For a fresh and bright variation on your morning eggs, try strapatsatha, a simple Greek dish of scrambled eggs with tomatoes. It's as simple as can be: The best, freshest tomatoes you can find are grated on a box grater and reduced a bit, then scrambled with eggs, a little olive oil and garlic. A handful of tangy feta crumbles finishes it off.

2 large, ripe, firm tomatoes
2 tablespoons extra-virgin olive oil
1 garlic clove, finely chopped (optional)
1 tablespoon fresh or dried mint or oregano
4 large eggs, slightly beaten
1/2 cup grated Greek kefalotyri or feta cheese
Salt and pepper, to taste

Steps:

  • Lop off a dime-size piece of the base of the tomato using a sharp knife. Grate the tomato from the base along the coarse side of an upright hand grater.
  • In a 10-inch frying pan over medium heat, warm the olive oil and add the garlic. Cook for a minute or so, careful not to burn. Add the tomatoes. Cook them until all their water has cooked off and all that's left is thick pulp, about 10 minutes.
  • Pour in the eggs and herbs. Season with salt and pepper. Stir all together with a wooden spoon. Remove when the eggs are cooked to desired doneness, anywhere between 5 and 8 minutes.
  • Transfer to serving plates and sprinkle with grated Greek kefalotyri cheese.

Scrambled eggs might sound basic, but the "best" scrambled eggs have a little something extra. With a few small tweaks and the right technique and temperature, you'll have a breakfast dish that's fluffy, creamy and so silky -- anything but basic!

3 large eggs
1/4 cup heavy cream
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter
1 tablespoon creme fraiche
1 tablespoon chopped chives

Steps:

  • Whisk together the eggs, heavy cream, a pinch of salt and a few grinds of black pepper in a medium bowl until the mixture is homogenous.
  • Melt the butter in a medium nonstick skillet over medium heat. Add the egg mixture, then increase the heat to medium-high. Stir with a rubber spatula until curds begin to form. Lower the heat to low and add the creme fraiche and chives. Stir until the creme fraiche is fully incorporated and the eggs are just set.
  • Transfer to a plate and serve immediately.

I saw a recipe here for Greek Scrambled Eggs and wanted to make them at work, but realized I didn't have all the ingredients so I simplified it. These are a pretty good seller when I put them up on the Specials Board.

2 eggs, beaten
3 -4 tablespoons green peppers, diced
3 tablespoons green onions, chopped
1 -2 tablespoon black olives, sliced (optional)
2 tablespoons feta cheese, crumbled
all purpose Greek seasoning, to taste (optional)

Steps:

  • In a small bowl beat eggs. Add green pepper, green onion and olives (if using).
  • Heat pan and coat with cooking spray or coat with oil.
  • Scramble fry eggs, season with greek seasoning, when almost done top with feta, I usually add a couple tablespoons of water and cover so the feta starts to melt.
  • Serve with toast and or hashbrowns or even rice.
  • When I first started making this I didn't have the greek seasoning, and you can use any color peppers. I think the olives are optional, mostly because I don't like them and I find people around here don't like them either.

1/4 cup water
3/4 teaspoon dried oregano
1/8 teaspoon pepper
2 tablespoons butter
6 ounces feta cheese, cut up
1 medium tomatoes, diced
1/4 parsley, chopped
10 kalamata olives, pitted and chopped

Steps:

  • Cut feta cheese into 1/2 inch chunks.
  • Beat eggs with water, oregano and pepper to blend.
  • Melt butter in a wide skillet with an ovenproof handle, over low heat.
  • Pour in egg mixture. Cook, lifting cooked portion with a wide spatula to let the uncooked eggs flow underneath, until eggs are just softly set.
  • Sprinkle feta cheese evenly over eggs.
  • Put under broiler for about 2 minutes, just until cheese is hot.
  • Sprinkle with tomatoes, parsley & olives.
  • Cut into wedges to serve.

6 -8 large eggs
3 tablespoons of fresh mint, minced
2 tablespoons minced flat leaf parsley
1 teaspoon fresh oregano, minced (or 1/2 tsp. dried oregano)
3 tablespoons scallions, minced
black pepper, freshly ground
1 tablespoon olive oil
2 cups fresh spinach (packed)
3/4-1 cup feta, crumbled
1 cup halved cherry tomatoes (or or ripe tomatoes, diced)

Steps:

  • Break the eggs into a medium bowl and beat with a whisk until smooth. Stir in the herbs and scallion, and add in a good, amount of black pepper.
  • Place a 10-inch sauté pan or skillet over medium heat. After 1-2 minutes, add the olive oil, wait about 10 seconds, then swirl to coat the pan. Turn the heat up to medium-high, add the spinach, and sauté for 2-3 minutes, or until the spinach has wilted and turned a deep green.
  • With the heat at medium-high, pour the eggs into the pan, scrambling them slowly As eggs begin to set, push the curds from the bottom to one side, allowing uncooked egg to flow into the pan. The spinach will blend into the eggs.
  • When the eggs are almost set but still slightly wet, sprinkle in the crumbled feta. Continue scrambling slowly, allowing the cheese to melt slightly into the eggs. After a minute, stir in the tomatoes.
  • Cook for just a few seconds longer, or until the eggs are done to your liking. Serve immediately. Enjoy!

2 large free range eggs
6 tbsp single cream or full cream milk
a knob of butter

Steps:

  • Lightly whisk 2 large eggs, 6 tbsp single cream or full cream milk and a pinch of salt together until the mixture has just one consistency.
  • Heat a small non-stick frying pan for a minute or so, then add a knob of butter and let it melt. Don't allow the butter to brown or it will discolour the eggs.
  • Pour in the egg mixture and let it sit, without stirring, for 20 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan.
  • Let it sit for another 10 seconds then stir and fold again.
  • Repeat until the eggs are softly set and slightly runny in places. Remove from the heat and leave for a moment to finish cooking.
  • Give a final stir and serve the velvety scramble without delay.

I make this almost every weekend. Listed are the veggies I normally use, but honestly I use whatever vegetables are in the refrigerator most mornings. It's a scramble because I have never mastered the omelet but I am sure it would be good that way too! Although it does not have a "Greek Flair" we often top it with a nice red salsa.

1/4 cup bell pepper, finely sliced (green or red)
2 garlic cloves, chopped
1/4 cup yellow onion, finely sliced
1 tablespoon olive oil
1 cup zucchini, sliced into bite sized pieces (or squash of your choice)
1/4 cup fresh tomato, diced
5 eggs, whisked together
2 tablespoons pitted kalamata olives, sliced
crumbled feta cheese, to taste
salt & pepper, To taste

Steps:

  • Warm olive oil in frying pan over medium/high heat (gas 8).
  • Once sizzling hot (I test by dropping small amount of water into oil) put onions, garlic and bell peppers into pan, sauté until lightly browned.
  • Add zucchini and cook until zucchini is slightly softened but still firm.
  • Mix in tomatoes and olives.
  • Add eggs, salt and pepper to taste, then cook until eggs are no longer "wet".
  • Remove from pan and sprinkle with Feta to taste.
  • I frequently serve this with Bacon or sausage and whole grain toast.

  • Heat over high heat. Add a pinch of salt and pepper. Cook tomato for 2-3 minutes stirring occasionally with a wooden spatula, until it drains completely. NOTE: Salt dehydrates, therefore, will help the tomato drain while removing some of its sourness. Keep in mind though that you'll be adding salty feta cheese also so don't add too much.
