Not exactly low carb but a great addition to a grilled steak, tossed salad and a glass of your favorite red wine. Enjoy!

1 lb red potatoes, cut into wedges
1 tablespoon olive oil
salt
pepper
1/4 cup crumbled blue cheese
8 ounces bacon, crisply cooked,chopped
1/2 cup shredded cheddar cheese

Steps:

  • Toss potato wedges with olive oil.
  • Season with salt and pepper.
  • Place in baking dish.
  • Bake at 400 degrees for about 30 minutes or until tender.
  • Mix blue cheese, bacon and cheddar cheese; sprinkle over potatoes.
  • Bake until cheeses are melted.

A wonderful recipe for traditional Scottish Steak Balmoral, as served throughout the region and at the famous "The Witchery" restaurant located in Edinburgh, Scotland at the very top of the Royal Mile near the gates of beautiful Edinburgh Castle. The "Old Hell Fire Club" used to hold their meetings in this historic sixteenth century building. Tips: We prefer tender Aberdeen angus filet steaks in this first-rate recipe, but sirloin steaks or rib-eyes are just as good. Do try to use a very high quality beef, if possible. You can carefully flambe the whisky in step 2, but I usually don't bother as I find it boils down quickly enough into the divinely smooth and mellow sauce without the extra step. Recipe makes a generous serving of whisky sauce--by all means, you may adjust proportions to suit your own tastes. Serve these steaks with steamed new potatoes, fries, or baked (jacket) potatoes, and seasonal greens or a tossed salad. Try to use a good Scotch whisky (single or blended)....I used Laphroaig 15 yo single malt which is usually reserved for special occasions....but this was phenomenal! ENJOY!

4 tablespoons butter
4 (8 ounce) aberdeen angus beef steak fillets (or sirloin steaks)
salt & freshly ground black pepper, to taste
4 tablespoons good Scotch whisky (such as Laphroaig)
1 teaspoon scottish heather honey (optional)
1 cup heavy cream
1/2 cup beef stock
4 ounces cleaned sliced fresh mushrooms (button or wild)
4 tablespoons chopped green onions (optional)
2 -3 teaspoons coarse grain mustard
2 tablespoons snipped fresh parsley, to garnish
fresh edible flower, to decorate (purple heather)

Steps:

  • Preheat a cast iron skillet over medium-high heat. Add the butter and reduce the heat to medium. Pan fry the steaks 4 to 6 minutes per side, or to personal taste. Be careful not to overcook your steaks. Remove steaks to a plate, season with salt and pepper, and keep them warm.
  • Add the whisky, honey, cream, and beef stock to the pan, and bring to a boil. Now add the mushrooms and reduce heat to a steady simmer. Cook until the sauce is reduced by about half, stirring from time to time.
  • Stir in the chopped green onions and the mustard, cook briefly until onions are softened and sauce is heated through.
  • Serve the steaks with the whisky sauce poured over them; garnish with snipped fresh parsley, and decorate with purple heather, as desired. Lovely!

500 g casserole beef, diced and rolled in
flour
1 large onion, chopped
8 ounces mushrooms, sliced
1 pint beef stock, made from stock cubes
500 ml beer
salt and pepper
pastry dough, puff ready made

Steps:

  • fry beef until browned.
  • transfer to a large pan, add onions and mushrooms, beef stock, beer and salt and pepper. simmer for 1 hour until tender and the sauce thickened.
  • add beef mixture to a large oven proofed dish.
  • roll out puff pastry and place on the top of the beef mixture ensuring no gaps. brush milk with a pastry brush.
  • bake in a preheated medium oven for 30 to 40 minutes until risen and brown.
  • serve.

3 cloves garlic, coarsely chopped
3 tablespoons coarsely chopped fresh rosemary, plus sprigs for garnish
1/4 cup plus 2 tablespoons Worcestershire sauce
2 tablespoons extra-virgin olive oil, plus more for brushing
Freshly ground pepper
1 3/4 pounds skirt steak
1 1/2 pounds small red potatoes
Coarse salt
3 ounces blue cheese, crumbled

Steps:

  • Preheat grill to high. Stir garlic, rosemary, Worcestershire sauce, and oil in a nonreactive dish; season with pepper. Place steak in dish, cutting to fit if necessary; coat both sides with marinade. Marinate, turning once, 15 minutes, or up to overnight in the refrigerator.
  • Cover potatoes with cold water in a medium saucepan; add a pinch of salt. Bring to a boil. Reduce heat, and simmer until just tender, about 15 minutes. Drain; let cool slightly. Slice potatoes in half, and brush lightly with oil; season with salt and pepper.
  • Grill steak, turning once, to desired doneness, 3 to 4 minutes per side for medium-rare. Set aside. Meanwhile, grill potatoes, turning once, until lightly browned, about 5 minutes. This is my tribute to my recent trip to London. I had something similar in a small pub, and it was my favorite meal in the grand ol' city! The first time I made this I used cream of mushroom soup and 1 Tablespoon of beef boullion in place of the beefy mushroom soup.

2 -3 lbs beef roast
1/4 cup flour
1 teaspoon steak seasoning (I use Famous Dave's)
2 large onions
4 garlic cloves
3/4 cup carrot, baby
2 tablespoons butter
12 ounces mushrooms, sliced
1 pint beef stock
10 1/2 ounces beefy mushroom soup
12 ounces ale
salt and pepper
1/4 cup flour
pastry dough, puff ready made

Steps:

  • Mix flour and seasoning in a shallow bowl.
  • Coat beef on all sides (if roast is large, cut in 2 or 3 pieces so it fits in crock pot). Toss out remaining flour mixture.
  • Brown the beef on all sides, remove.
  • Rough chop onions and garlic and add to the pan, heating until soft.
  • Place beef, carrots, onions/garlic, ale and beef stock in crock pot and cook on high for 6-8 hours until it falls apart easily.
  • Remove beef and vegetables from crock pot, reserving liquids. Pull beef into shreds, removing any fat or undesirable pieces.
  • Melt butter in a large saute pan, and cook the mushrooms.
  • Remove 3 cups of liquid from the crock pot and wisk in 1/4 cup flour until smooth. Add to saute pan and cook until sauce thickens. Add beefy mushroom soup. Add beef and vegetables. Maintain on low to keep warm.
  • Prepare puff pastry as directed on the package, baking until risen and golden.
  • Spoon beef mixture in individuals crocks/bowls and top with a single serving of puff pastry.

  • Divided the potatoes and onions evenly between two sheets of heavy-duty foil (approximately 18 inches square), that have been sprayed with nonstick cooking spray.
  • In a bowl, add the parmesan cheese, 3/4 cup each of the cheddar and mozzarella cheese; stir to combine.
  • Sprinkle the cheese mixture over the potatoes.
  • Sprinkle with bacon, butter cubes, chives, seasoned salt and pepper.
  • Fold the ends of the foil to make a packet (I bring 2 opposite ends of the foil over the potatoes and fold or roll downward, then I roll the unsealed ends inward toward the filling and give them a good press to seal).
  • Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender.
  • Remove from the grill, open carefully, and sprinkle with remaining cheese.
