a boil.
  • Boil for 2 minutes (careful not to let it boil over).
  • Glaze ham as directed above.

My brother-in-law previously owned a meat processing plant and is very good at cooking any kind of meat. Using the soda is his technique, and the glaze is something that I came up with just by combining what I thought would be good. We tried it on a 7-lb ham and it was spectacular. We had guests the first time I made it and they raved about it. Be sure to use regular soda as the sugar in the soda is the active ingredient. Diet sodas will not work. We also used Butter-Flavored Maple Syrup, but regular Maple Syrup would be fine--use whatever is in your cupboard! This recipe would work great for a Sunday dinner, holiday entertaining, or a special occasion. It can be adapted for a smaller or larger ham, just adjust cooking times accordingly. Hope you enjoy it!

1 ham (7 lb. uncooked)
2 cups Pepsi (or any dark colored soda -- Coke, Root Beer, etc. NOT DIET)
1/2 cup maple syrup (plain or butter-flavored)
1/3 cup light brown sugar
1 1/2 teaspoons ground cinnamon
1 teaspoon nutmeg

Steps:

  • Preheat oven to 325.
  • Place ham face-down in large roasting pan. Pour soda over ham and cover. Bake ham at 325 for 25 minutes per pound. (7 lbs. comes to 3 hours 25 minutes).
  • 30 minutes prior to the end of baking time, mix syrup, brown sugar, cinnamon, and nutmeg. Microwave on high for 25 seconds. Stir.
  • Brush onto ham liberally, reserving about 1/8 - 1/4 cup glaze.
  • Return ham, uncovered, to oven for 20 minutes.
  • Cover and reduce heat to 200 degrees for remaining 10 minutes. Remaining glaze can be used to glaze sliced ham prior to serving (Glaze may have to be reheated in microwave to maximize "brushability"). Enjoy!

  • Remove ham from the original packaging and throw away the glaze packet and the plastic disk that covers the bone. Place the ham in the large oven bag and tie closed. Cut four slits (about 2 inches each) in the top of the bag. Transfer the bagged ham to a roasting pan and let it sit at room temperature for about 1 1/2 hours.
  • Heat the oven to 300 degrees and bake the ham for 1 1/2 to 2 1/2 hours (until the internal temperature of the ham is about 110 degrees). About an hour into baking, start making the glaze by combining the jelly, 1/2 cup brown sugar, maple syrup, whole-grain mustard, cinnamon and nutmeg in a medium saucepan. Bring the mixture to a boil and reduce the heat to low, simmering, until the mixture is very thick and syrupy, about 45 minutes. Stir often while it simmers (it should reduce to about 1/3 cup). Off the heat, whisk in the butter.
  • Combine the remaining brown sugar and dry mustard together in a small bowl. Remove the ham from the oven and let it sit for 5 minutes. While it rests, increase the oven temperature to 400 degrees. Carefully cut open the oven bag and let it fall to the bottom of the ham so the entire ham is exposed. Using a pastry brush, paint the glaze onto the top and sides of the ham. Carefully press the sugar mixture onto the outside of the ham with your hands. Return the ham to the oven and bake until it is dark brown and caramelized, 14-16 minutes.
