My favorite chili recipe! Of course it's mine and that makes it better than anyone else's...well, at least in my mind :). Easy to make and fills the house with the comforting aroma of a hearty meal on a snowy day.

2 pounds ground sirloin
½ cup water
1 large white onion, diced
salt and ground black pepper to taste
1 pound round steak, diced small
3 tablespoons minced fresh garlic
4 (14 ounce) cans petite diced tomatoes
1 (15 ounce) can kidney beans, drained and rinsed
1 (6 ounce) can tomato paste
½ cup diced Hatch green chiles, or more to taste
3 ½ tablespoons chili powder
2 tablespoons dried cilantro
1 tablespoon ground cumin
1 teaspoon ground ginger
1 teaspoon curry powder
1 teaspoon cayenne pepper

Steps:

  • Heat a large saucepan or stockpot over medium heat. Add ground sirloin, water, and onion; cook and stir until onion softens, about 3 minutes. Season with salt and pepper. Continue cooking until beef is halfway browned, 2 to 3 minutes. Add cubed sirloin and garlic. Cook, stirring often, until onions are translucent but not browned, 3 to 5 minutes more.
  • Add diced tomatoes, kidney beans, tomato paste, green chiles, chili powder, cilantro, cumin, ginger, curry powder, and cayenne pepper to the pan. Bring to a boil, cover, and reduce heat to low. Simmer, stirring occasionally, about 30 minutes. Season with salt and pepper and simmer until flavors blend, at least 2 hours.

Scott's World Class Chili can be made early and simmered for hours or frozen for later. Either way, your family and friends will love it!

3 pounds trimmed and cubed (bite size Tri-Tip roast or Sirloin roast)
1 medium onion (chopped)
1 Tablespoon pressed garlic
6 Tablespoons vegetable oil
1/2 cup Gephardt Chili Powder
1 Tablespoon New Mexico Chili Pepper
1 Tablespoon ground cumin
1 Tablespoon salt
1 Tablespoon vinegar
1 teaspoon ground oregano
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon hot pepper sauce (Tabasco or your favorite sauce)
14 1/2 ounce can beef broth
15 ounce can tomato sauce

Steps:

  • In a large bowl, mix together the beef, onion and garlic.
  • In a large pot, brown 1/3 of the meat mixture at a time with 2 Tablespoons of oil each time.
  • Return all of the meat mixture and any drippings back into the pot.
  • Add remaining ingredients.
  • Bring to a boil and then turn the heat down and simmer for 2 hours.
  • Serve any of these on the side:rice and/or baked potatoesbeans (kidney, pinto or any of your favorites)grated cheesesour creamchopped onionpickled jalapeñoscilantro

This is my version of chili. Scott was my husband from OH and after being together so many years he only wanted this to be hot! I hope you like it. This can be made as mild or hot as you like depending on the chili powder you use. I use a lot of cumin in this recipe. Sometimes I add more than the 2 tablespoons stated here and this is the only time I really use cumin. There are so many versions of chili out there, I hope you enjoy mine.

2 tablespoons vegetable oil
2 1/2 cups onions (coarsely chopped)
3 -5 tablespoons garlic (I use 5)
1/2 cup green bell pepper (chopped)
1/2 cup jalapeno (chopped)
1 1/2 lbs ground beef
2 teaspoons salt (or to taste)
2 tablespoons ground cumin
1/2 tablespoon oregano (crushed)
2 tablespoons ground cayenne pepper
1/4 cup chili powder (can use mild, med.= or hot)
1/4 cup chili powder, this is optional and added during simmering (can use mild, med. or hot) (optional)
2 cups crushed tomatoes
1 (6 ounce) can tomato paste
12 ounces beer
1/2 cup water
chopped onion
shredded sharp cheddar cheese
sour cream

Steps:

  • Heat oil in heavy saucepan.
  • Add onions, green pepper, jalapeños and garlic and sauté until onions are translucent.
  • Add ground beef to the pot and cook until meat is evenly browned.
  • Add the cumin, oregano, 1/4 cup chili powder, 2 tablespoons chili powder, ground cayenne, salt and mix well.
  • Add crushed tomatoes, tomato paste, beer and water.
  • Bring to boil, turn down heat and simmer covered.
  • After 1 hour of simmering taste and add more chili powder if you want.
  • Simmer for 1 hour more.
  • Serve topped with chopped onions, cheddar cheese and sour cream if you like.
  • Corn bread on the side.

