A healthy side dish of braised cabbage with rich spices - a perfect Sunday roast or Christmas dinner accompaniment.

1 red cabbage, finely shredded
2 bay leaves
5 star anise
½ tsp ground cinnamon
200ml vegetable stock or water
50g golden caster sugar
75ml cider vinegar
2 apples, cored and cut into wedges

Steps:

  • Place all the ingredients except for the apples in a large saucepan and season. Place over a medium heat, bring to the boil, then turn down the heat and simmer for 30 mins. Add the apples, then continue cooking for 15 mins until tender.

Cabbage & Onions:
1 white onion, diced
1 tbsp. butter
2 diced apples
1/2 cup apple cider
1/4 bottle beer
1 head purple cabbage, cored & shredded
3 tbsp. apple cider vinegar
1 tbsp. honey
Schnitzel:
4 x 6oz pork cutlets
1 cup buttermilk
1 egg, beaten
1 cup fine bread crumbs
1 tbsp. flour
salt & pepper
3 tbsp. sunflower oil
Onion Gravy:
1 white onion, sliced
1/4 cup beef broth
1/4 cup pale ale or Octoberfest beer
1/2 tbsp. cold butter
salt & pepper
Steamed carrots
Boiled, skin on, potatoes
Sprig of thyme

Steps:

  • Red Cabbage & apples: 1. Melt butter in a large heavy bottom pot over med-high heat. Add onion & fry until translucent, add apples, apple cider, beer, & cabbage. 2. Reduce heat & simmer 1 hour 3. Add vinegar & honey to pot just before serving. Season with S & P to taste. Makes 8 cups Schnitzel: 1. Combine buttermilk & egg in a shallow bowl & mix to combine. 2. Combine bread crumbs & flour in separate bowl, mixing to combine. 3. Dredge each cutlet in liq. mix then coat with crumb mix; set aside. 4. heat oil in skillet over med-high heat, add cutlets & fry on both sides until browned. 5. Place schnitzel in warm oven (275) until onion gravy reduced Onion Gravy; 1. In same skillet, fry onion until carmelized 2. Add beef broth, beer & season with S & P 3. Reduce heat to low & simmer until sauce has reduced 4. Add butter, stirring to incorporate, just before serving To Assemble; Place schnitzel on each plate & drizzle with the gravy. Add a few heaping spoonfuls of the cabbage/apple mix, side of carrots & potatoes

1/2 red cabbage
3 teaspoons butter
1 onion, chopped
1 granny smith apple
1/2 cup water
2 teaspoons apple cider vinegar
2 tablespoons brown sugar
2 bay leaves

Steps:

  • Remove outside leaves of cabbage.
  • With a sharp knife, chop cabbage into small pieces. Throw into colander and rinse.
  • In large stovetop pot with lid, melt 2 teaspoons of butter at medium-high.
  • Add onion to pan and sauté.
  • Add chopped cabbage to pan.
  • Peel apples, chop and add to pan.
  • Combine water with vinegar, add brown sugar and bay leaves and stir.
  • Pour liquid over cabbage mixture.
  • Bring mixture to a boil then cover and reduce heat to a low simmer for 25-35 minutes.

Cooking Light Magazine, Jan/Feb, 07 issue. I have had this saved for a special occasion and the night before the inauguration of the 'Cafe Ponce' we had this meal. It was also to try it out for the newer menu. The meal was scrumptious! Absolutely delicious!

4 ounces medium egg noodles
1/4 cup reduced-fat sour cream
4 teaspoons canola oil, divided
chopped fresh parsley leaves
6 cups shredded cabbage
1 cup thinly sliced onion
1 teaspoon sugar
1 teaspoon salt, divided
1/4 teaspoon black pepper, divided
crushed red pepper flakes, to taste
caraway seed (optional)
1/3 cup reduced-sodium fat-free chicken broth
1 (1 lb) pork tenderloin, trimmed
1/4 cup all-purpose flour
3 large egg whites, lightly beaten
3/4 cup dry breadcrumbs
cooking spray
lemon wedge (optional)

Steps:

