SCOTTISH POTATO PIE
My grandmother used to make this pie on the weekends when I was little.

Steps:
- 1. Preheat oven to 425 degrees.
- 2. Butter a 9 inch pie dish.
- 3. Arrange the bacon slices on the bottom and sides of the dish. Make sure some of the slices overhang the edges of the dish slightly.
- 4. Peel and thinly slice the potatoes.
- 5. Rinse the potato slices and dry completely.
- 6. Place 1/3 of the potato slices over the bacon in the dish.
- 7. Sprinkle 1/3 of the cheese ove the potatoes.
- 8. Sprinkle with salt and pepper to taste.
- 9. Repeat these layers twice more.
- 10. Fold the overhanging bacon on the top
- 11. Place in the oven and bake for 50 minutes or until done. You can check by piercing the potatoes with a fork to see if they are tender.
- 12. Let stand 2 minutes before slicing.
BEEF AND POTATO PIE
Beef and vegetables baked in a delicious pie. Great for dinner and excellent warmed-up the next day as well. Other vegetables can be interchanged like celery, peas, etc. Two pounds ground beef can be substituted for sirloin.

- Place a baking sheet on rack in the lower third of the oven. Preheat oven to 400 degrees F (200 degrees C).
- Heat oil and butter together in a large saucepan over medium heat; cook and stir onion until softened, about 10 minutes. Add beef; cook and stir until browned on all sides, about 5 minutes. Add garlic; cook and stir until fragrant, about 1 minute.
- Stir flour, pepper, and salt into beef mixture; cook and stir until beef is coated, 2 to 3 minutes. Add wine; bring to boil, reduce heat, and simmer, 3 to 5 minutes.
- Mix beef stock, potatoes, carrots, tomato paste, and Worcestershire sauce into beef mixture; bring to a boil. Reduce heat and simmer until vegetables are tender, 30 minutes to 1 hour. Remove from heat and cool.
- Line a 9x13-inch baking dish with 1 pie crust. Spoon beef and potato filling into crust; top with remaining pie crust, crimping the 2 crusts together around the edges using a fork or your fingers. Brush top crust with milk.
- Place baking dish on the baking sheet in the oven and cook until crust is golden brown, 40 to 45 minutes.

- TO MAKE THE BEEF AND POTATOES: Peel and slice the potatoes into a 3/8-inch-thick pieces. Put the slices into a pan with cold water to cover, add 1/2 teaspoon of the salt, bring the water to a boil, and simmer for 2 to 3 minutes or until the potatoes are tender. Drain and set the potatoes aside. Preheat the oven to 375 degrees F. In a skillet over medium-high heat, heat the oil and saut? the onion until lightly golden brown, about 10 to 12 minutes. Stir in the flour with a wooden spoon and cook for 1 minute. Add the ground beef and break it up with the spoon. Saut? the beef for 10 minutes, scraping the bottom of the skillet with the wooden spoon. When the flour and beef are brown, pour in the beef broth, Worcestershire sauce, ketchup, the remaining salt, and the pepper. Bring to a boil, and simmer for 2 to 3 minutes, until thickened. Set aside while you make the sauce. TO MAKE THE SAUCE: Whisk the butter, flour, and milk together in a nonreactive saucepan. Heat to a boil, whisking constantly and vigorously, until the sauce is smooth and thickened. Simmer for 2 to 3 minutes, whisking frequently. Remove the sauce from the heat, and whisk in a 2/3 cup of the cheese and the egg yolk. Season with the salt and nutmeg. TO ASSEMBLE THE PIE: Spread the meat mixture in to a 9-x-9-inch casserole, then cover the meat with the sauce. Top the sauce with the potatoes, overlapping the slices to make a scalloped pattern. Cover with the remaining cheese and bake for 20 to 25 minutes, or until lightly brown. (For an extra-brown top, run the pie under a hot broiler.) Let the pie set at room temperature for 5 to 10 minutes before serving.

- Melt 1 tablespoon butter in medium skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add steaks to skillet and cook until medium-rare, about 4 minutes per side. Transfer steaks to plate. Cut steaks into 1/2-inch cubes.
- Melt remaining 2 tablespoons butter in same skillet. Add potatoes, leeks, and dry mustard. Stir 1 minute. Reduce heat to medium, cover, and cook until potatoes are tender, stirring occasionally, about 8 minutes. Return beef and any accumulated juices to skillet. Add steak sauce and sauté 2 minutes. Remove skillet from heat. Mix in green onions. Season filling to taste with salt and pepper. Cool completely.
- Preheat oven to 400°F. Unfold crusts on work surface. Cut each crust into 2 pieces along center fold. Brush dough with egg. Place 1/2 cup filling on half of each piece. Fold plain dough over filling; seal edges. Brush pies with more egg; arrange on 2 baking sheets.
- Bake pies 15 minutes. Reverse sheets. Bake until crust is golden and filling is heated through, about 10 minutes.

- Peel and slice the potatoes and boil them in salted water for 10 minutes until parboiled. Drain and put to one side.
- In a hot pan, sear the beef until well browned, then remove from the pan. Cook the onions, thyme and garlic until softened and add the beef.
- Pour in the stock, the tomato ketchup and a splash of red wine and allow most of the moisture to boil away. Make sure the mixture is not too runny.
- Preheat the oven to 200C/400F/Gas 6. Lay the sliced potatoes on the bottom circle of pastry leaving a 3.5cm/1½in margin around the edge.
- Season the potato slices as you layer them on top of the pastry - you should end up with a layer of potatoes about 2.5cm/1in thick. Now spoon the moist beef and onion mix over the top and spread it out.
- Brush liberally with egg wash and score any pattern you like into the pastry. Cut a tiny hole in the top to allow steam to escape and bake for 30 minutes.
