SPECIAL SAUCE
This extremely simple sauce is the soulmate of any burger.

- Combine the mayonnaise, ketchup and sriracha in a small bowl. Spread 2 tablespoons of sauce on the top half of a hamburger bun and serve with your favorite burger.

SHABU SHABU WITH DIPPING SAUCES
Steps:
- Arrange the meat attractively on a round platter, so that each slice can be easily picked up with chopsticks or a fondue fork. Arrange vegetables on a second platter.
- Fill a hot pot or nabe pot 2/3 full of dashi set on a burner on the table. Each diner picks up a piece of meat from the serving platter and swishes it around in the simmering broth until the red meat becomes pink, or cooked to the degree desired. Diners may alternate between meat and vegetables. The tofu breaks easily, so be careful when adding it to the pot. Diners eat from the pot, dipping the food into the dipping sauces which are placed in individual cups at each person's place.
- Combine the water and kelp in a large pot. Bring the water to a boil, removing the kelp just before water boils since it emits a strong odor. If the fleshiest part of the kelp is still tough, return it to the water for a few more minutes, along with a little cold water. (Soft kelp means sufficient flavor has been extracted.) Remove the kelp and bring stock to a full boil.
- Add 1/4 cup cold water to bring the temperature down quickly and add the bonito flakes. Bring to a boil, and then immediately remove from the heat. (If bonito flakes boil too long, the stock becomes bitter.) Allow the flakes to settle to the bottom of the pan, then filter the stock through cheesecloth. Yield: About 2 quarts
- Combine the dashi, soy sauce, and mirin in a saucepan and bring to a boil. Let boil for a few minutes to reduce by 1/3, then remove from heat and cool. Stir in vinegar to taste. Pour sauce into individual cups.
- Toast the sesame seeds in a heavy pan until lightly browned. Transfer warm seeds to a mortar and grind to a paste, or whirl in a blender. Add the dashi, soy sauce, mirin, sugar and sake, and mix well, using a spatula to blend and smooth the sauce. Add cayenne to taste. Pour sauce into individual cups.

- Heat Oil, brown bacon until tender. Add ground beef, ground pork & onion and cook until meat is done. Add all remaining ingredients except the tomato paste and simmer under low heat for 1 hour. Add tomato paste and continue simmering for another 15 minutes.
- Serve over mostaccioli noodles.

This recipe was passed down to me by my MIL. It was passed down to her by a friend she had when she lived in Milwaukee, WI, over 30 years ago. It was initially intended as a steak sauce, but I also use it on mashed potatoes in lieu of gravy.

SCALLOP PIE
This recipe was demonstrated by a fellow classmate at an evening course on fish cookery that I took over 30 years ago. It sounded odd - who puts cheddar cheese with scallops!? but tasted delicious. Only use instant potatoes if you can get high quality ones that don't have artificial ingredients or flavors. This make a nice main course served with a salad though would be great served in smaller individual portions as an appetizer. If you make this with bay scallops you may want to reduce the cooking time so you don't end up with rubbery scallops. I like to use a medium sized scallops, if using large ones you may want to cut them in half. Please note that you need to reserve some of the cooking liquid when draining the scallops. Cooking time does not include preparing mashed potatoes.

- Pre heat over to 375 degrees, grease or spray a 9" pie plate.
- Mix together mashed potatoes 2 Tbl butter and the egg, spoon mix around the edges of your pie plate - use all the potatoes.
- In a sauce pan, bring wine to a boil, reduce to a simmer add scallops and mushrooms cook for 8-10 minutes. Drain, reserving 1 cup of the liquid, set aside.
- In pan melt butter, then add flour and salt making a roux, cook for a few minutes while stirring, then slowly whisk in the reserved cooking liquid, cook till smooth and slightly thickened. Remove from heat and stir in cheese, mushrooms and scallops.
- Pour scallop mixture into the center of the potatoes and bake for 8 minutes.
- Note.
- The original recipe called for canned mushrooms which I never use now. If you do use them, do not cook them in the initial step with the scallops, just add them with the cheese. To cook them slightly before the short baking time poach them with the scallops, though you could also lightly saute them while making the roux.
SPECIAL TOMATO SAUCE
This sauce will go great with any kind of pasta. It's also great with mozzarella cheese sticks. It's absolutely delicious and it's much better than the store bought stuff.

FRIDA'S "SPECIAL SAUCE"
This is Frida (The Swedish Import's) "Special Sauce." Frida stayed with us for a year as a foreign exchange student from Sweden, as well as an awesome relative of ours. She would make this spaghetti sauce for us, and tried to give the recipe. Unfortunately, she herself didn't even know exactly how much she would put in of each ingredient. She made it up, and we all love it!

- Brown meat until done, put to one side of pan.
- Chop onions, fry until golden brown (on the other side of pan).
- Then mix onions with ground beef.
- Put between 1/3 and 1/2 cup of ketchup in and mix together. It all depends on your tastes.
- Add cut up green pepper, and about 1/3 cup of whipping cream, and a pinch of salt.
- *Measurementfor ketchup and whipping cream are not exact, try for taste and thickness-and if not right, add more or less.
