Steps:
- Heat oven to 180 C (350 F).
- Using a hand held blender, thoroughly mix together all ingredients other than fruit.
- Gently fold in fruit.
- Drop batter into muffin cases. Bake for 15 minutes. When done the edges will be a little brown and the knife inserted into them will come out clean.

- Heat oven to 180C/160C fan/gas 4. In a large bowl sift and mix the flour, baking powder, cinnamon/spice and caster sugar. If you have self raising flour mix then you only need 1tsp of baking powder.
- In another bowl, mix the eggs, milk and oil. Pour the wet ingredients into the dry and mix well, then stir in the grated apples and sultanas.
- Divide the mix between 6-8 muffin cases and bake for 25 mins. Allow to cool slightly before eating.

Steps:
- 1. Prepare muffin pan with cooking spray, or with paper baking cups. Preheat oven to 180º Celsius.
- 2. Combine dry ingredients in a large bowl, and set aside.
- 3. In a medium bowl, combine yogurt, oil, egg, and vanilla.
- 4.Gently stir yogurt mixture into flour mixture until dry ingredients are moistened, but batter is still lumpy.
- 5. Gently fold in raspberries.
- 6. Fill muffin cups almost to top.
- Bake 18 to 20 minutes, or until golden brown.
