SHRIMP STIR FRY WITH DAD'S THAI PEANUT SAUCE

- 1. In a food processor, puree chili flakes with onion, garlic and lemon peel.
- 2. In a sauce pan, heat peanut oil and add pureed mixture. Cook over very low heat, stirring occasionally, for 5 minutes.
- 3. In another sauce pan, add rice, water and 1/2 tsp lemon juice. Stir and bring to a boil. Reduce heat to very low, cover and simmer for 20 minutes. When rice is done, keep covered and set aside.
- 4. Add broccoli to a microwavable dish. Cover and microwave on high for 4 to 6 minutes, depending on your microwave strength. Broccoli should be fork tender when done.
- 5. Go back to your peanut sauce and add the coconut milk. Increase heat to gentle boil and stir. Add lemon juice, peanut butter, cumin, brown sugar and salt to taste; stir well and simmer gently for 3 minutes. Remove from heat and cover sauce pan to keep warm.
- 6. In a wok or large skillet, heat sesame oil. Add shrimp, toss and cook over medium-high heat until shrimp is just opaque.
- 7. Add cooked broccoli and toss well with shrimp and sesame oil.
- 8. Pour Thai Peanut Sauce over shrimp and broccoli and cook until bubbling. Reduce heat to low simmer, cover and cook about 1 to 2 minutes.
- 9. Spoon rice onto plates, and ladle shrimp, broccoli and sauce mixture generously over rice.
DADDY'S SHRIMP TOAST
My father made this for me while experimenting in the kitchen. It was absolutely the most delicious way to use shrimp. I think I've gotten pretty good at making this dish but it still doesn't compare to my father's! Don't be fooled by the ingredients. Most are optional and this is easy to make! Great for parties as appetizers or a main dish.

- In a mixing bowl, combine the shrimp, onion, water chestnuts, celery, and green onion. Stir in crabmeat, egg, parsley, sesame oil, soy sauce, and garlic. Season with salt and pepper to taste.
- Make the dipping sauce: In a small mixing bowl, whisk together soy sauce, water, sesame oil, parsley, garlic powder, and sugar; set aside.
- In a heavy skillet, heat 2 cups oil, or enough to be 1/2 inch deep, over medium heat. Spread a thick layer of shrimp filling on one side of each slice of bread.
- Fry the topped bread in hot oil until golden brown and shrimp is pink, turning once. Do not let the filling sit on the bread too long or the sandwich will get soggy. Drain on paper towels and let cool for a minute. Slice diagonally and serve with dipping sauce or alone.

A great shrimp recipe that my father came up with, I have made a lot and turns out great every time, I also have used raw shrimp and I just increase the cooking time, have it alone or with rice.

- Add the ingredients above, except wine, tomato paste and shrimp.
- Cook for 10 to 15 minutes, then add wine, tomato paste and cook another 5 to 10 minutes.
- Add the pre-cooked shrimp, if using raw shrimp, cook until shrimp is done.
- Serve over rice or pasta.

DAD'S COCKTAIL SAUCE
My dad passed away a year ago last May, but as I mentioned when I posted his recipe for Scampi-Style Shrimp, he was always amazing at putting together flavors. Every so often I will probably post another of his recipes here. When mom and dad used to go out to eat at a seafood place, mom always used to sneak dad's cocktail sauce into the place in her purse because "no one else can make the sauce like dad can". Be forwarned, if you do not like horseradish, you may want to skip this one.

FRIED SHRIMP IN ATOMICOCKTAIL SAUCE

- In a large bowl whisk together the eggs, buttermilk, flour, pepper and 1 teaspoon salt. Add the shrimp and let it chill out in the fridge for at most 30 minutes.
- Preheat the oven to 200 degrees F. Heat the oil to 350 degrees F in a deep-fryer or Dutch oven. Fit a sheet pan with a rack.
- In a wide shallow bowl or baking dish, whisk together the breadcrumbs, cornmeal, garlic, paprika, cayenne and remaining 1/2 teaspoon salt.
- Working in batches, use tongs to transfer the shrimp from the buttermilk mixture to the breading mixture. Make sure the shrimp is completely coated. Holding the shrimp by the tails, gently drop into the oil, one at a time. Fry in batches until golden brown, about 2 minutes per batch, allowing the oil to return to 350 degrees F between batches. Transfer the shrimp to the prepared sheet pan. Keep the shrimp warm in the oven.
- Serve with the AtomiCocktail Sauce and lemon wedges.
- Mix the ketchup, horseradish, pepper, lemon juice, Worcestershire sauce and fish sauce in a bowl. Chill for at least 1 hour before serving.