2 canned whole green chiles, seeded and finely chopped
1 cup beef broth
1/2 cup prepared Mexican-style tomato sauce
1/2 cup prepared tomato sauce
1 teaspoon hot sauce
1/2 cup California-style chili powder
2 1/4 tablespoons New Mexico-style chili powder
1 1/4 tablespoons ground cumin
1 teaspoon salt
1/2 teaspoon arbol chili powder
1/2 teaspoon New Mexico-style chili powder
1/4 teaspoon monosodium glutamate
Pinch brown sugar
Pinch jalapeno powder

Steps:

  • Start the first group of ingredients: Heat the oil in a large skillet over medium-high heat. Working in 2 batches, add the beef and chili powder and cook, stirring occasionally, until well browned. Drain the beef.
  • Transfer the beef to a large soup pot with the onion, garlic, and broth. Bring to a boil, lower the heat, and simmer, stirring occasionally, for 1 hour.
  • Add the second group of ingredients, return to a simmer, and cook, stirring occasionally, and for 1 hour.
  • Add the third group of ingredients, return to a simmer, and cook, stirring occasionally, for 45 minutes.
  • Add the fourth group of ingredients and simmer 15 minutes more. Divide among bowls and serve.

1 teaspoon pumpkin pie spice
3 tablespoons Texas-style chili powder(Gebhardt's brand preferred)
1/2 teaspoon salt
1/2 teaspoon black pepper
3 tablespoons Texas-style chili powder
1 tablespoon ground cumin
1/2 teaspoon pumpkin pie spice
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon onion powder
1 teaspoon solid vegetable shortening
3 lbs London broil cut into 1/4 inch cubes
1 small white onion (finely chopped)
1 green pepper (finely chopped)
1 (8 oz.) can chopped green chilies
1 (8 oz.) can no-salt tomato sauce
1 (12 oz.) can domestic beer
1 (13 oz.) can beef broth
1 (13 oz.) chicken broth
3 tablespoons chipotle pepper sauce (Jump up & Kiss me brand preferred)
1 tablespoon maple syrup
4-5 drops Tabasco sauce

Steps:

  • Combine spice mixes in 2 separate containers. Set aside.
  • In a 5-quart Dutch oven, heat shortening over medium heat and cook beef until no longer pink. Add onions, peppers, tomato sauce, beer, beef broth, chicken broth and Spice Mix 1, and bring to a boil. Lower heat and simmer for 1/1/2 hours.
  • Stir in Spice Mix 2, chipotle sauce, maple syrup and Tabasco. Simmer 1/2 hour longer.
  • Adjust seasoning if needed. Enjoy!

My son modified the recipe on the back of a package of French's Chili mix. It's got a little zip to it, but not so much as to detract from the flavor of the entire dish. He doesn't like beans in his chili, so I listed them as optional.

1/2 lb ground beef
1 lb beef, strips
1 (1 ounce) package french chili seasoning mix
3/4 cup diced onion
1 (15 ounce) can red kidney beans (optional)
2 (15 ounce) cans diced tomatoes with mild green chilies
1/4 teaspoon chili powder
1 teaspoon oregano
1 tablespoon olive oil
1 cup shredded cheddar cheese

Steps:

  • Brown the ground beef, breaking it up as it cooks.
  • Drain the ground beef, if necessary, and return it to the pan along with the onions, oregano and chili powder.
  • Cook over medium heat until the onions are soft, then set aside.
  • Cut the beef strips into bite sized pieces and brown them in a large pot with the olive oil.
  • Add the cooked ground beef mix to the beef strips.
  • Drain the liquid from the can of kidney beans and add the beans to the meat (optional).
  • Drain the liquid from 1 can of tomatoes, then add both cans of tomatoes to the meat stirring to mix well.
  • Add the package of French's Chili mix and stir until evenly blended in.
  • Simmer over medium low heat for about 10 minutes.
  • Spoon into bowls and top with cheese.