  • NOODLES:.
  • Cook noodles according to package directions, omitting salt and fat.
  • Drain.
  • Combine noodles and sour cream in a large bowl, tossing well to coat.
  • Just before serving add chopped fresh parsley leaves.
  • CABBAGE:.
  • Heat 1 teaspoon oil in a large nonstick skillet over medium heat.
  • Add cabbage, onion, sugar, 1/2 teaspoon salt, and 1/8 teaspoon pepper to pan & smidgen of crushed red pepper flakes(if using); cook 6 minutes or until cabbage is wilted, stirring occasionally.
  • Add caraway seeds, if using (they are strong so use sparingly).
  • Add broth; cook 6 minutes or until cabbage is lightly browned.
  • Stir cabbage mixture into noodle mixture.
  • Wipe pan clean with a paper towel.
  • PORK:.
  • Cut pork crosswise into 12 (1-inch-thick) pieces.
  • Place each piece between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet.
  • Sprinkle pork evenly with remaining 1/2 teaspoon salt and remaining 1/8 teaspoon pepper, and crushed red pepper flakes if using.
  • Place flour in a shallow dish.
  • Place egg whites in a shallow dish.
  • Place breadcrumbs in a shallow dish.
  • Dredge 1 pork cutlet in flour.
  • Dip in egg whites; dredge in breadcrumbs.
  • Repeat with remaining pork, flour, egg whites, and breadcrumbs.
  • Heat 1 teaspoon oil in large nonstick skillet coated with cooking spray over medium heat; add 4 pieces pork to pan.
  • Cook 3 minutes on each side or until pork is lightly browned and done.
  • Remove pork from pan.
  • Repeat procedure twice with remaining 2 teaspoons oil and pork.
  • Serve with cabbage/noodle mixture, & lemon wedges.

Our family favorite Rotkohl dish, in the traditional German style (with a few flourishes)! Delicious!! Red cabbage, apples, aromatic spices and wine---this dish is sure to please! Wonderful served with holiday roast turkey, beef, or ham dishes -or- with bratwurst, weisswurst or wienerwurst sausages. Tip: For a delicious & traditional European feast serve the Rotkohl with German Meatballs recipe #106298, Beef Rouladen recipe #344842, Bavarian Sauerbraten recipe #409947, Wiener Schnitzel recipe #459188, or Swedish Meatballs, along with boiled new potatoes or buttered spaetzle noodles sprinkled with fresh snipped parsley. A great make-ahead dish that freezes & reheats beautifully, and actually tastes best after flavors have had a chance to marry (a day or two after cooking). I like to make two batches at a time, one for now and one to freeze for future meals. I hope you enjoy as much as we do. 1/4 cup chopped pork fat or 1/4 cup chopped bacon
1 large red onion, finely chopped
2 inches fresh ginger, peeled and finely chopped
1/2 cinnamon stick
1 large red cabbage, tough outer leaves removed, quartered, cored, and finely shredded
1 sprig fresh marjoram
1/2 teaspoon garam masala
1/2 cup red wine vinegar
1/2 cup ruby port or 1/2 cup madeira wine
1/2 cup brown sugar or 1/2 cup real maple syrup
1 bay leaf (optional)
1 whole clove (optional)
1 firm apple, chopped (optional)

Steps:

  • Cook the pork fat or bacon in a large skillet or dutch oven over low heat, stirring occasionally until it has rendered its fat, about 20 minutes for the pork fat or 10 minutes for the bacon.
  • Add the onion, ginger, and cinnamon stick, increase the heat to medium, and cook, stirring occasionally for about 5 minutes, until the onion has softened.
  • Add the cabbage, stirring and cooking over medium heat until some of the bits are slightly browned and caramelized, about 10 minutes (I do this in batches). Note: You can skip the browning step if you are in a hurry, but I find that it adds a particularly wonderful caramelized flavor to the finished dish. Now add the marjoram, garam masala, vinegar, and port or Madeira, and stir well. (Note: At this point add the optional bay leaf, whole clove, and chopped apple).
  • Reduce heat to medium-low, cover, and simmer for 1 to 1 1/4 hours, stirring occasionally to make sure the cabbage is not sticking to the bottom of the pan.
  • Remove the lid and cook, stirring frequently, for 15 minutes.
  • Stir in the brown sugar (or maple syrup) and cook for 15 minutes longer, or until most of the liquid has cooked away.
  • Remove the cinnamon stick and bay leaf before serving.
  • NOTE: If you can't find garam masala, use just a small dash each of ground black pepper, rock salt, cinnamon, & cardomom.

This is a family favorite of ours, my mom got the recipe from a German lady when we lived in Germany. You may use tenderized veal in place of the cube steaks in this recipe.

1 cup self-rising flour
1 cup self-rising cornmeal
1 teaspoon salt
1 teaspoon pepper
1 cup milk
3 eggs
¼ cup vegetable oil
4 (4 ounce) beef cube steaks
2 teaspoons lemon juice, or to taste

Steps:

  • In a shallow bowl, stir together the flour, cornmeal, salt and pepper. In a separate shallow bowl, whisk together the milk and eggs using a fork.
  • Heat oil in a large skillet over medium-high heat. The oil should completely cover the bottom of the skillet. While the oil heats, dip cube steaks into the egg and milk, then dip into the flour mixture, and shake off the excess. Place in the hot skillet.
  • Fry steaks on each side until golden brown, then reduce the heat to medium and cook until well done. Do not cover. Drizzle with lemon juice before serving.
